Let us immerse ourselves in the heart of Champagne, in Courmas, a small treasure hidden in the Montagne de Reims. This is the birthplace of Jean-Bernard Bourgeois' Champagne Dosage Zéro, a wine that expresses the essence of terroir. Jean-Bernard Bourgeois' vineyards are located on limestone-clay soils, an ideal terroir that gives the wines an extraordinary minerality and complexity. This particular soil composition, combined with the region's cool and humid climate, creates ideal conditions for the cultivation of Chardonnay and Pinot Noir, which contribute equally to the composition of this wine. Champagne matures for an impressive 120 months on the lees. This long bottle-ageing allows it to develop complex aromas and acquire a solid structure. The absence of dosage, i.e. the addition of liqueur d'expédition, enhances the purity of the fruit and minerality. To the eye, it has a brilliant straw yellow colour with a fine and persistent perlage. On the nose, it reveals a complex and enveloping bouquet, with notes of white-fleshed fruit, citrus fruits, brioche and spices. In the mouth, it is characterised by excellent structure, lively freshness and pronounced minerality. The finish is long and persistent, with notes of honey and toast. Dosage Zéro is a wine with great ageing potential. Capable of evolving positively for at least 10 years, it will develop even more complex aromas and tertiary nuances with the passage of time. Perfect with raw fish dishes, seafood, mature cheeses and white meats.
