Fèlsina is synonymous with Chianti Classico. The vineyards from which the grapes used for this elegant red wine come are located in Castelnuovo Berardenga, in the south-eastern part of the Chianti Classico area. Oriented almost exclusively to the south-west to enjoy the warmest and most intense sun, they extend between 320 and 420 metres above sea level. Rather heterogeneous soils which, together with the different exposures and the high slope of the vineyards, force the winery technicians to make several passages during the harvest. The harvest, however, always takes place within the first three weeks of October. Fermentation at controlled temperature, the entire maceration process takes place in steel tanks and lasts for about two weeks, with automatic punching down and daily pumping over. Maturation in Slavonian oak barrels of medium capacity and, in part, in second and third passage barriques. All for a period of about 12 months. Blending and bottling follow. Ruby red in colour with good intensity, the nose reveals a fruity, fine and elegant bouquet where undergrowth fruit predominates, accompanied by hints of spices. In the mouth it confirms the fruity soul, with a right tannicity and a persistent aftertaste.

A quality wine that fully represents the characteristics of the Tuscan terroir and is distinguished by its aromatic complexity and balanced structure. This is, in a nutshell, the Chianti Classico DOCG Pagliarese Riserva of Félsina, a fine estate located in Castenuovo Berardenga, in the province of Siena, Tuscany. Its composition is mainly made up of Sangiovese, which alone accounts for about 90% of the blend. With it two 'minor' vines, Canaiolo and Mammolo, both at 5%. In this case, the vines grow on soils that are predominantly of sedimentary origin, characterised by clay and marl deposits. And it is precisely this particular soil composition that contributes to the typicality and quality of the wine. Vinification with temperature-controlled fermentation and then, after racking, the wine is transferred into medium-sized or large Slavonian oak barrels for a period of maturation lasting approximately one year. After this phase, the wine is bottled and left to mature in the cellar for a further 6 months. Chianti Classico Pagliarese Riserva in the glass has a brilliant ruby red colour. On the nose, one perceives aromas of ripe fruit, spices, notes of tobacco and black pepper. In the mouth, on the other hand, soft tannins and a light touch of acidity stand out, giving the wine a pleasant minerality. The finish is long and persistent. Good already today, this wine is not afraid to spend a few years in the cellar, even 10. On the table it goes well with meat dishes and in particular with the classic grilled steak.

It is called Pagliarese and it is a quality Chianti Classico DOCG. It is offered by the fine Sienese company Fèlsina, based in Castelnuovo Berardenga. We are in the heart of the Chianti Classico area, the most historic and vocated area. Here the wine tradition is ancient and Sangiovese is almost the only protagonist. It certainly is in the blend of this wine, which is composed of 90% Sangiovese. With it small parts of Canaiolo and Mammolo, which contribute to the complexity of the finished wine. Long controlled fermentation and maturation of the wine in medium/large Slavonian oak casks for a period of between 10 and 12 months. This is followed by bottling and the final passage to the cellar for a further 6 months, necessary to achieve the right degree of refinement. The result is a wine characterised by a beautiful ruby-red colour, with intense aromas of red and dark fruit, a delicate hint of undergrowth and an intense hint of sweet spices and tobacco. On the palate, however, it is pleasantly elegant, well supported by the right tannicity and a soft, lingering aftertaste. On the table it goes well with savoury dishes. Excellent - ça va sans dire - with the classic Fiorentina steak accompanied, as tradition would have it, by a side of beans and a splash of good oil.

The label reads Toscana IGT. But don't be misled. In fact Fontalloro is one of the most representative wines of the Fèlsina estate. 100% Sangiovese grapes from the vineyards in the upper part of the estate, in the Chianti Classico area, and partly from the Chianti Colli Senesi area, at altitudes between 330 and 400 metres above sea level. With a south-west exposure and different soils, partly rocky, partly calcareous and clayey or rich in sand, silt and marine sediments, Fontalloro has been produced continuously since 1983. Harvested by hand, at two different times, selecting only the best grapes, after crushing and destemming, fermentation begins at controlled temperature in steel tanks. Matured in new and first-passage French oak barriques, after about 18-22 months it is assembled and bottled. Then, before being put on sale, it rests in glass for at least another 8-12 months. Ruby red colour with good intensity, on the nose you can easily distinguish the typical notes of red and dark fruit, with accentuated sensations of tobacco and wet earth. In the mouth it reveals a good tannicity, with soft and pleasant tannins. Good consistency, structure and persistence. It is a wine born not to fear the passage of time. Excellent today, if well preserved, especially in the best vintages, it is able to mature slowly for many years.
