Of the Pinot Bianco family, it is considered by many to be a true champion of finesse. Franz Haas makes this elegant Alto Adige DOC from it, produced with grapes from mid-hill areas located between 400 and 800 metres above sea level. Having reached perfect ripeness, the grapes are harvested and brought to the winery to begin the transformation process. The must obtained is divided into two parts. Most of it is fermented at a controlled temperature in steel tanks. Part instead ferments in barriques, adding complexity and depth to the finished wine. Before bottling, then, the wine remains on the lees for about five months, again in order to acquire greater complexity and fullness. The Pinot Bianco thus obtained has a brilliant straw yellow colour. On the nose, the bouquet evokes fruity and spicy notes reminiscent of ripe apples, wild flowers and fresh bread. In the mouth, it is characterised by a strong personality, accompanied by an elegant and robust structure. All this is well balanced by a harmonious acidity. It is hard to make a wrong choice when there is a pure Merlot in the bottle and the golden Franz Haas inscription on the label. The first is synonymous with pleasantness in the glass. The second certifies its quality. Franz Haas harvests his Merlot grapes in vineyards not too high up, between 250 and 300 metres above sea level, on soils mainly of erosive porphyritic origin. Once in the cellar, the grapes are immediately sent for processing. Vinification takes place in open steel vats where frequent punching-down and pumping-over takes place. After alcoholic fermentation, the wine is then racked into barriques for malolactic fermentation. Afterwards, the wine matures in barriques for 18 months and, after bottling, it is refined for another year in bottles. Garnet red in colour, the nose reveals notes of elderberries, wild berries and dried figs. All enriched by spicy aromas of freshly ground pepper and star anise. In the mouth it conquers with its great freshness, articulated structure, fullness and firm tannin. The long finish recalls toasted and vanilla notes. This international red goes well with game, red meat and hard mature cheese.

Individual vineyards are located at altitudes varying between 350 and 700 metres and include a great diversity of soils. The plantings, with planting densities of up to 12,500 vines per hectare, guarantee low yields and high quality. Vinification takes place in open tanks, where the fermenting must comes into contact with the skins through frequent pumping over and punching down. Thanks to these techniques, the colouring substances and aromas contained in the skins are extracted and pass into the wine. At the end of fermentation, the wine then passes from steel into barriques, where malolactic fermentation takes place and where it then matures for a period of approximately 12 months. Then, after bottling, the wine matures further for about a year in the bottle. Schweizer Pinot Noir presents itself in the glass with a beautiful ruby red colour that varies from soft to intense depending on the vintage. The nose reveals a seductive bouquet with complex fruit aromas such as ripe berries and cherries, followed by spicy notes of pepper and leather. These aromas and sensations also find perfect correspondence in the mouth, where the wine offers pleasant surprises, thanks to its enveloping tannin and great elegance and finesse. Its structure and harmonious body make this mountain red wine extremely long-lived. Schweizer Pinot Noir is perfect with game, braised meats, red meats and mature cheeses.

There is all the charm, and style, of a great mountain sparkling wine in this Alto Adige Pas Dosé from Franz Haas. Charm and style that in large part derive from the particular grapes used in its elaboration. In fact, the Pinot Noir used in this Millesimato comes from vineyards located between 750 and 1,150 metres above sea level. Here, climate change has not yet managed to disrupt the rhythms of nature and the soils, mixed between dolomite and porphyry, guarantee an ideal substrate for growing grapes. After harvesting, the grapes are partly crushed whole, while the remaining part is destemmed and then pressed. The first ageing takes place in stainless steel, for six months, and in the spring following the harvest the wine is bottled to begin the draught phase. At that point, the wine remains on the lees for about four years, and six months before it goes on sale, disgorgement takes place. A Pas Dosé of great personality, in the glass it has a brilliant straw yellow colour, with a fine and persistent perlage. It is a pleasantly gastronomic bubble, in the sense that it pairs easily with a variety of situations. However, the producer emphasises: 'since it is pure Pinot Noir, it can never be a wine for everyone, but particularly for those who love this grape variety. On the table, not to be mistaken, we can pair it with first and second courses based on fish. Excellent, however, also with raw seafood, perhaps as an elegant aperitif.

