Villa Antinori Chianti Classico DOCG Riserva, in fact, is one of the historic labels of the Antinori house, created in 1928 by Marquis Niccolò. A wine produced to be aged and improved over time, since then it has found its place in the most prestigious cellars of embassies, royal houses, grand hotels and restaurants. It is made from Sangiovese grapes, for once flanked by other complementary varieties. The grapes are first destemmed and then softly crushed, to initiate alcoholic fermentation and maceration that lasts for about 12 days. At the end of malolactic fermentation, the blend is made, which is then left to age in barrels until spring. Intense ruby red in colour, the nose has notes of small red fruits, currants and raspberries that blend well with notes of cherries and a slight woodiness. In the mouth it is harmonious and round. It is not every day that one has the opportunity to taste a wine that in fact represents the history of a denomination. And not just any appellation. But of one of the most beloved in the world, Chianti Classico. This honour is granted to us when we are lucky enough to come across a bottle like this. Villa Antinori Chianti Classico DOCG Riserva, in fact, is one of the historic labels of the Antinori house, created in 1928 by Marquis Niccolò. A wine produced to be aged and improved over time, it has since found a place in the most prestigious cellars of embassies, royal houses, grand hotels and restaurants. It is made from Sangiovese grapes, for once flanked by other complementary varieties. The grapes are first destemmed and then softly crushed, to initiate alcoholic fermentation and maceration that lasts about 12 days. At the end of malolactic fermentation, the blend is made, which is then left to mature in barrels until spring. Intense ruby red in colour, the nose has notes of small red fruits, currants and raspberries that blend well with notes of cherries and a slight woodiness. In the mouth, it is harmonious and round. Well fresh and tannic, it has a very pleasant finish. It goes well with game dishes, but also (and perhaps above all) with the more classic Florentine steak.

Champagne Collection Vintage 2012 Brut by Nicolas Feuillatte: one of the Maison's best vintage champagnes. A great product, the result of a unique vintage, 2012. A first-rate 'vintage' for the vineyards of the Champagne region that some go so far as to compare it to the 1989 or 1990, both of which are considered 'textbook'. Yet in 2012, the weather conditions did not seem favourable. Fortunately, the warm and sunny weather that characterised the period since the harvest nevertheless allowed the grapes to ripen optimally, albeit with sparse bunches and small grapes. Collection Vintage 2012 is a cuvée of Chardonnay, Pinot Noir and Pinot Meunier in equal proportions, vinified in temperature-controlled steel vats and then aged in the bottle for at least 9 years. In the glass, the Champagne is a golden yellow colour with a fine, persistent perlage. The nose reveals elegant notes of acacia honey, candied fruit and brioche, while the palate reveals a wine with a fine structure and equally good balance. A Champagne of great level, perfect to accompany dishes rich in flavour such as the classic mushroom risotto, wild boar with olives, but also rich and long-rising desserts such as panettone.

Ca' Divo is a sparkling wine proposed by La Gioiosa that comes from the processing of different varieties typical of the North East. Grapes that, thanks to their natural aromaticity, are particularly suited to being made sparkling using the traditional Charmat system. On arrival in the winery, the whole bunches of grapes are put into a pneumatic press to proceed with super-soft pressing. The must thus obtained is naturally clarified and stored at a low temperature until the moment of the so-called froth setting. At that point it is passed into an autoclave and selected yeasts are added to trigger fermentation. Once the desired alcohol content and sugar content has been reached, the process is stopped by simply lowering the temperature of the tank and, after a short period of rest, the sparkling wine is ready for bottling. Pleasantly soft, thanks to its 14 grams of sugar per litre which make it an Extra Dry sparkling wine, this Ca' Divo has intense aromas of fruit and flowers, and a fresh, lively taste. An aperitif wine, it can accompany vegetable and shellfish hors d'oeuvres or delicate first courses.

Speaking of tradition, this Prosecco DOC is undoubtedly one of the most interesting products offered by La Gioiosa. Tradizione e Territorio is made from Glera grapes, to which other varieties allowed by the regulations may be added in a percentage of less than 15%. As soon as they reach the winery, the whole grapes are put into the pneumatic press, and the must obtained is kept in steel tanks at a controlled temperature until the moment of sparkling. At that point, the must, with the addition of selected yeasts, is passed into temperature-controlled autoclaves where frothing takes place. Once the desired alcohol content and sugar content has been reached, the temperature of the tank is lowered to stop fermentation. At that point, after a short period of rest, the sparkling wine is ready for bottling. Pale straw yellow in colour, the perlage is fine and persistent. The nose is fruity and floral, with notes of ripe golden apples and small white flowers. On the palate, however, it is pleasantly dry, fresh and sapid, with a fruity and harmonious aftertaste.
