Pinot Bianco Merus from the Tiefenbrunner winery: the essence of the South Tyrolean terroir. The name 'Merus,' which in Latin means 'pure, without addition,' well reflects the philosophy of this wine line, in which each label expresses the genuine character of the grape variety and the natural elegance of the terroir. It originates in the Bassa Atesina, one of the most vocated areas for white wines in Alto Adige. The vineyards are located in Cortaccia and Magrè, where the soil variety favours the aromatic complexity of Pinot Bianco. In Cortaccia, gravelly soils of morainic origin, characterised by a considerable presence of limestone, prevail, while in Magrè we find more sandy alluvial soils. These soils, combined with the Alpine-Mediterranean climate, allow the grapes to reach optimal ripeness while maintaining good acidity, essential for the freshness of the wine. The grapes are harvested by hand and then vinified in cement and stainless steel containers, preserving the aromaticity and freshness of the wine. Fermentation at a controlled temperature is followed by ageing on the fine lees for four months before bottling. In the glass, Merus Pinot Bianco is a brilliant straw-yellow colour. The nose impresses with delicate floral and fruity aromas, among which apple and nuances of tropical fruit stand out. In the mouth there is a pleasant acidity that gives freshness and vivacity, balanced by mineral notes that give structure and persistence. The finish is harmonious, with a long and satisfyingly clean sensation. Thanks to its acidity and delicacy, Merus Pinot Bianco is ideal with light, fresh dishes. It goes well with asparagus, grilled or steamed fish, and with traditional South Tyrolean dumplings.
