Subsequently, the wine matures in wood, both in barrels and large casks, to acquire complexity and harmony. The grapes are harvested by hand and then vinified in cement and stainless steel containers, preserving the aromaticity and freshness of the wine. Fermentation at a controlled temperature is followed by ageing on the fine lees for four months before bottling. In the glass, Merus Pinot Bianco is a brilliant straw-yellow colour.
