It is proposed by Brimoncourt, a prestigious Champagne Maison. And it is a Blanc de Blancs Brut, i.e. a white sparkling wine, obtained from the processing of only white grapes, 'non-vintage', i.e. without indication of the vintage on the label. The grapes, 100% Chardonnay, come from the village of Aÿ-Champagne, one of the most renowned in the region for the production of this vine. Its processing is simple and traditional. After harvesting, strictly by hand, the grapes are vinified in stainless steel vats. The resulting bases, with the addition of reserve wines from previous harvests, are bottled and left to mature on the lees for around 48 months. At the end of this phase, disgorging is carried out and the subsequent dosage with 7 grams of sugar per litre. The result is an interesting Champagne characterised by a beautiful silver-yellow colour with straw-coloured reflections and a fine, uninterrupted trickle of fine bubbles rising slowly from the bottom of the glass towards the surface. This delicate movement allows the finest aromas to reach the nose immediately, revealing an attractive and fragrant bouquet, with notes of mirabelle plum and mandarin, candied apple and pastries. In the mouth, on the other hand, the sip is lively and well-balanced, with a fine structure and a pleasantly fruity finish reminiscent of Williams pear.
