To achieve the desired colour and aromatic profile, the Primitivo grapes undergo a short maceration on the skins, followed by a temperature-controlled white fermentation. This allows the Produttori di Manduria to extract the grape's typical aromas while maintaining the freshness and lightness typical of rosé. After fermentation, the wine is then refined in steel tanks and in the bottle before release. Deep and bright pink in colour, this Made in Salento rosé reveals a delicately fruity, fragrant and full bouquet, with notes reminiscent of cherry and small red fruits. In the mouth it is fresh and savoury, with a pleasant softness that makes it balanced and versatile. This typical red wine is a tribute by Produttori di Manduria to one of the symbolic vines of Apulia: Primitivo. This variety, so deeply linked with its territory, owes its name to its early ripening, primitive, in fact. It is known for its intense and generous wines, capable of transmitting the characteristics of the territory in which it is cultivated. And Manduria, in the heart of the province of Taranto, is precisely one of the most vocated areas for the cultivation of Primitivo, thanks to its warm and sunny climate, mitigated by sea breezes. Salento IGT Primitivo 1932 by Produttori di Manduria comes from a careful selection of grapes in the countryside. Once in the winery, fermentation at a controlled temperature starts, followed by ageing in steel tanks. Finally, after bottling, the wine rests for some time in the cellar before being finally put on the market. This Primitivo makes a fine show in the glass thanks to its intense ruby red colour, with violet reflections suggesting its youth. On the nose, an intense and complex bouquet, characterised by aromas of ripe red fruits such as cherry, plum and blackberry. It's probably suggestive. But the colour of this wine is really reminiscent of the coral that decorates its label. It is called Aka and it is a Salento IGT rosé, produced with pure Primitivo grapes. Bunches of grapesfrom very old plants that reach over 40 years of age. Historic vineyards that produce little but mostly produce well. After the harvest, which usually takes place towards the end of August, the grapes are quickly brought to the cellars and sent to a maceration phase that lasts about 8 - 12 hours. Conventional wisdom calls them the "wines of one night". It takes little for the Primitivo to yield that beautiful and evocative nuance of colour. The scent is captivating. Intense notes of fresh cherries, pomegranate, red apple, wild strawberries and raspberry. In the mouth, however, it is a fresh but well-structured wine. Crunchy, we could call it, but also savoury and decidedly (pleasantly) long.

It is certainly no coincidence that the Primitivo grape variety is the most widely cultivated in Apulia. Native to the 'heel of our boot', this vine is capable of expressing itself in a thousand different ways, adapting from time to time to different climates, soils and exposures. In the Manduria area, then, Primitivo finds its ideal habitat, giving life to wines of rare pleasantness and complexity. Like this Elegia, Primitivo di Manduria DOC Riserva, produced by Produttori di Manduria. It comes from grapes harvested in vineyards between 35 and 50 years old, some of which are still cultivated using the traditional alberello system which, as experts know, allows low yields but very high quality. Harvested during the second half of September, the grapes are vinified in red, with a maceration period lasting about two weeks. After racking, the wine then matures for about a year in French oak barriques. Intense ruby red in colour, the nose is pleasantly elegant, with a distinct fruit component reminiscent of wild blackberries, prunes, raspberry jam and blueberries. Nutmeg, vanilla and cloves anticipate memories of aromatic herbs and leather. Hints of toasted almonds and wilted violet petals flank the typical hints of undergrowth. In the mouth it is characterised by a nice bright acidity, with dry tannins and a pleasant persistence. Excellent with strong-flavoured dishes, such as wild boar, but also roasts and braised meats.
