Good today but capable of evolving well in the cellar for an eternity, this Barolo DOCG should always be bought in several units. One bottle could be opened immediately. The others, on the other hand, should remain jealously guarded in the cellar waiting for the right occasions. Matured in medium-capacity oak casks for around 24 months before being bottled for a further 12 months in glass, this Barolo now has a beautiful ruby red colour with garnet highlights. The bouquet is ample, gentle but intense. Hints of withered rose, violet, tobacco, undergrowth and light vanilla are easily discernible. In the mouth, then, the texture of the tannins is dense and thick. The entry is soft, almost velvety, and then explodes into a sensation of fruit well balanced by acidic freshness. The aftertaste is very long and rich in flavour. A perfect meditation wine, perhaps paired with a chocolate dessert, it is also a perfect Barolo for the whole meal. The important thing is that the menu is the right one. Based on red meats, with long cooking times.

Those who drink Barolo do not drink a simple wine. Rather, they drink the unique and inimitable fruit of a territory. And for this reason, there are those who prefer the wine from a certain municipality. Others prefer the typical version from another area. And there are those who seek complexity, choosing wines that are produced by blending the grapes of several distant vineyards. For this reason, special selections have been created within the denomination. And Fontanafredda, among others, was one of the first wineries to decide to make the most of the peculiarities of its terroir. Since 1988, in fact, they have been the first to produce this communal selection, an identity Barolo that represents the power of the Serralunga terroir and the elegance of the Fontanafredda style, floral, balsamic, vibrant and fresh. After vinification, this Barolo DOCG rests for 24 months in oak barrels and 12 months in cement. Only then is it ready to be bottled. A great red wine from the territory, capable of expressing its best characteristics right from the start but which also has the capacity to age, or rather mature and evolve, for a decidedly long time. Even 25/30 years, according to its producers. Today, in the glass, it has a beautiful ruby red colour with garnet highlights. The bouquet is clean and intense, with sweet sensations and hints of spices, dried rose and undergrowth. The taste is soft, full, velvety, harmonious and vibrant. A wine like this should not be uncorked if the occasion is not the right one and if there are no good traditional dishes on the table. Important first and second courses, as important as the wine, obviously based on red meat. But also medium-long aged cheeses and, for the sweet tooth, a little dried fruit and a sliver of chocolate. After all, a wine like this should not be drunk. It should be sipped, slowly, in order to grasp all the nuances of its broad bouquet.

Contessa Rosa Brut Rosé represents the true spirit of Fontanafredda. Dedicated to Countess Rosa Vercellana, known as the "Bela Rusin", this sparkling wine, made from grapes grown at high altitudes, expresses the combination of aromatic freshness and complexity typical of great wines such as Barolo. Its base cuvée is composed of Pinot Noir and Chardonnay grapes from the Langa of Alba and Asti. Part of the Pinot Noir grapes are pressed and left in contact with the skins in temperature-controlled tanks for one or two days and, at the end of maceration, a soft pressing is carried out. This produces a rosé must which, together with the white must, is fermented in stainless steel tanks at a low temperature and, at the end of this phase, the wine obtained is left in contact with its fine lees until the following spring. At this point, the cuvée is made by blending the wines from the two fermentations. The second fermentation, in the bottle, continues with no less than 48 months of maturation on the lees. The real peculiarity of this classic method, however, lies in the unique recipe of its "liqueur d'éxpédition" which contains, among other ingredients, a few drops of Barolo DOC 1967. Pale pink in colour with onion skin highlights, the nose has aromas reminiscent of orange blossom, pomegranate, chinotto and black plum, ending with ginger, nutmeg, lavender, basil and a background of custard. On the palate, however, one discovers a fine and persistent bubble, but above all a perfect balance between all the components of the wine. Excellent as an aperitif, thanks to its personality, it can accompany an entire meal with class.
