A bottle like this, impossible not to notice. We are of course talking about Belle époque, Cuvée de prestige from Maison Perrier-Jouët. Its history goes as far back as 1902, when the maison asked Emile Gallé, a glassmaker and decorator, to embellish the glass of the bottle intended for a new Cuvée. A wine that was supposed to celebrate the happy historical period they were living, the Belle époque precisely. The artist decorated the bottle with white anemones, but for various reasons they were not used for more than 60 years. They were revived only in 1964, when Chef de Cave André Bavaret, decided to bottle the iconic Cuvée precisely in a bottle decorated in such an original way. Since then the Belle époque has been a symbol of Champagne and Maison Perrier-Jouët's most prestigious wine. Chardonnay 50%, Pinot Noir 45% and Pinot Meunier 5%, Belle époque rests in the Maison's cellars for at least five years. The 2013 vintage proves to be an elegant and exciting Champagne, characterized by a beautiful clear gold color with subtle greenish reflections. On the nose, notes of white flowers combined with white peach, crisp pear and citrus. In the mouth it is very fresh, with a lingering and harmonious finish. Try it with a risotto with porcini mushrooms, as well as with classic shellfish and seafood.

Few people know this. But in its early days, Champagne was not as dry as we know it today. It was, on the contrary, a magnificent sweet and effervescent wine in which the dosages, that is, the added sugar, were decidedly generous. After all, sugar had the advantage of making any drink more palatable, hiding any flaws or stylistic imperfections. The credit for changing direction belongs to Maison Perrier-Jouët, which around 1840 drastically reduced the dosage of its cuvées to meet the demand of the English market. This gave rise to the Cuvée Grand Brut, which still perfectly embodies the Maison's style. Chardonnay 20%, Pinot Noir and Pinot Meunier 40%, the grapes used for this Cuvée are selected in the different crus according to the vintage. To add complexity to the final wine, a percentage ranging from 12 percent to 20 percent of reserve wines, from previous vintages, is also added. Finally, the long maturation on the lees, in the case of Grand Brut is prolonged for at least 3 years. The result is a fresh and balanced Champagne. A wonderful super-dry bubble with great persistence. Best uncorked on an elegant occasion, this Champagne is ideal with seafood or a tasty tuna tartare.

Ca' Divo is a sparkling wine proposed by La Gioiosa that comes from the processing of different varieties typical of the North East. Grapes that, thanks to their natural aromaticity, are particularly suited to being made sparkling using the traditional Charmat system. On arrival in the winery, the whole bunches of grapes are put into a pneumatic press to proceed with super-soft pressing. The must thus obtained is naturally clarified and stored at a low temperature until the moment of the so-called froth setting. At that point it is passed into an autoclave and selected yeasts are added to trigger fermentation. Once the desired alcohol content and sugar content has been reached, the process is stopped by simply lowering the temperature of the tank and, after a short period of rest, the sparkling wine is ready for bottling. Pleasantly soft, thanks to its 14 grams of sugar per litre which make it an Extra Dry sparkling wine, this Ca' Divo has intense aromas of fruit and flowers, and a fresh, lively taste. An aperitif wine, it can accompany vegetable and shellfish hors d'oeuvres or delicate first courses.

Speaking of tradition, this Prosecco DOC is undoubtedly one of the most interesting products offered by La Gioiosa. Tradizione e Territorio is made from Glera grapes, to which other varieties allowed by the regulations may be added in a percentage of less than 15%. As soon as they reach the winery, the whole grapes are put into the pneumatic press, and the must obtained is kept in steel tanks at a controlled temperature until the moment of sparkling. At that point, the must, with the addition of selected yeasts, is passed into temperature-controlled autoclaves where frothing takes place. Once the desired alcohol content and sugar content has been reached, the temperature of the tank is lowered to stop fermentation. At that point, after a short period of rest, the sparkling wine is ready for bottling. Pale straw yellow in colour, the perlage is fine and persistent. The nose is fruity and floral, with notes of ripe golden apples and small white flowers. On the palate, however, it is pleasantly dry, fresh and sapid, with a fruity and harmonious aftertaste.

If Pinot Noir is a grape variety that certainly needs no introduction, in this case it shares the stage with another French variety, this time originating from the Rhone Valley. Viogner, which risked disappearing in the past due to its low productivity, has only recently come back into the limelight, thanks to its special aromatic characteristics. It prefers warm climate regions and is generally always offered in blends with other grapes. It has a good structure, similar to a Chardonnay, freshness and pleasant tropical notes. With the typical Pinot Noir of the Oltrepò, Losito & Guarini obtains a sparkling wine base that is ideal for processing with the classic Charmat method. The result is a sparkling wine characterised by a beautiful intense straw yellow colour, with decidedly fruity aromas, hints of exotic fruit and mineral notes. In the mouth, then, an extremely lively bubble is revealed, with a balanced and persistent taste. Perfect as an aperitif, it is not afraid of comparison with shellfish and raw fish.

