Of the Pinot Bianco family, it is considered by many to be a true champion of finesse. Franz Haas makes this elegant Alto Adige DOC from it, produced with grapes from mid-hill areas located between 400 and 800 metres above sea level. Having reached perfect ripeness, the grapes are harvested and brought to the winery to begin the transformation process. The must obtained is divided into two parts. Most of it is fermented at a controlled temperature in steel tanks. Part instead ferments in barriques, adding complexity and depth to the finished wine. Before bottling, then, the wine remains on the lees for about five months, again in order to acquire greater complexity and fullness. The Pinot Bianco thus obtained has a brilliant straw yellow colour. On the nose, the bouquet evokes fruity and spicy notes reminiscent of ripe apples, wild flowers and fresh bread. In the mouth, it is characterised by a strong personality, accompanied by an elegant and robust structure. All this is well balanced by a harmonious acidity. It goes well with hearty hors d'oeuvres, fish-based first courses, Asian dishes and spicy curry dishes. The possibilities of appreciating it at its best, therefore, are certainly not lacking.

For many, enthusiasts and experts alike, this Pinot Noir Schweizer represents a kind of benchmark, that is, a reference point for assessing the quality of mountain Pinot Noirs, no matter where in the world they come from. The grapes, in this case, only come from areas carefully chosen for their microclimate. Vineyards that, over the years, have proven to be ideal for the production of this grape variety. Individual vineyards are located at altitudes varying between 350 and 700 metres and include a great diversity of soils. The plantings, with planting densities of up to 12,500 vines per hectare, guarantee low yields and high quality. Vinification takes place in open tanks, where the fermenting must comes into contact with the skins through frequent pumping over and punching down. Thanks to these techniques, the colouring substances and aromas contained in the skins are extracted and pass into the wine. At the end of fermentation, the wine then passes from steel into barriques, where malolactic fermentation takes place and where it then matures for a period of approximately 12 months. Then, after bottling, the wine matures further for about a year in the bottle. Schweizer Pinot Noir presents itself in the glass with a beautiful ruby red colour that varies from soft to intense depending on the vintage. The nose reveals a seductive bouquet with complex fruit aromas such as ripe berries and cherries, followed by spicy notes of pepper and leather. These aromas and sensations also find perfect correspondence in the mouth, where the wine offers pleasant surprises, thanks to its enveloping tannin and great elegance and finesse. Its structure and harmonious body make this mountain red wine extremely long-lived. Schweizer Pinot Noir is perfect with game, braised meats, red meats and mature cheeses.

Hold on. What we are about to present here is no ordinary Pinot Noir. For many enthusiasts, Italian and otherwise, this is even considered 'THE' Pinot Noir par excellence. It is one of the labels that best represents the long lineage of 'Franz' Haas. In this case, the Pinot Noir vines come from suitable vineyards located between 350 and 900 metres, on extremely heterogeneous soils. The high-density plantings also ensure the highest quality of the grapes. This, combined with the use of selected low-yield clones, guarantees continuity in quality development. Vinification takes place in open tanks, where the fermenting must comes into contact with the skins through frequent pumping over and punching down. Thanks to these techniques, the colouring substances and aromas contained in the skins are extracted and pass into the wine. The wine then matures for a year in barriques and after bottling it is further refined for a few months in bottles. Pinot Noir, which for Franz Haas is a kind of 'white among reds', presents itself (depending on the vintage) with a changing play of colours that can vary from light to deep ruby red. On the nose, the bouquet opens with notes of morello cherries and raspberries. Then marzipan and plum jam, cloves and a touch of cinnamon. As the minutes pass, the more typical aromas of the undergrowth variety are also clearly perceived. In the mouth, it is fresh and lively, thanks to elegant tannins that make it aromatic and round, inviting and tasty. Franz Haas Pinot Noir goes well with light fish dishes, roast game and red meat.

There is all the charm, and style, of a great mountain sparkling wine in this Alto Adige Pas Dosé from Franz Haas. Charm and style that in large part derive from the particular grapes used in its elaboration. In fact, the Pinot Noir used in this Millesimato comes from vineyards located between 750 and 1,150 metres above sea level. Here, climate change has not yet managed to disrupt the rhythms of nature and the soils, mixed between dolomite and porphyry, guarantee an ideal substrate for growing grapes. After harvesting, the grapes are partly crushed whole, while the remaining part is destemmed and then pressed. The first ageing takes place in stainless steel, for six months, and in the spring following the harvest the wine is bottled to begin the draught phase. At that point, the wine remains on the lees for about four years, and six months before it goes on sale, disgorgement takes place. A Pas Dosé of great personality, in the glass it has a brilliant straw yellow colour, with a fine and persistent perlage. It is a pleasantly gastronomic bubble, in the sense that it pairs easily with a variety of situations. However, the producer emphasises: 'since it is pure Pinot Noir, it can never be a wine for everyone, but particularly for those who love this grape variety. On the table, not to be mistaken, we can pair it with first and second courses based on fish. Excellent, however, also with raw seafood, perhaps as an elegant aperitif.
