The base blend consists of Calabrese, better known as Nero d'Avola, and undoubtedly the Sicilian native grape variety par excellence, Alicante and Nocera. We are talking about one of Hauner's most representative wines, the Hierì Rosso, IGP Terre Siciliane. A red of good character and territoriality, this wine is the result of super careful processing of grapes harvested by hand at the right degree of ripeness. In the winery, vinification begins with a long maceration on the skins, followed by fermentation and ageing in temperature-controlled steel tanks. After bottling, the wine then rests in the cellar for at least 4 months before taking its way to the market. In the glass it has a beautiful intense ruby colour with purple reflections. The nose is rich in aromas, characterised by excellent intensity and elegant notes. Red fruits, a delicate sweet spiciness of tobacco and cocoa to almost clay-like notes. In the mouth, it is broad and velvety. Gritty, with lovely sweet tannins, the right savouriness and a good alcohol content. A wine that clearly manifests 'all the sunshine that only the island of Vulcano can express'. On the table it calls for slightly spicy dishes. For those who want to experiment with a territorial and unconventional combination, fresh tuna with caper sauce is simply "the death of it"!

Beginnen wir mit dem Aussehen, einfach und elegant. Mit einem schönen Etikett, das mit den Farben des sizilianischen Meeres verziert ist. Es handelt sich um einen Salina Bianco, IGP aus Inzolia und Catarratto, der in diesem Fall von einem der bekanntesten Weingüter der Region angeboten wird. Hauner erntet seine Trauben Mitte September, nachdem die Trauben den ganzen Sommer über mit Aromen und Düften angereichert worden sind. Im Weinkeller beginnt die Weinbereitung mit dem Keltern und dem sofortigen Ablassen des Mostes, der dann in Edelstahltanks vergoren wird. Am Ende der Umwandlung wird der Wein sofort in Flaschen abgefüllt, um eine kurze, etwa dreimonatige Verfeinerung im Glas zu erfahren. Von intensiver strohgelber Farbe mit leuchtenden, transparenten antiken Goldtönen, zeigt er im Glas eine gute Konsistenz. In der Nase verblüfft er mit deutlichen Anklängen an mediterrane Macchia, dann mit fruchtigen Noten von Zitrusfrüchten und exotischen Früchten. Ein Bouquet, das sich durch große Finesse auszeichnet. Im Mund ist er frisch und unmittelbar, mit guter Persistenz und großem Geschmack. Gekühlt serviert, zwischen 8 und 10 Grad, passt er gut zu Fischvorspeisen, Nudelgerichten mit Gemüse und Meeresfrüchte-Risotto. Hervorragend auch zu frischem Weichkäse.

Fans of sweet wines, step up. This surprising bottle is just right for you. The one on offer here is Hauner's renowned Malvasia delle Lipari DOC passita, a legend of Sicilian winemaking. Malvasia delle Lipari 95% and Corinto Nero 5%, the grapes are harvested by hand after the start of a slow drying phase on the vine. The healthiest bunches are then placed on 'Cannizzi' under the Sicilian sun for about 15 to 20 days, waiting for the water contained in the grapes to evaporate naturally, leading to a concentration of sugars and aromas. Only then are the grapes ready for the subsequent vinification. An initial skin contact is made, followed by traditional vinification at a controlled temperature. At the end of the transformation, the wine is stored in temperature-controlled steel tanks until bottling. At that point, the wine rests for a further 6 months in the bottle, before being put on the market. In the glass it appears a beautiful amber colour, with vivid highlights. Brilliant and transparent, it reveals an excellent consistency, with tight bows. The nose is imposing and graceful at the same time. Broad and very fine, with fruity hints of dried figs, dates and ripe apricots. Then honey and sweet spices. In the mouth, however, it reveals a velvety softness. Sweet but never cloying, it is well balanced thanks also to the great savouriness. Excellent with almond paste desserts, Sicilian cassata and small pastries. Try it also with spicy pecorino cheese and orange honey.

