Produced from indigenous grapes, Castel del Monte DOP Rosso by CRIFO is a tribute to the Nero di Troia vine, in this case flanked by 30% of 'other black grapes' typical of the area. The Castel del Monte denomination is synonymous with quality and wine tradition, thanks also to a particularly favourable terroir. It originates on the first hilly slopes of the Murgia, north-east of Ruvo di Puglia, about 400 metres above sea level. This area is characterised by marly, slightly clayey soil, enriched with sand of karstic origin, which contributes to giving the wines a special structure and complexity. The hilly exposure, combined with the breeze coming from the Adriatic, creates an ideal microclimate for the ripening of the grapes, favouring the development of intense aromas and a distinctive freshness. The vineyards, cultivated using the traditional Apulian pergola system, benefit from good sun exposure, allowing the grapes to reach optimal ripeness while maintaining a balanced freshness and acidity. As soon as the grapes are harvested, they are immediately transported to the cellar where the best bunches are carefully selected and then destemmed. Pre-fermentation maceration then takes place at a controlled temperature for 24/48 hours, followed by fermentation in steel. This step allows the aromas to be extracted from the skins in the best possible way, keeping the aromas and colour lively. The wine then continues with malolactic fermentation, which gives it softness and roundness. After a short bottle ageing, the wine is ready to be enjoyed, revealing a young and lively character. A lively ruby colour, enriched with violet hues, the nose reveals intense aromas of blackberries and plums, with a hint of violets emerging delicately in the background. In the mouth, the taste is full-bodied, dominated by ripe, well-integrated tannins. The finish is pleasantly fruity, with returns of ripe fruit that enhance its persistence and complexity. An ideal companion for typical Apulian dishes, it goes well with classic orecchiette al sugo, stuffed aubergines and roast lamb with potatoes. It is also excellent with semi-mature cheeses.

Ruvo di Puglia is located on the foothills of the Murgia. This interesting Castel del Monte DOP Bianco is produced here. It is offered by CRIFO, the historic brand of the Ruvo di Puglia winery. The vineyards are located at an altitude of about 400 metres above sea level, benefiting from a temperate and ventilated microclimate that favours a slow and uniform ripening of the grapes. The soil here is marly, slightly clayey and enriched by sandy components of karstic origin. This contributes to the wine's distinctive freshness and minerality. The basic grape variety is Bombino bianco, a native Apulian variety that expresses itself best in these lands. Cultivated with the traditional pergola, Bombino bianco is particularly appreciated for its ability to maintain good acidity even in particularly hot climatic conditions. Immediately after the harvest, the grapes are brought to the cellar and subjected to a soft pressing, in order to extract the so-called 'must flower'. This is then cooled and kept at a low temperature for a few hours, a technique that helps to preserve the delicate fruity and floral aromas. After a natural clarification, the must is fermented in temperature-controlled stainless steel tanks using selected yeasts. The wine continues its ageing in stainless steel until bottling, to keep its freshness and vivacity intact. Castel del Monte DOP Bianco has a brilliant, straw-yellow colour. On the nose, intense and fragrant aromas of white flowers, followed by notes of crisp fruit and a hint of aromatic herbs. In the mouth, the freshness and savouriness are perfectly balanced with the alcohol content, offering a harmonious and pleasantly persistent sip. The finish is long and enriched with citrus and balsamic notes, inviting one to taste again. Try it with light, tasty dishes such as raw fish carpaccios, peppered mussels, broad beans and chicory, stuffed cuttlefish and sea bass in salt. Its freshness also makes it an excellent companion for aperitifs and appetisers.

Castel del Monte DOP Rosato by CRIFO is a wine that fully expresses the territory of Ruvo di Puglia. We are in the heart of the Murgia, a corner of Apulia characterised by a unique terroir. Here, the first hillsides rise up to 400 metres above sea level, offering ideal climatic and geological conditions for growing vines. The basic grape variety is Bombino Nero, an indigenous variety particularly appreciated for its versatility and ability to produce rosé wines of great finesse and aromaticity. Here, the grapes are cultivated using the traditional Apulian pergola system, benefiting from the altitude and proximity to the sea. After harvesting, the grapes are immediately taken to the cellar, where they undergo a gentle crushing and destemming and are cooled to 10°C. This initial cooling serves to preserve the fresh aromas from the skins, which are then extracted through a short 4-6 hour maceration in the press. This phase is crucial for giving the wine its characteristic bright colour. This is followed by fermentation of the flower must in steel, preserving the aromatic vivacity of the Bombino Nero. Finally, at the end of processing, the wine matures for 60 days on the lees before being bottled and left to rest for a further two months. This Castel del Monte DOP Rosato offers a broad and varied bouquet, in which notes of pomegranate, red mulberry and fresh berries stand out. In the mouth the freshness is vital, supported by a taste persistence that ends with a subtle savoury note, typical of the Murgia terroir. Excellent with both seafood dishes and those more typical of Apulian tradition. Try it with mussels au gratin, tiella and Mediterranean-style sea bream. Also try it with pizza margherita and vegetable dishes.
