From Maison Bollinger, this Special Cuvée is probably one of the most representative wines. This cuvée is the result of a skillful and delicate blending between a small proportion of vintage wine and a majority of reserve wines, including those aged in bottles for more than 15 years on the winery premises. Once the cuvée is created, the wine matures for no less than three years on the lees before being degorged with the addition of the liqueur d'expédition, in this case made from the same wines used in the blend, to maintain the most absolute stylistic consistency. A curiosity. As is often the case, dégorgement is mechanized. In Bollinger's case, however, an innovative machine is used that injects an inert gas inside the bottles as they are uncorked, preventing oxygen from penetrating and allowing a very low amount of sulfur dioxide to be used. In the glass, you discover a wine characterized by a beautiful golden yellow color, with fine, uninterrupted bubbles. Notes of ripe fruit, spices and candied apples are clearly discernible on the nose. Then biscuit and pastry notes. In the mouth it is immediately recognizable. Creamy and perfectly balanced by fresh acidity, it evokes notes of ripe fruit, such as pear, brioche and slightly spicy spices. Balanced between structure, power and liveliness. A decidedly gastronomic Champagne, it is difficult to put it on the table. From Parmesan to aged Pata Negra. From shellfish to sushi and sashimi, this wine always knows how to impress.
