Of these bases, at least 20-30% are reserve wines, specially selected by the Chef de Cave to enhance their intensity, finesse and consistency. A pleasantly dry wine, thanks to a dosage of about 7 grams of sugar per liter, this Rosé presents itself in the glass with a beautiful pink color with amber hues. The nose reveals a heady and lively bouquet. Clear notes of red fruits, including wild strawberry, raspberry and cherry, and floral hints reminiscent of rose, with a slight hint of pepper. In the mouth, however, we discover a bubble characterized by an incredible juicy intensity, amid notes of red and yellow-fleshed fruit, well balanced by the freshness of a subtle menthol note. Excellent as an aperitif, it goes well with simple dishes, including meat dishes. Try it, for example, with lamb or suckling pig cooked in the oven.

The indication Blanc de Blancs on the label of this fine Champagne produced by Maison Perrier-Jouët clearly indicates that it is a white sparkling wine, made only from white grapes. In Champagne, this basically means that it is a 100% Chardonnay. Grapes from a selection of the best plots owned by the company, all classified as Premier and Grand Cru. In the mouth it is fine but at the same time vigorous. Pleasantly mineral and with excellent persistence. Excellent as an aperitif, this Champagne is ideal with all fish dishes, shellfish and molluscs. It is also pleasant with a simple selection of fresh cheeses. A bubble full of charm, it is a choice for true connoisseurs.

Few people know this. But in its early days, Champagne was not as dry as we know it today. It was, on the contrary, a magnificent sweet and effervescent wine in which the dosages, that is, the added sugar, were decidedly generous. After all, sugar had the advantage of making any drink more palatable, hiding any flaws or stylistic imperfections. The credit for changing direction belongs to Maison Perrier-Jouët, which around 1840 drastically reduced the dosage of its cuvées to meet the demand of the English market. This gave rise to the Cuvée Grand Brut, which still perfectly embodies the Maison's style. Chardonnay 20%, Pinot Noir and Pinot Meunier 40%, the grapes used for this Cuvée are selected in the different crus according to the vintage. To add complexity to the final wine, a percentage ranging from 12 percent to 20 percent of reserve wines, from previous vintages, is also added. Finally, the long maturation on the lees, in the case of Grand Brut is prolonged for at least 3 years. The result is a fresh and balanced Champagne. A wonderful super-dry bubble with great persistence. Best uncorked on an elegant occasion, this Champagne is ideal with seafood or a tasty tuna tartare.

A bottle like this, impossible not to notice. We are of course talking about Belle époque, Cuvée de prestige from Maison Perrier-Jouët. Its history goes as far back as 1902, when the maison asked Emile Gallé, a glassmaker and decorator, to embellish the glass of the bottle intended for a new Cuvée. A wine that was supposed to celebrate the happy historical period they were living, the Belle époque precisely. The artist decorated the bottle with white anemones, but for various reasons they were not used for more than 60 years. They were revived only in 1964, when Chef de Cave André Bavaret, decided to bottle the iconic Cuvée precisely in a bottle decorated in such an original way. Since then the Belle époque has been a symbol of Champagne and Maison Perrier-Jouët's most prestigious wine. Chardonnay 50%, Pinot Noir 45% and Pinot Meunier 5%, Belle époque rests in the Maison's cellars for at least five years. The 2013 vintage proves to be an elegant and exciting Champagne, characterized by a beautiful clear gold color with subtle greenish reflections. On the nose, notes of white flowers combined with white peach, crisp pear and citrus. In the mouth it is very fresh, with a lingering and harmonious finish. Try it with a risotto with porcini mushrooms, as well as with classic shellfish and seafood.

Ca' Divo is a sparkling wine proposed by La Gioiosa that comes from the processing of different varieties typical of the North East. Grapes that, thanks to their natural aromaticity, are particularly suited to being made sparkling using the traditional Charmat system. On arrival in the winery, the whole bunches of grapes are put into a pneumatic press to proceed with super-soft pressing. The must thus obtained is naturally clarified and stored at a low temperature until the moment of the so-called froth setting. At that point it is passed into an autoclave and selected yeasts are added to trigger fermentation. Once the desired alcohol content and sugar content has been reached, the process is stopped by simply lowering the temperature of the tank and, after a short period of rest, the sparkling wine is ready for bottling. Pleasantly soft, thanks to its 14 grams of sugar per litre which make it an Extra Dry sparkling wine, this Ca' Divo has intense aromas of fruit and flowers, and a fresh, lively taste. An aperitif wine, it can accompany vegetable and shellfish hors d'oeuvres or delicate first courses.

Speaking of tradition, this Prosecco DOC is undoubtedly one of the most interesting products offered by La Gioiosa. Tradizione e Territorio is made from Glera grapes, to which other varieties allowed by the regulations may be added in a percentage of less than 15%. As soon as they reach the winery, the whole grapes are put into the pneumatic press, and the must obtained is kept in steel tanks at a controlled temperature until the moment of sparkling. At that point, the must, with the addition of selected yeasts, is passed into temperature-controlled autoclaves where frothing takes place. Once the desired alcohol content and sugar content has been reached, the temperature of the tank is lowered to stop fermentation. At that point, after a short period of rest, the sparkling wine is ready for bottling. Pale straw yellow in colour, the perlage is fine and persistent. The nose is fruity and floral, with notes of ripe golden apples and small white flowers. On the palate, however, it is pleasantly dry, fresh and sapid, with a fruity and harmonious aftertaste.

It is made from Sangiovese grapes, for once flanked by other complementary varieties. The grapes are first destemmed and then softly crushed, to initiate alcoholic fermentation and maceration that lasts for about 12 days. At the end of malolactic fermentation, the blend is made, which is then left to age in barrels until spring. Intense ruby red in colour, the nose has notes of small red fruits, currants and raspberries that blend well with notes of cherries and a slight woodiness. In the mouth it is harmonious and round. Very fresh and tannic, it has a very pleasant finish. It goes well with game dishes, but also (and perhaps above all) with the more classic bistecca alla fiorentina.
