The grapes, harvested by hand only when fully ripe, are skilfully processed with great attention to fermentation temperatures. The wine produced is left to mature in the cellar for a period of no less than one year in Slavonian oak casks and, to a small extent, in barriques. The result is a wine characterized by an intense ruby red colour. To the nose, red and black fruit dominate over everything, leaving room only for a slight spiciness due to the expert aging in wood. On the palate, however, it is well-structured. Justly tannic and pleasantly long finish.

Then, after bottling, Petra matures in glass for a further 17 months (minimum). In the glass it has a beautiful, brilliant ruby red colour. The nose offers an intense and complex bouquet of red fruits, wild blackberries, cherries and currants. These aromas are complemented by balsamic notes of Mediterranean scrub, pepper, incense and vanilla. In the mouth it is powerful and voluminous, with a rich and silky tannic texture. A wine certainly to be paired with meat dishes of great structure, such as roasts, braised meats and game. It also goes well with mature cheeses and first courses with meat sauces. Try it with tagliatelle with wild boar ragout or the most classic of Fiorentina steaks. Complexity, elegance and power, Toscana Rosso IGT Petra is good today but can also be kept for a few years in the cellar to allow it to evolve and acquire more complexity.
