This particular soil composition, combined with the region's cool and humid climate, creates ideal conditions for the cultivation of Chardonnay and Pinot Noir, which contribute equally to the composition of this wine. Champagne matures for an impressive 120 months on the lees. This long bottle-ageing allows it to develop complex aromas and acquire a solid structure. The absence of dosage, i.e. the addition of liqueur d'expédition, enhances the purity of the fruit and minerality. To the eye, it has a brilliant straw yellow colour with a fine and persistent perlage. On the nose, it reveals a complex and enveloping bouquet, with notes of white-fleshed fruit, citrus fruits, brioche and spices. In the mouth, it is characterised by excellent structure, lively freshness and pronounced minerality. The finish is long and persistent, with notes of honey and toast. Dosage Zéro is a wine with great ageing potential. Capable of evolving positively for at least 10 years, it will develop even more complex aromas and tertiary nuances with the passage of time. It is, in fact, an excellent Champagne offered by Maison Jean Vesselle. We are in Bouzy, in the heart of the Montagne de Reims. Oeil de Perdrix is a 100% Pinot Noir from one of the most suitable areas for the cultivation of this noble grape variety. Obtained by brief maceration of the whole bunch of Pinot Noir, a technique that requires great care so as not to bring unpleasant bitter tones into the wine. In the glass it is a fascinating salmon pink with amber reflections. The nose is pleasantly rich, with hints of red currants and strawberries, followed by other notes of ripe fruit and red flowers. In the mouth, it is appreciated for its medium body, with good structure and balance. The finish is long, with a particularly pleasant spicy note. A Champagne for the entire meal, it accompanies both fish and meat dishes with ease. Try it with the classic Sunday roast chicken, a true specialty of rural France.

100 percent Pinot Noir, this "Made in Champagne" rosé has all the makings of a favorite sparkling wine for many of our country's fans as well. This is proposed by Maison Jean Vesselle, based on the Montagne de Reims in the village of Bouzy. This Rosé de Saignée is made after a short maceration of the must with the skins. A phase that goes on for no more than 24 to 48 hours, depending on the vintage, just long enough to achieve a clear, bright color. In order to apply the Saignée technique, however, healthy, well-ripened grapes must be harvested and bitter tannins must be avoided. This delicate process, however, not only gives the wines a unique and more stable color, but also embellishes the wine with the most typical Pinot Noir aromas, with the small red fruits in fine evidence. In the glass it is a beautiful deep claret pink color, with an intense bouquet reminiscent of delicate notes of red flowers. Followed by mint, lavender, oriental spices, red berries and cinnamon. In the mouth, then, it is intense and mineral. Appropriately savory, but without lapsing into excess. A champagne with a pleasantly gastronomic nature, it pairs well with a variety of courses. Even with roast suckling pig, tasty cheeses and some desserts that are not too sweet.

After bottling and frothing, this Champagne matures on the lees for an impressive 90 months, i.e. 7½ years. During this long maturation, hints of bread crust, dried fruit and a mineral touch reminiscent of the terroir emerge. On tasting, this Champagne stands out for its marked savouriness, combined with a subtle mineral note and delicate texture. The nose is refined, with aromas of ripe citrus fruits, toasted almonds and a slight hint of flint. Of Jean-Marc Sélèque's production, this Extra Brut is a bit of a calling card. Here, in fact, Champagne plays everything on a perfect balance that is difficult to achieve, between structure and freshness. Sélèque gets there thanks to a particularly skilful use of jars in the cellar. The bases, in fact, are made 2/3 in steel and part in wood, creating a very pleasant harmony on the palate. To complete the picture, an extremely limited dosage, about 2 grams of sugar per litre, favours the verticality so beloved of Champagne enthusiasts. Sélèque's Solessence Extra Brut is the result of a blend where Chardonnay accounts for 50% of the total mass. With him a generous 40% Pinot Meunier and just a hint of Pinot Noir. The bases are also bottled for the second fermentation, without having undergone any ageing or filtration. A wine that can be defined as 'for friends', that is, to be shared at a nice dinner, the kind that ends very late. The first bottle will probably not even see the first course arrive on the table. This is why the advice is to always keep a small stock on hand.

Jean Baptiste Prevost, winemaker at the Pol Couronne winery, writes: "Creating an Extra Brut is always a challenge for chefs de cave who have to deal with an extremely low dosage while mixing exceptional wines. But, we would add, when the experiment is successful (as in this case) the result is always surprising. Extra Brut, Blanc de Blancs, this Champagne is made from 100% Chardonnay grapes from a village classified as Grand Cru. In other words, the ultimate in Blanc de Blancs Champagne. 70% of the base wine comes from the latest available vintage. To this is added about 30% reserve wine from three previous vintages. The bases, and this is an interesting peculiarity, also undergo malolactic fermentation after the alcoholic fermentation. Finally, the cuvée is bottled and left to mature on the lees for 42 months. Pale gold in colour with fine, lively, slightly silvery bubbles. The nose reveals notes of lemon and Granny Smith apple. Crisp at first, followed by notes of brioche. In the mouth, it reveals itself to be an elegant champagne, with pleasant citrus notes making it fresh and drinkable. On the table it goes well with classic seafood plateau, fish carpaccio and tuna tartare.
