Today we are in the heart of Champagne. A place that certainly does not need much introduction. Here comes Champagne Monopole Silver Top by Heidsieck, a wine without a vintage, the result of a skilful blend of the three grapes typical of the region. But let us proceed in order. Maison Heidsieck has a 100-year history. Its vineyards, facing south and south-west, benefit from an ideal microclimate, characterised by sunny days and cool nights. This gives the grapes a perfect balance between sugars and acidity. Chardonnay (70%), Pinot Meunier (20%) and Pinot Noir (10%), each variety brings its own unique characteristics, creating an unmistakable harmony of flavours and aromas. In particular, the Chardonnay, dominant in the blend, gives the wine elegance, finesse and complex floral aromas. The Pinot Meunier gives roundness, softness and fruity notes, while the Pinot Noir provides structure, depth and a touch of vinosity, enriching the bouquet with spicy aromas. The grapes, harvested by hand at the right degree of ripeness, undergo soft pressing to extract the finest must. This is followed by alcoholic fermentation in steel. At that point the wine, with the addition of liqueur de tirage, is bottled to start the second, natural fermentation. In total, the Monopole Silver Top remains in contact with the yeasts for a good 45 months, developing aromatic complexity. After disgorgement, the wine is dosed and labelled as Brut. Straw yellow in colour, brilliant and luminous, the nose reveals an elegant and refined bouquet. From white flowers, such as acacia and jasmine, to fruity notes of white peach and pear. With the gradual increase in temperature, more complex hints of baked apple, bread crust and toasted nuances then emerge. In the mouth, it reveals itself to be full-bodied, creamy and persistent. The fine and persistent bubbles caress the tongue, leaving room for a rich and harmonious taste. Ripe fruit flavours intertwine with mineral notes and spicy touches, creating a long and satisfying finish. Excellent as an aperitif, on the table, it elegantly accompanies savoury first courses, risottos with mushrooms or seafood. Ideal with noble fish, white meats and mature cheeses.