It is called Iancura and it is a Terre Siciliane IGP, proposed here by the Hauner winery, one of the most famous wineries on the island of Salina. We are in the heart of the most beautiful and uncontaminated Sicily. Here, since the 1960s, Carlo Hauner has been a leading figure in the island's viticulture, one of the best known interpreters of the Malvasia delle Lipari grape variety, present here in a percentage of 90%, vinified dry, and completed by 10% Inzolia. Harvested strictly by hand at the end of August, the grapes are protected from the island's extreme heat and brought to the cellar within a few hours. Here they are crushed and the must is immediately drained off. Fermented and matured in stainless steel tanks, this fine Sicilian white matures in the bottle for a period of about 3 months before release. Pale straw yellow in colour with greenish highlights, the nose reveals fruity notes of peach, iodine and mineral notes, then vegetable notes of celery and sage. And more fruit, with kiwi and melon, plus balsamic hints on the finish. The palate is finely acidic, with honeyed sweet notes and brief briny olive hints. The finish is fluid and caramel-like, still delicately saline and fruity. A decidedly versatile wine, it goes well with savoury pasta dishes, for example dressed with sardines, but also with simple (and tasty) bruschette of land and sea, fresh cheeses and even raw fish.

On the label, the simple (but elegant) Hauner company logo immediately stands out. This alone could be sufficient guarantee of quality and tradition. The one offered here, in particular, is one of the good red wines produced by the winery. The Salina Rosso, to be precise. Salina IGP, this wine comes from a blend of two 100% Sicilian grapes. We are talking about Nero d'Avola and Nerello Mascalese. Vineyards are espalier-trained and harvested by hand when the bunches have reached perfect aromatic and phenolic ripeness. In the winery, vinification begins with a phase of maceration of the must on the skins, followed by fermentation, in thermo-regulated steel tanks, and a brief three-month bottle ageing. That's it, no artifice. Just great quality and absolute precision in every step. The result is a wine characterised by a beautiful ruby red colour with clear violet notes. A red of good consistency, when swirled in the goblet it forms tight bows and heavy tears that highlight the good structure of this wine. The nose reveals broad, well-marked aromas, particularly of "sour cherries and blackberries", then some spicy notes of vanilla and liquorice, hints of roasting and carob. In the mouth, it is pleasantly dry and warm. Well balanced, with nice ripe tannins. Intense and persistent, it leaves an enveloping softness in the mouth. A red wine with good character, it requires pairings with richly flavoured and spicy foods. Red meats, mature cheeses and first courses with sauces and meat sauces.

If Hauner is Hauner, that is to say, if for over 50 years his name has been one of the most respected in Sicily, it is because of his ability to work the most typical Aeolian grape variety, Malvasia delle Lipari, with absolute mastery. Here proposed in the DOC 'natural' version, thus with an alcohol content of 12.5 degrees. In the Hauner winery's interpretation, Malvasia delle Lipari is supported by a small percentage, around 5%, of Corinto Nero, a black grape variety native to Sicily but, as its name suggests, originating in Greece. Harvesting, rigorously manual in order to select only the best and faultless bunches, is late. When the grapes have lost some of their water content and the sugar has concentrated along with the most typical aromas of the variety. In the cellar, vinification begins with skin contact, to add complexity to the must, which is then sent to the temperature-controlled fermentation phase. This is followed by a maturation phase, or ageing, in temperature-controlled tanks, lasting about 8 months, followed by a further 6 after bottling. Only at the end of this long wait is the wine ready to be uncorked and appreciated in all its facets. Beautiful golden colour, crystal clear and luminous, in the glass it reveals an excellent consistency. The nose reveals itself to be rich, broad and aromatic, with notes ranging from ripe fresh fruit, such as apricot, figs and medlars, to hints of lavender and thyme, with a light almond finish that gives it great finesse. In the mouth it is sweet and immediate, with savouriness and freshness. Warm and enveloping, it enjoys a long persistence. Excellent with spoon desserts, it also accompanies blue and spicy cheeses with pleasure.
