This wine is definitely good. The producers themselves state this on the label. And if they says so, we can believe them for once. After all, even the strictest international wine critics have often given very positive opinions of the organic labels of this small Spanish company. In this case, the proposed red comes from a pure processing of Marselan grapes, a variety whose father is Cabernet Sauvignon and mother is Garnacha. Made from low-yielding vines vinified in small fermentation tanks, after processing it is matured in new French oak barrels for more than 14 months before being bottled without cold stabilization to keep it as pure as possible. A powerful, tasty and balanced red, it can accompany refined meat dishes, even game, or be used as a pleasant aperitif to accompany a board of cured meats or medium-aged cheeses. For lovers of healthy cooking, however, it also goes well with slightly spicy vegetarian dishes. Good even today, it can be stored for up to 10 years in the cellar.

Quintessa is defined as 'a wine of precision', the result of an expertly balanced blend of Bordeaux grapes. The main component is Cabernet Sauvignon, which makes up 91% of the blend. With him, small percentages of Cabernet Franc (4%), Merlot (2%), Carménère (2%) and Petit Verdot (1%) are used to add complexity to the blend. The grapes, carefully selected during the harvest, are vinified in such a way as to preserve the varietal and territorial characteristics as much as possible. After fermentation, the wine matures for 22 months in French oak barrels, 60% of which are new. To the eye, Quintessa has an intense, dark ruby red colour. On the nose, there are fruity notes of blackcurrant, black cherry and redcurrant, accompanied by hints of spice and a slight hint of dried herbs. In the mouth, it is a symphony of flavours, with structured tannins that blend harmoniously with the intense minerality typical of this Californian terroir. A wine with an extraordinary capacity for ageing, although already enjoyable when young, it expresses itself at its best over the next twenty years, evolving and acquiring further complexity with the passage of time. Petite Fleur is a 'Blend' of four grape varieties that come together to create a complex and enveloping wine. The base is Merlot, which alone accounts for about 50% of the blend. Then Malbec (39%), Mendoza's flagship grape, Syrah (8%) and Cabernet Sauvignon (3%), which completes the blend with its tannic elegance and aromatic finesse. Harvesting, carried out manually in small 12 kg crates, allows the best bunches to be selected, maintaining the integrity of the grapes until vinification. Once in the cellar, the grapes undergo cold maceration at 7° C for 5 days. This process allows the maximum aromas and colour to be extracted from the skins without affecting the wine's natural acidity. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks. Subsequently, 70% of the wine matures for 12 months in 225-litre French oak barrels of second and third passage. Finally, the wine rests in the bottle for a further 6 months, thus reaching its full expression. In the Petite Fleur Blend glass, it has a deep, intense purple-red colour, with notes of red and black fruits, such as cherries, plums and blackberries, accompanied by hints of green pepper. In the mouth, the tannins are round and well integrated, offering a feeling of balance and harmony. The finish is long and persistent, with a subtle spicy vein inviting one to take another sip. A pleasantly versatile wine, it goes well with meat dishes. Try it, for example, with a gourmet hamburger, or with mature cheeses.
