Pauillac is a wine region of great prestige, a land of high quality red wines. This is due to an exceptional terroir and the predominant use of Cabernet Sauvignon, which finds an ideal habitat here on predominantly gravelly soils. In addition, Pauillac is home to several prestigious chteaus, including Chteau Haut-Bages Libéral, which each year produces wines with a complex aromatic profile and a remarkable capacity for ageing. In this case, the basic blend consists of 72% Cabernet Sauvignon and Merlot for the remainder. Vinification is carried out in a parcelled and individualised manner, and is characterised by frequent pumping over to extract colour and tannins and a particularly soft vertical pressing. After processing, the wine matures for about 16 months, divided between barriques and amphorae. Freshness, power and elegance are the key words of Chteau Haut-Bages Libéral. Intense ruby red in colour, the nose reveals a broad bouquet with clear notes of red and dark fruit, accompanied by hints of undergrowth and hints of liquorice and vanilla, due to the ageing in wood. In the mouth it is enveloping and balanced, characterised by ripe and silky tannins, with lovely mineral and spicy notes. The finish is also long and pleasant, prolonging the pleasure of each sip for several seconds. Good today, this Pauillac is certainly in no hurry to be uncorked. For a few years, it will be able to evolve in the bottle, waiting for the evening to be the right one. An all-meat menu, with tasty dishes and a slightly spicy character.

A small biodynamic masterpiece. From the heart of the Margaux district, in Haut-Médoc, Chteau Durfort-Vivens offers this 2ème Cru Classé, a red that is particularly representative of the winery's production. Margaux is characterised by a unique microclimate, influenced by the proximity of the Atlantic Ocean. Sunny days and cool nights create an ideal environment for the ripening of the grapes, in particular Cabernet Sauvignon, which accounts for around 97% of the blend and finds its finest expression here. Harvest and vinification take place by parcel, enhancing the unique characteristics of each vineyard. Alcoholic fermentation takes place with natural yeasts and daily pumping over to favour delicate extractions. Malolactic fermentation completes the process, giving the wine softness and complexity. The wine then matures for approximately 18 months in new barrels (70%) and terracotta amphorae (30%), giving the wine structure and longevity. Intense ruby red in colour, the nose has a complex and elegant bouquet, where notes of blackberry, blueberry, blackcurrant and bark intertwine. In the mouth, it is full and layered, with fine, velvety tannins that help give the wine structure and persistence. Chteau Grand Barrail Lamarzelle Figeac is spread over a mosaic of unique soils, characterised by flint-rich gravel and a layer of green clay that helps maintain a perfect water balance for the vines. This is a blend of Merlot (78%) and Cabernet Franc (22%), a combination that enhances the fruity, soft character of the Merlot and the refined tannic structure of the Cabernet Franc. The harvest, as is customary here, is carried out by hand, with careful selection of the bunches to ensure perfect ripeness of the fruit delivered to the cellar. The grapes are vinified separately in temperature-controlled stainless steel tanks, respecting the peculiarities of each parcel. After fermentation, the wine matures for 12 months in oak barrels, 33% of which are new, to add spicy aromas and complexity to the bouquet. In the glass, the wine is an intense garnet red colour. Complex aromas of violets and dark fruits dominate its bouquet, enriched by spicy scents and light toasted hints resulting from the ageing in wood. In the mouth it is soft and fleshy, with a fine and silky tannic structure. The finish is fresh and long, and allows elegant fruity notes to emerge. Despite the fact that it is the house's little brother, all the stages of its production certainly do not lack care and attention. Vinified at a low temperature, each stage of the production process is designed to favour a gentle extraction. Selective, manual harvesting of the different varieties that have reached full maturity, vinification takes place in small, thermoregulated wooden and stainless steel vats. After processing, the wine then matures for about 18 months on its fine lees in French oak barrels. Of these, about 65% are new wood. Ruby red with garnet reflections, this Pessac-Léognan immediately reveals very complex aromas of dark berries, mushrooms, earth, flowers and incense. Pessac-Léognan is a controlled designation of origin located within the Bordeaux region. A fine example of this is this Chteau Fombrauge, Saint-Émilion Gran Cru Classé, which is made precisely from 90% Merlot and 10% Cabernet Franc. Hand-picked grapes selected for health and proper ripeness are delivered to the winery in small crates. They then undergo careful sorting on a sorting table, before and after destemming. About 20 qualified people participate in this operation. The transformation process varies according to variety, and the wine is assembled only a few months before the beginning of the wood maturation phase. In this case, the winemaker's planned aging is about 16 months, in new oak barrels for 40 percent and second-passage barrels for the remainder. In the glass, it is a beautiful deep, dark ruby red color. The nose reveals seductive notes of fruit and flowers, with distinct flavors of black cherry, blackberry and elderflower. Vinification takes place in wooden vats, cement and temperature-controlled stainless steel tanks. The maceration phase lasts about 21 days and is followed by alcoholic fermentation. Then, after racking and malolactic fermentation, the wine is placed in French oak barrels for a period of no less than one year. It should be noted that at least one third of the barrels are renewed each year. Deep and intense red, the nose evokes notes of ripe fruit, with aromas of currants and berries, as well as roses, flowers and citrus peel. In the mouth, it reveals itself to be a full-bodied red, with creamy, velvety tannins that prolong the pleasure of each sip for several seconds. The proposed red wine comes from a parcel vinification. 70% Cabernet Sauvignon, 25% Merlot and 5% Petit Verdot. The grapes are selectively harvested at full ripeness and kept separate throughout the production cycle. Alcoholic fermentation is triggered by the action of natural yeasts and is accompanied by daily pumping over to ensure gentle extraction. Maceration continues for about 3 weeks and, at the end of processing, after racking and malolactic conversion, the wine is transferred to barriques for its maturation period. At least 18 months, during which the mass is divided into three parts. Forty per cent is passed into new barriques, 40 per cent is left to mature for individual varieties and the remaining 20 per cent matures in ovoid vats and amphorae. The final blending takes place only shortly before bottling. A red of great personality, this Margaux presents itself in the glass with a beautiful bright red colour and compactness. The nose is reminiscent of blackberries, blackcurrants, violets, bitter chocolate, clay and mineral. Medium-bodied, in the mouth it reveals very fine and well-integrated tannins, a nice structure, well balanced by a clear sensation of softness. This Margaux seduces enthusiasts and experts alike with its freshness and great elegance.

The climate here is particularly temperate, oceanic in nature. 74% Cabernet Sauvignon, 24% Merlot and 2% Petit Verdot, this Bordeaux comes from super careful selection in the vineyard. Vinification takes place at parcel level to ensure the best expressiveness of each variety and each terroir. In the cellar, in fact, no less than 102 thermoregulated stainless steel vats are available to the winemaker for the 103 total plots in the vineyard. Each plot is classified according to grape variety, vine age, terroir and degree of ripeness of the grapes. Temperature-controlled vinification, with moderate daily pumping over to aid extraction. At the end of the transformation, the wine undergoes malolactic fermentation by co-inoculation. Maturation then continues for approximately 21 months in barriques, at least 50% of which are new. Chteau Lagrange represents with exceptional richness and fruity freshness the specificity and DNA of its terroir. Intense and expressive, this Bordeaux red has velvety tannins, full body and great balance. Good already, this Saint-Julien is destined to age, and well, for a long time before being uncorked. Excellent with savoury meat dishes and medium-aged cheeses.
