Trepat is a grape variety originating in the Spanish region of Catalonia, and more specifically in the Conca de Barberì area in the province of Tarragona. Its name is believed to derive from the Catalan word 'trépate', meaning to climb or climb, in reference to the particular bearing of the ripe bunches on the plant. A red grape variety, it is mainly used to produce dry red wines. In this case, however, Casa Rojo uses it as the basis for a Cava sparkling wine. It starts with a manual harvest in the first week of September, when the grapes have reached an optimal degree of ripeness. In the cellar, there is a quick 2-hour maceration on the skins, which allows sufficient extraction of aromas and colour. This is followed by soft pressing and fermentation, carried out in this case in stainless steel tanks at a low temperature. Secondary fermentation takes place in the bottle, according to the Metodo Classico. Pale pink colour with brilliant golden reflections, the bubble is delicate and small. Aromas of good intensity, with aromas of small red fruits combined with citrus fruits, butter and delicate pastry notes. On the palate it is fruity and creamy, with hints of liquorice and a good acidity that gives it a fresh and persistent finish. The black sheep of bubbles! Limited production.
