There is no grape variety more identifiable than Friuli. Even if its origins are not in our North East but in the Bordeaux region. We are talking about Sauvignon Blanc, a pleasantly aromatic grape variety, capable of giving life to white wines with a clearly distinguishable and therefore identifying olfactory profile. Castello di Spessa, in particular, processes it in purity to give life to this Friuli Isonzo Sauvignon DOC, produced from grapes grown in the vineyards of Cormons. After soft pressing of the grapes, fermentation takes place in temperature-controlled stainless steel tanks. Once the transformation phase is over, the wine continues its maturation in steel tanks, in contact with its noble lees. This slow maturation phase, designed to add complexity to the wine without distorting its fine aromatic framework, generally continues until March. Only then is the wine ready to go into the bottle and, after a few months, reach the shelves and consumers. Straw yellow colour with green reflections. The nose immediately reveals a wine characterised by a fine and elegant bouquet, with hints of apricot, tropical fruit and (the inevitable) tomato leaf. In the mouth, the correspondence is almost perfect. This reveals a pleasantly fresh and rich wine, characterised by a long finish. Excellent with fish of all kinds and risottos with a strong flavour, it is the right wine to accompany the classic Catalan lobster or a nice fish soup.

Ribolla gialla is a white grape variety indigenous to Friuli-Venezia Giulia. One of the best-loved regional varieties, it is undoubtedly among those most used to produce very interesting wines. Castello di Spessa offers it here in a very 'typical' version, produced from grapes harvested in an estate vineyard planted in 2000. In this case, the roots are in a soil known as Ponca, consisting of marl and sandstone. We are in Capriva del Friuli, in the Collio area. The harvest takes place in the second ten days of September, when the grapes have reached full ripeness. Once in the cellar, the grapes are immediately sent to a rapid transformation that begins with the fermentation phase in temperature-controlled stainless steel tanks. At the end of this process, the wine is then refined, again in stainless steel, in contact with its noble lees until March. This is followed by bottling and a further period of ageing in the cellar before final release. Straw yellow in colour, the nose expresses citrus and floral scents. In the mouth, however, it immediately reveals great freshness with a long, creamy finish. It goes well with light appetisers, fresh cheese, sliced meats and raw vegetables. Also ideal with seafood dishes and delicate fish preparations. Excellent with omelettes.

Summer has now passed when, in the vineyards of Cormons, in the province of Gorizia, the technicians of the Castello di Spessa winery begin to assess the degree of ripeness of the Cabernet. Typically, in fact, the variety typical of the Bordeaux region, here in Friuli, ripens around October. 100% Cabernet Sauvignon, this Friuli DOC is an excellent red for the whole meal, designed to make the most of the varietal's characteristics. In the winery, it starts with a fermentation phase in stainless steel at a controlled temperature. Then, after racking and malolactic fermentation (again in steel tanks), we continue with a slow ageing in barrels for no less than 12 months. Only then is the wine ready to meet the bottle. Intense ruby colour, the nose has clear notes of ripe red fruit and sweet spices. On the palate, however, it enters warm and soft, with fruity notes of plums and small red fruits under spirits. Warm spicy notes of vanilla and hints of cinnamon complete the picture. The finish is long, broad and soft. This wine is perfect with first courses with game sauces, but also with stewed meats and cured meats. For cheese lovers, this Cabernet also has the right stuff to hold its own with well-aged products.

Let's start with the vineyard, planted in 2006. We are in Cormons, in the heart of productive Friuli. Here Castello di Spessa cultivates the Ribolla Gialla grapes used to produce this fresh, fragrant sparkling wine made with the traditional Charmat Method. Harvesting begins in the last ten days of August, when the Ribolla has already had a chance to develop aromas and fragrances, without losing freshness and natural acidity. Delivered to the winery, the grapes are pressed in a soft process to preserve the integrity of the skins. Before fermentation, the must obtained is then cold decanted to remove any impurities. Alcoholic fermentation takes place at a controlled temperature, after which the wine is racked off and left to mature on its fine lees until March, when it is finally placed in an autoclave to begin the delicate frothing phase. Pale straw yellow in colour with fine and persistent perlage, this sparkling wine reveals delicate notes of hawthorn and white peaches on the nose. On the palate, however, it is super fresh and delicate, with an absolutely remarkable aromatic length. Excellent as an aperitif (one bottle will certainly not be enough), it proves to be a perfect wine for the whole meal. Excellent, in particular, with raw fish, fried fish and risottos. It is also perfect with a fresh summer snack of mozzarella or sheep's milk ricotta.

There are few grape varieties that are able to meet with transversal acclaim, both from experts and professionals in the sector and from simple enthusiasts. Among these is undoubtedly Pinot Grigio, the symbolic variety of our North East. Especially when, as in this case, it is a truly well-made product, produced by an important entity such as Castello di Spessa, from grapes harvested in estate vineyards that are now over 30 years old. We are in the municipality of Cormons and here the harvest begins at the end of August. The carefully selected grapes are soon taken to the winery for processing. After a soft pressing, the bunches are placed in a steel tank to begin the fermentation phase at a controlled temperature. At the end of this process, the wine matures, again in steel, in contact with the noble lees until at least March. Straw yellow with greenish highlights, on the nose this Pinot Grigio, DOC Friuli Isonzo, offers notes of ripe fruit and acacia flowers. In the mouth, however, it is dry and fresh, characterised by a beautiful persistence that prolongs the pleasure of each sip for several minutes. If you bring it to the table at a nice dinner with friends, make sure you have at least two bottles ready in the fridge. It won't last long, especially if the menu is all fish, with a tasty fritter or a first course of spaghetti allo scoglio. It is also good with white meats and vegetable soups.

Sometimes unjustly regarded as a 'younger brother' of the more noble Pinot Noir, Pinot Bianco is actually a grape variety capable of producing extremely fine and elegant wines. Widely cultivated in many wine regions of the world, such as Alsace and Burgundy, in Italy it is at home in Alto Adige, Trentino and Friuli. The one proposed here by Castello di Spessa is a fine example. It is called Santarosa, Collio DOC, and is made from pure Pinot Bianco grapes grown in the Capriva del Friuli area. Harvested in early September, the grapes are soon brought to the cellar to begin processing. Fermented in temperature-controlled stainless steel tanks, the wine is then matured partly in barriques and partly in steel, always in contact with its noble lees, until at least March. Only then is the mass brought together and the wine is finally bottled. Straw yellow in colour with golden notes, the nose is broad and intense with tropical and bread crust notes. On the palate, it is extremely refined, with notes reminiscent of yeast, pear and acacia flowers. Soft and velvety, it has an excellent persistence. It is the ideal wine with fish starters, fish risottos or vegetable soups.

In the mouth, it is broad, fresh and vertical. A perfect example of Friulian Sauvignon, excellent with shellfish, risottos and with tasty fish.
