It is called Cuvée Blck Brut, Blanc de Noirs from the house of Alain Mercier. Its bottle, with its modern, black label, certainly does not go unnoticed. It is an elegant champagne made from 100% Pinot Noir grapes from the highest hills of Passy sur Marne. An enigmatic and profound expression of Pinot Noir, this Blanc de Noirs offers a fresh and fascinating interpretation of this precious grape. Champagne SA, i.e. without vintage, the nose presents a powerful and ripe profile, with notes of quince, mirabelle plum and apricot. As it opens, then, aromas of liquorice, toast and candied fruit emerge. On the palate, however, it is frank and pleasant, with clear hints of yellow fruit. Its structure is balanced and the finish is long and generous. The Blck lends itself well to various pairings. A wine suitable for the whole meal, it accompanies fish and shellfish dishes as well as white meats.

An interesting Champagne. We are talking about the Blanc de Blancs Cuvée Holo Brut produced by Alain Mercier in Passy-sur-Marne. 100% Chardonnay grapes, cultivated according to a reasoned culture method and harvested by hand. During vinification of the bases, the wines also undergo malolactic fermentation. Maturation of the wine in the bottle in contact with its yeasts guarantees the finished wine a good complexity. The Cuvée Holo presents itself in the glass with a beautiful straw-yellow colour, perfectly brilliant. In the glass, it is easy to admire the lively effervescence that gives rise to a persistent foam on the surface. On the nose, it reveals a fine and elegant profile, with discreet floral notes preceding aromas of menthol and herbs. Complex, ripe notes of liquorice and chocolate also emerge. On the palate, the Blanc de Blancs Cuvée Holo Brut reveals a well-balanced taste, with a generously long finish reminiscent of brioche and citrus notes. A wine of great elegance, it is characterised by a perfect balance between acidity and smoothness, perfect to be enjoyed on its own or in combination with delicate fish or shellfish dishes.

The pleasure of discovery also comes through encounters with bottles like this one. Cuvée Néon Brut from Alain Mercier is a pure Pinot Meunier. A Blanc de Noir, then, made from the other Pinot, the lesser-known Pinot Noir but also less capricious and still capable of producing wines of great pleasure. This, in particular, is Mercier's flagship wine, what is generally considered the most effective calling card to illustrate the style of the house. In the glass, this Néon has a reassuring light golden color. The nose reveals itself to be fine, characterized by tones of white, slightly candied fruit, such as apple and pear, accompanied by notes of honey. In the glass, after being in contact with oxygen for a few minutes, aromas of pastry and roasted hazelnuts are revealed. In the mouth it is blunt, perfectly balanced between roundness and vivacity. A pleasantly gastronomic wine, it goes well with seafood, shellfish and coquillage. But if instead of fish, a meaty main course is served, the makings of the best accompaniment are certainly not lacking.

It is called Sagacité, literally "sagacity." And wise, in the sense of intelligent, this Alain Mercier-branded Brut really is. It is a blend of Pinot Meunier for 40%, Pinot Noir in the same percentage and Chardonnay to close with 20%. Just enough to give some elegance and finesse to the region's two great black grape varieties. Cuvée Brut Sagacité dazzles in the glass with its beautiful pale yellow color and perfect brilliance, accompanied by a lively and persistent effervescence. The nose then develops fresh fruit notes, with citrus, peach and pear above all, followed by vegetal hints of boxwood and broom. In the mouth, however, it proves to be a round, powerful and surprisingly fruity Champagne. The texture is good but not excessive and the finish definitely refreshing. Ideal as an aperitif, this Champagne surprises with a smooth, creamy sip, so much so that it can easily follow diners around the table as well. Moderate residual sugar makes it lean and dynamic. Really enjoyable, glass after glass. Beware, however, one bottle is hardly enough!