In this label, Franz Haas channels the best Cabernet Sauvignon and Petit Verdot grapes, to which he adds small percentages of Merlot and Cabernet Franc. It is, therefore, an elegant Bordeaux blend, i.e. a red wine inspired by the style of those in Bordeaux, France. All the grapes come from vineyards cultivated using the Guyot method, located at altitudes varying between 250 and 500 metres above sea level, on sandy soils in very warm micro-zones facing south and south-west. After careful sorting in the countryside, the grapes are carefully processed and fermented in open vats. In order to promote optimal extraction of colour and tannins, the grape marc cap is pumped over and punched down up to four times a day for the duration of fermentation. Afterwards, the wine is racked into barriques where malolactic fermentation takes place and where it then matures for a period of approximately 18 months. Then, after bottling, follows a further bottle-ageing period of about one year. Only then is the wine ready to be put on the market. Istante presents itself in the glass with a beautiful, intense garnet red colour and fruity aromas of dried black berries, plums, figs and dates, with notes of green tea and bark. In the mouth, the wine does not show off its character, but rather is exalted by its layered and elegant structure, as well as its finesse and complex, compact tannins that close in a long epilogue. It is a perfect accompaniment to savoury dishes, e.g. game, robust roasts and tagliata.

The wine then matures for a year in barriques and after bottling it is further refined for a few months in bottles. Pinot Noir, which for Franz Haas is a kind of 'white among reds', presents itself (depending on the vintage) with a changing play of colours that can vary from light to deep ruby red. On the nose, the bouquet opens with notes of morello cherries and raspberries. Then marzipan and plum jam, cloves and a touch of cinnamon. As the minutes pass, the more typical aromas of the undergrowth variety are also clearly perceived. In the mouth, it is fresh and lively, thanks to elegant tannins that make it aromatic and round, inviting and tasty. Franz Haas Pinot Noir goes well with light fish dishes, roast game and red meat.

In this case, we are in the presence of one of the South Tyrolean winery's most iconic bottles. The white Sauvignon, or Blanc, comes from vineyards located between 400 and 800 metres above sea level, where soils and beneficial temperature fluctuations between day and night allow the fruit to ripen perfectly. Once in the winery, the crushed grapes are gently pressed after a night of maceration at low temperatures. Part of the must is fermented in steel tanks and part in barriques. The wine then matures in the same containers for about eight months in contact with the fine yeasts. The Franz Haas Sauvignon presents itself in the glass with a beautiful light straw yellow colour with greenish highlights. The nose seduces with a colourful bouquet of aromas, including elderflower, white peach, complex notes of dried fruit and oriental aromas. In the mouth it releases a fresh, lively and savoury acidity, with mineral notes. The finish is very persistent, characterised by a pleasant fullness and elegance. Excellent with delicate dishes, but not too delicate, such as tuna tartare or, for meat lovers, with vitello tonnato. Also fabulous in combination with slightly spicy dishes.

In this case, the wine is the result of super careful processing of the best Muscat grapes harvested from the various company plots. Then, before being bottled, the wine spends about five months on its lees, again in steel tanks, to bring out all its aromatic potential. The Moscato has a beautiful golden-yellow colour. Fine and aromatic, it is easy to distinguish notes of citrus fruits, white peach, melissa and elderflower on the nose, joined by nuances of nutmeg and sweet spices. In the mouth, it retains a definite acidity and a discreet mineral structure that give this wine an excellent freshness and pleasantness. It is called Manna, and it is one of the most unusual wines from the Franz Haas cellar. First produced in 1995, it is a cuvée, i.e. a blend, of different grape varieties. Riesling and Chardonnay, for the most part, with Gewürztraminer and a small percentage of Sauvignon Blanc. As of 2013, a part of Kerner was also added to this blend. The vineyards of the five varieties are located at altitudes between 350 and 800 metres above sea level. The ripening periods of the different varieties unfortunately do not coincide. For this reason, they are harvested and processed separately. Chardonnay and Sauvignon Blanc are fermented in barriques. While Riesling, Gewürztraminer and Kerner ferment in steel tanks to preserve their fresh component. The young wines are then blended and, after a period of about ten months on the fine lees, the finished wine is bottled and further matured in the bottle for a few months before final release. Golden yellow in the glass, thanks to its special characteristics Manna seduces with a complex and layered bouquet that brings to mind notes of elderberries, pistachios and rose petals. In the mouth, it impresses with its complexity and concentration, combined with a soft elegance and mineral structure. A versatile and long-lived wine, it is a white that continues to evolve in the bottle, giving new emotions every time you have the chance to taste it. Excellent with Japanese cuisine, hence sushi and sashimi.

In this case, Franz Haas surprises us with a little oenological gem. It is, in fact, a pure Petit Manseng. A white grape variety originating in the Jurançon area (Gascony), near the French Pyrenees, it is characterised by particularly small berries and thick skins. In Italy, it is mainly cultivated in Latium, Tuscany and Sicily, where it can also be used to produce passito wines, and in the province of Bolzano, where some producers, such as Franz Haas, vinify it on its own. This is a particularly aromatic wine, characterised by a straw-yellow colour. The nose reveals a very intense and fruity aroma, with mineral notes.
