Ca' del Bosco's Cuvée Prestige Rosé comes from the separate vinification of 80 per cent Pinot Noir and 20 per cent Chardonnay grapes. All grapes are hand-picked in small crates, graded and chilled. Each bunch is selected by expert eyes and hands, and then benefits from the special bunch washing system developed by the Franciacorta winery. The Pinot Noir grapes, once transported over the vat, are separated from the stalks and the berries are dropped into them by gravity. Thus begins the 'pink' maceration phase lasting 24-36 hours, to obtain that particular shade of colour that distinguishes this Franciacorta DOCG. Then the must, separated from the skins, ferments in small barrels and steel vats at a controlled temperature. The Chardonnay grapes, on the other hand, are vinified in the traditional way, with pressing of the whole bunches and only the best fractions of must are then fermented in vats. After 7 months of ageing, the cuvée is created by blending the Pinot Noir and Chardonnay wines. This is bottled and matured on the lees, at a constant temperature of 12°C, for an average period of 30 months. Dégorgement takes place in the absence of oxygen, using a unique system, invented and patented by Ca' del Bosco. This avoids oxidative shocks, further additions of sulphites and makes its Franciacorta wines purer, and more long-lived. Cuvée Prestige Rosé Edition 46 is distinguished by its salmon-pink colour, delicate yet brilliant, with golden reflections and a fine, elegant effervescence. The nose reveals a rich and seductive bouquet, with aromas of red fruits such as strawberries, raspberry and cherry, accompanied by floral notes of rose and peony. This is followed by nuances of citrus fruits and a light roastiness that provides intriguing complexity. In the mouth, it is fresh and lively. The acidity is well balanced and contributes to a pleasant and refreshing drink. Ripe red fruit flavours intertwine with notes of bread crust and a hint of spice, ensuring a long and pleasantly persistent finish that leaves an elegant and harmonious memory.

Selva della Tesa 2019 from Ca' del Bosco represents excellence in the production of Chardonnay, the result of a viticultural season with a unique character. The 2019 vintage was marked by a mild winter with little rainfall, anticipating spring and leading to a marked change in climate with significant rainfall until mid-May, negatively affecting flowering. These conditions generated smaller, scattered bunches, with a yield per hectare limited to 6,000 kg of grapes. The dry weather in June, one of the driest in the last twenty years, followed by a saving August with opportune rainfall, allowed the grapes to ripen well, with harvesting beginning on 27 August. This vintage stands out for its limited production but high quality, with a wine yield of 57%, a symbol of Ca' del Bosco's commitment to the pursuit of perfection. If Ca' del Bosco can be considered the very symbol of Franciacorta, much of the credit goes to its best-known label, the legendary Cuvée Prestige Extra Brut. Appreciated across the board by enthusiasts and professionals alike, this Franciacorta DOCG comes from a careful selection in the countryside of the best Chardonnay grapes, in clear predominance, with an addition of Pinot Noir and just a touch of Pinot Blanc. The grapes are vinified separately and the alcoholic fermentation takes place in temperature-controlled steel tanks, where the wines remain until the following March. The vintage wines are then blended with the reserve wines from the best vintages, and the bottling and delicate frothing process takes place. Maturation lasts for around 25 months, after which the wine is disgorged, which in this case takes place in the absence of oxygen, thanks to a unique system invented and patented by Ca' del Bosco. At that point, each bottle is uniquely marked to ensure complete traceability. To the eye, this Franciacorta has a prestigious, luminous straw yellow colour, furrowed by fine, persistent bubbles. On the nose it delicately and progressively releases timid and fragrant hints of citrus, apple, white peach and exotic fruit. All this is enhanced by memories of pastries and dried fruit. The taste, lively and darting, invites the drink by virtue of its irresistible freshness, vibrant and well dosed. The finish is pleasant and fruity.
