A Chianti, Classico in fact if not in origin, that comes from a skilful combination of Sangiovese and international vines. Chianti Superiore DOCG, a denomination that boasts almost a century of history, a wine characterised by pleasant drinkability, great freshness, and a deep bond with its territory of origin. In this case, the harvest begins with the picking of the international varieties and ends with the later-ripening Sangiovese, which reaches maturity between the end of September and mid-October. Upon arrival at the winery, the harvested grapes begin their journey with a maceration phase lasting 7-8 days, to best extract colour and soft tannins. This is followed by fermentation and, after racking, malolactic fermentation, which generally takes place in November. This is followed by ageing in stainless steel tanks and bottling. Ruby red in colour with violet hues, the nose of this Chianti reveals itself to be particularly rich, with fruity notes of morello cherry, aromatic herbs and balsamic sensations. In the mouth it is soft and enveloping, with velvety tannins and a long, savoury finish. This is the wine to accompany the classic grilled steak or with tasty cheeses and traditional cured meats.
