Jean-Bernard Bourgeois' vineyards are located on limestone-clay soils, an ideal terroir that gives the wines an extraordinary minerality and complexity. This particular soil composition, combined with the region's cool and humid climate, creates ideal conditions for the cultivation of Chardonnay and Pinot Noir, which contribute equally to the composition of this wine. Champagne matures for an impressive 120 months on the lees. This long bottle-ageing allows it to develop complex aromas and acquire a solid structure. The absence of dosage, i.e. the addition of liqueur d'expédition, enhances the purity of the fruit and minerality. To the eye, it has a brilliant straw yellow colour with a fine and persistent perlage. On the nose, it reveals a complex and enveloping bouquet, with notes of white-fleshed fruit, citrus fruits, brioche and spices. All this favours the complete ripening of the grapes and the production of wines of great character. Cuvée Aristide is a blend of equal parts Pinot Noir and Chardonnay, a perfect balance of structure and finesse. After bottling and frothing, this Champagne matures on the lees for an impressive 90 months, i.e. 7½ years. During this long maturation, hints of bread crust, dried fruit and a mineral touch reminiscent of the terroir emerge. On tasting, this Champagne stands out for its marked savouriness, combined with a subtle mineral note and delicate texture. The nose is refined, with aromas of ripe citrus fruits, toasted almonds and a slight hint of flint. In the mouth, the freshness perfectly balances the structure, making this wine an ideal companion for a complete meal. It pairs well with baked fish dishes, shellfish, white meats and mature cheeses.
