There are few grape varieties that represent the fascinating territory of Alto Adige better than Gewürztraminer. And this one from Elena Walch is certainly no exception. No artifice. No special oenological practices. The secret of this wine lies above all in the extraordinary convergence of a simply unrepeatable terroir. The grapes are harvested when they are perfectly ripe and brought to the cellar early, so that they can be processed with full respect for the original fruit. Before fermentation, the only special feature, the grapes are left to macerate for about 6 hours. Then we proceed with a careful but traditional vinification, in steel, at a controlled temperature. At the end of this phase, the wine matures for a few months on its lees before being bottled. This reveals a wine characterised by a beautiful bright yellow colour with golden highlights. The characteristics of the vine, which every good sommelier learns to recognise from the first months of study, are perfectly reflected in its bouquet. From notes of rose petals, to flowers, to spices. In the mouth, it is above all fine, with a fresh body and beautiful elegance. Excellent as an aperitif, it goes very well with spicy dishes, intense cheeses and preparations based on shellfish or grilled fish.

There is always a curious reason for the names Elena Walch gives her wines. In this case, too, the name Goldfinch, which by the way was the first wine from the Walch house and is still one of the best-loved, was not given by chance. It is said, in fact, that these little birds love to build their nests on the very Chardonnay vines that give life to this interesting mountain white. An important wine with character, this Chardonnay is the result of careful processing in the cellar. Part of the must is fermented and matured in French oak barriques for 5 months. And after racking at the end of fermentation, the wine remains on the lees for a long time. At least until the following spring, when it is finally assembled. Cardellino has a beautiful, intense straw yellow colour. The nose reveals a complex bouquet of fruity aromas, orange and lemon peel, notes of lime blossom, a mineral sensation and a spicy hint of tobacco. In the mouth, however, it surprises with its freshness and lively minerality. The finish is long, intense and soft. Excellent as an aperitif, it goes well with smoked salmon and savoury pasta dishes.

When the designation Alto Adige DOC is combined with the specific Pinot Noir, expectations are already high. When you then discover that this particular bottle comes from one of the region's iconic wineries, the legendary Elena Walch, expectations become even higher. And, fortunately, you are rarely disappointed. A pure Pinot Noir, this mountain red wine is the result of superbly careful vinification of the best grapes on the estate. It starts with a long contact with the skins for a period of at least 10 days, followed by a fermentation phase at controlled temperature, in steel, and the classic malolactic conversion. For the ageing phase, the mass is divided into two. Part matures in large 22-hectolitre oak casks, part matures in steel. The result is a fabulous wine with a brilliant ruby red colour, delicate aromas of red berries, cherries and raspberries, and a spicy note of white pepper in the background. It convinces on the palate with its firm structure and inviting savouriness. The tannins are delicate and it is easy to perceive a slight spicy aroma that leads to a fresh finish.

Das Geheimnis, wenn überhaupt, liegt in der beispiellosen Synergie, die zwischen der Frische der Böden in den Höhenlagen, die bis zu 900 Metern reichen, und denen der wärmeren Gebiete, die sich auf einer durchschnittlichen Höhe von 250 Metern befinden, entsteht. Das Ergebnis ist ein interessanter Weißwein, der sich durch eine brillante strohgelbe Farbe auszeichnet. Die Nase offenbart ein delikates Bouquet, das von fruchtigen Apfelnoten bis hin zu einem zarten Hauch von Kräutern reicht. Am Gaumen beeindruckt er jedoch mit eleganter Fülle, ausgeprägter Mineralität und lebendiger Säure, die zu einer anhaltenden Frische führt. Istrice was the first red wine produced by Elena Walch. The curious name is evocative of the "angularity" of the Cabernet Franc that was initially predominant (with a small proportion of Cabernet Sauvignon). The wine - as the winery well explains - showed "its thorns", just like the little hedgehogs in the park of the family winery. Today, the percentages in the Istrice blend have totally changed and Cabernet Sauvignon accounts for about 90% of the total. Today, the wine has gained in elegance and finesse and continues to be one of Walch's favourite red wines. Vineyards in the area of Tramin, in the province of Bolzano, at an altitude of around 900 metres above sea level, Istrice is fermented in stainless steel followed by malolactic fermentation in barrels. This is followed by a long 12-month maturation in French oak barriques and bottle ageing. Brilliant garnet red, it has intriguing spicy aromas reminiscent of red berries and cherries, combined with spices such as white pepper and chocolate. In the mouth it surprises for its great sapidity. The tannic structure is precise and elegant, with a fruity and spicy density and a persistent finish.

Ringberg Castle, built by the Habsburg dynasty in 1620, towers over Lake Kaltern and is surrounded by the undulating greenery of its vineyards. Kalterersee, i.e. Lake Kaltern, Classico, i.e. from the historic region of the appellation, and Superiore, i.e. a quality wine with a slightly higher alcohol content than the 'base'. All this is 'per se', Alto Adige DOC, offered here by Elena Walch. The base is one of South Tyrol's typical grape varieties, the schiava. With its conviviality, youthfulness and friendliness, it fully reflects its land. This vine, a pillar of mountain viticulture, is an integral part of the winery's history and a fundamental part of their identity. The wine has a fresh, ruby red colour. Its bouquet is elegant and fruity. It is reminiscent of black cherry, violet, white pepper and a hint of bitter chocolate. In the mouth, however, it is characterised by its delicate tannins and a fresh structure. This makes the wine easy to drink and pair. Particularly if the classic dishes of South Tyrolean cuisine, such as dumplings, barley soup, or speck, are on the table, but it is also very well suited, thanks to its pliability, to lightly flavoured starters and first courses or to white meats.