The starting material is Malvasia di Candia, which the sun, the weather and the rich Emilian soil make particularly rich and aromatic. All that is left to the Ceci cellar managers is to enhance it with an impeccable vinification technique. The result is a modern wine, intriguing and capable of giving great satisfaction on any occasion. White vinification and alcoholic fermentation at a controlled temperature, with a part of fresh must added during refermentation. The sparkling process is then carried out in autoclave, using the Martinotti method. Straw yellow colour with an elegant and rich perlage, the nose reveals a rich floral note, reminiscent of wild flowers, but also fruity. It is easy to distinguish tropical fruit, white peach as well as hints of citrus. In the mouth, it plays on an interesting balance between softness and savouriness, with mineral and citrus notes. The finish, long and pleasant, recalls bitter almonds and prolongs the pleasure of each sip for several minutes. Excellent with mildly flavoured and moderately mature cheeses, it also goes well with white meat curries.

Let's start with the name: Liìnti. In Sardinian, this term indicates the Levant, i.e. the East. The place where the sun rises. And it is towards the East that the vines from which the grapes used to produce this Liìnti come. A blend of the main indigenous grape varieties, including Carignano, with Syrah, obtained from the selection of grapes from the youngest vineyards. Vinified in stainless steel, it is a straightforward red wine that, while expressing immediacy and freshness, reveals qualities of great quality. Produced since 2009, after vinification this red wine matures in steel and cement until it acquires a red colour with garnet hues. The nose is intense, with fruity and spicy notes. Then cinnamon, rhubarb, black fruit jelly and even mocha. In the mouth it is enveloping with sweet tones of ripe fruit and a fine tannicity. Good balance and pleasantness. A red wine with good character and a potential for medium/long ageing. Well stored in the cellar, protected from light and temperature changes, it is a wine that can easily continue to age for years. But, we are sure, it will be difficult to wait that long to uncork it. With a roast, a stew or a stew, there are plenty of occasions to appreciate it.

After all, it comes from a perfect combination of 56% Chardonnay grapes to which 44% of Pinot Noir grapes are added to give strength and colour to the cuvée. The refinement in bottle lasts about 4 years. Time needed for the wine to reach the right complexity. The result is a sparkling wine of rare elegance, characterized by a soft pink hue and a tight perlage that creates a compact and persistent foam on the surface. The nose recalls fragrant notes of ripe fruit, from white peach to wild strawberries. Then memories of wild flowers and toasted bread. In the mouth it is intense and concentrated. Decidedly fresh but not sour, with elegant notes reminiscent of blackcurrant and sweet almond.

There is nothing more typical than the traditional Trabocco (or trebuchet) in Abruzzo. These wooden structures, still quite common in the Adriatic Sea today, are nothing more than a fishing construction that allowed local fishermen to work even in the worst sea conditions. The Trabocchetto is nothing more than the net that is lowered from the other side of the trabocco and which is still used for fishing today. In the case of Tenuta Talamonti, however, the Trabocchetto is a Pecorino Superiore, Abruzzo DOC, pleasantly aromatic and suitable for a thousand culinary interpretations. A certified organic wine, this white wine is made exclusively from grapes harvested, by hand, in the estate vineyards. Processed with full respect for the raw material, the winemaker's aim is to make the most of the rich aromatic heritage of the grapes. We therefore proceed with vinification only in steel, with selected yeasts and strict temperature control. After vinification, the wine is simply left to rest in the bottle for a few months before being put on the market. In the glass it has a beautiful bright straw yellow colour. The nose expresses fruity notes, with fresh nuances of rennet apple, ripe pear, broom flowers and jasmine. In the mouth, it is especially surprising for the perfect balance between the richness of the fruit and the pleasant, fresh acidity.

This Vespa Bianco is one of the symbols of the Bastianich winery. This is a blend of Chardonnay and Sauvignon grapes, with the addition of 10% Picolit. All the grapes used in this case come from the Buttrio and Premariacco areas, in the province of Udine. The grapes are selected on sorting benches before being gently pressed. The first-press must is then placed directly into spontaneous decantation for 48 hours and combined with a portion of the press must. Alcoholic fermentation then takes place separately for each variety. For 50% of the fermentation takes place in steel, and for the remaining 50% in 5 and 40 hectolitre oak casks. At the end of fermentation, keeping the wine in contact with most of the yeasts, a long period of batonnage begins, alternating with racking until May. Only then is the wine finally assembled for bottling. A year of bottle ageing completes the process. The result is a wine characterised by a beautiful straw yellow colour with golden hues. On the nose, mineral and citrus notes alternate with sensations of flowers, honey and ripe pear. In the mouth, however, it is above all elegant. Rich in aromas, it is perfectly balanced between freshness and body. To appreciate it at its best, the right combination is with white meats, such as roast chicken or turkey, but also veal or pork. It is also excellent with fish, of course. As long as it is very tasty.
