We are in the far north of Spain, on the Atlantic coast. Grapes are harvested in the morning to preserve aromaticity and freshness as much as possible. There is no vine that is better suited to the sunny coasts of Vermento. From Sardinia to Tuscany, via Liguria, this interesting white grape variety likes to sink its roots just a few metres from the sea. Here we are in the sunny hills of Diano Marina, Liguria. It is here that Poggio dei Gorleri produces Vermentino Vigna Sorì, a DOC white wine with a beautiful personality. There is a big 'novelty' in the cellar. It is Nùali, a novelty in fact, Moscato Passito proposed by Siddùra. Moscato di Sardegna DOC Passito, this little Sardinian gem originates near the north coast of the island, on the hillsides overlooking the sea. Here the soils are predominantly sandy and the climate is naturally breezy. Simply ideal for raisining. Here, the Moscato reaches a great concentration of fruit, resulting in an extraordinary passito. Having reached the right degree of drying, the grapes are harvested by hand and brought to the cellar. Here, after destemming, a particularly sugar-rich must is obtained, which is separated and fermented for a long time in steel tanks. Maturation of the resulting wine, which is also very slow, takes place 'sur lies', i.e. in contact with the noble lees, to give it greater complexity and structure. A sweet wine that is already good today but which also shows considerable ageing potential. If well stored, in fact, this Nùali can easily evolve in the cellar for over 10 years. Golden yellow, the nose is surprising for the richness of its aromas. Ripe fruit, with hints of apricot, maracuja and orange peel. In the mouth, however, it is velvety and enveloping, with a pleasant aftertaste of white flowers and spices. What is most surprising, however, is its great freshness, minerality and taste-olfactory persistence. Excellent with small pastries or, for lovers of territorial pairings, with a sliver of good Sardinian Pecorino.

The DO Rías Baixas is probably the most striking in all of Spain. Certainly the most interesting one for white wine production. We are in the north of the country, in the Galicia region. Here, on the North Atlantic coast, where the climate is quite extreme, Albariño grapes are grown. The Marimorena is a good example of this. Pure vinification, in this case the vineyards average 20 years old and are located in the O Rosal subzone in Pontevedra, a few kilometers from the mouth of the Miño River. A super fresh and pleasant wine, in the glass it has a beautiful straw-yellow color with greenish reflections, brilliant. The nose gives fine satisfaction, thanks to aromas of medium intensity strongly dominated by notes of herbs, citrus and white fruits. Then peach, ripe apple, coconut and even pineapple. Guado al Tasso is the marvellous Bolgheri estate of Marchesi Antinori. Here, Sangiovese gives way, for once, to the great international grape varieties, originally from the Bordeaux area, namely Cabernet Sauvignon, Merlot, and Cabernet Franc. The particular climatic and soil conditions of the Tuscan coast, in fact, have proved to be particularly suitable for the production of wines produced in a "French" style and matured in small oak barrels. Guado al Tasso is the result of a careful selection, first in the vineyard and then in the cellar, of the grapes harvested at two different times. All this is to ensure that only perfectly ripe grapes reach the fermentation tanks. Each variety is vinified separately. Fermentation and maceration take place in temperature-controlled stainless steel tanks and, after racking, the wine is transferred directly into barriques, where malolactic fermentation takes place. Only in February of the year following the harvest are the best batches selected and blended into the final blend. At that point, the wine is transferred back into new French oak barriques where it continues to age until bottling. Guado al Tasso 2018 presents itself in the glass with a beautiful intense ruby red colour. The nose reveals attractive notes of sweet spices and small ripe dark fruits, liquorice root, leather and tobacco. In the mouth the quality of the tannins is very graceful: silky on the entry and vibrant on the finish. A wine characterised by great balance, pleasantness and harmony. Perfect with main courses of meat, it is a wine that is especially appreciated if the steak is cooked slowly on the grill.

Vineyards that are located in the historic and original area, smaller and more circumscribed than the entire Verdicchio dei Castelli di Jesi area. Wines from this area are usually considered to be of superior quality, thanks to the special soil and climate conditions that characterise the area. Brilliant straw yellow with fine greenish reflections, the nose has hints of green apple, almond, aromatic herbs and white flowers. In the mouth, however, the wine is fresh, with good acidity. The body is medium and it is easy to recognise the typical savoury and mineral note on the finish. On the table it goes well with seafood dishes. Lenaia di Fattoria Casa di Terra is a red wine, IGT Toscana, that represents the youth and exuberance of wines from the Tuscan coast. After all, its name, which derives from the ancient Greek festivals dedicated to the god Dionysus and wine, already evokes its lively and convivial nature. Lenaia is made from a blend of Malbec, Syrah and Petit Verdot grapes, which complement each other perfectly, resulting in a complex and harmonious wine. Specifically, the grapes come from vineyards located on the Tuscan Coast, between Cecina and Bolgheri, where the climate is warm and temperate, mitigated by constant sea breezes. Harvested by hand, the grapes are brought to the cellar at the optimal time of ripening, to best preserve their aromas and fragrances. Vinified in temperature-controlled stainless steel tanks, alcoholic fermentation lasts about 15 days and is carried out with indigenous yeasts to enhance the characteristics of the terroir. This is followed by spontaneous malolactic fermentation, which completes the wine ageing process. In the glass, Lenaia has a beautiful, intense and lively ruby red colour. On the nose, one perceives aromas of ripe red fruits, such as blackberry and plum, with spicy and floral notes. In the mouth, however, it is soft and enveloping, with velvety tannins and a lingering finish. Perfect to accompany aperitifs, traditional Tuscan hors d'oeuvres, fish with tomato sauces.

Sicily is not a simple island in the heart of the Mediterranean. It is a small continent in itself, with unique and inimitable climates and soils. From the flat coasts of Palermo to the mountains of the hinterland to the steep slopes of the volcano. And it is here, in Randazzo, that this interesting red wine is born. Etna DOC O' Scuru O' Scuru di Al-Cantìra comes from estate vineyards located 620 metres above sea level. Black soils, rich in minerals, the result of millennial eruptions of Europe's highest active volcano. This terroir gives the wines a solid structure, a vibrant freshness and a distinct mineral flavour. The base is Nerello Mascalese, a native Sicilian grape that has been perfectly adapted to Etna's volcanic soils for centuries. In this case, the grapes come from very old vineyards, over 80 years old. These ancient vines, thanks to their deep roots, give the wine complexity and depth. For its part, the Nerello is distinguished by its ability to express elegance and power, with silky tannins and an extraordinary capacity for ageing. After vinification, this red rests for 12 months in stainless steel tanks. Subsequently, the wine is transferred to large French oak barrels, where it matures for a further 12 months, acquiring structure and aromatic complexity. Finally, after bottling, the wine rests a further 12 months in the bottle, so that it can achieve the perfect balance between all its components. This long refinement, and the fabulous raw material, makes O' Scuru a long-lived wine, capable of evolving over time. Intense ruby red in colour with good consistency, the nose reveals a complex and enveloping bouquet, with hints of ripe wild berries, spices and a delicate hint of vanilla resulting from the long ageing in oak. In the mouth, it is warm, soft and fresh, with velvety, well-ripened tannins. Moreover, the savouriness of this wine, typical for Etna reds, balances well with the freshness and persistence of the finish. On the table it goes well with dishes of great structure. It is ideal with boiled and roast red meats, game and cheeses such as Nebrodi provola cheese.
