Take a generous portion of Glera grapes. Add a little red-wine Pinot Noir. Mix it all together and start a long sparkling phase in autoclave. This is the recipe for the surprising Prosecco DOC Rosé, the most awaited novelty of 2021. The one proposed here by Cantina del Soligo is a vintage version, that is, produced only with grapes harvested during the 2020 harvest, with 10% of Pinot Noir used in the blend. In accordance with regulations, the slow fermentation in autoclave lasts for at least 60 days, giving the wine time to reach the right stability of colour and aromatic complexity. Soft pink, bright and elegant, a multitude of bubbles create its elegant and long-lasting perlage. Fruity notes emerge on the nose, with a touch of berries and tropical fruit, then floral, with hints of roses and violets. In the mouth it is fresh, soft, with an intense and persistent floral aftertaste and hints of wild strawberry and violet. Surprising as an aperitif, excellent when paired with fish, seafood or delicate meat and cheese dishes.

Gutturnio Superiore DOC La Barbona is one of those wines that have the defect of creating a sort of addiction. When you try it, with the right accompaniment of Emilian delicacies, you cannot help but be enchanted. 55% Barbera and 45% Bonarda, after the pressing follows a maceration phase of about 2 weeks with daily pumping. Fermentation at controlled temperature and with selected yeasts, then ageing in barriques for a first and second passage for about 14 months. The result is a full-bodied wine, with character, where fruit alternates with more complex notes such as liquorice, chocolate and leather. A beautiful deep and intense ruby red colour. In the mouth it is powerful, but balanced. Good alcoholic thrust and sweet tannins.

Fans of sweet wines, step up. This surprising bottle is just right for you. The one on offer here is Hauner's renowned Malvasia delle Lipari DOC passita, a legend of Sicilian winemaking. Malvasia delle Lipari 95% and Corinto Nero 5%, the grapes are harvested by hand after the start of a slow drying phase on the vine. The healthiest bunches are then placed on 'Cannizzi' under the Sicilian sun for about 15 to 20 days, waiting for the water contained in the grapes to evaporate naturally, leading to a concentration of sugars and aromas. Only then are the grapes ready for the subsequent vinification. An initial skin contact is made, followed by traditional vinification at a controlled temperature. At the end of the transformation, the wine is stored in temperature-controlled steel tanks until bottling. At that point, the wine rests for a further 6 months in the bottle, before being put on the market. In the glass it appears a beautiful amber colour, with vivid highlights. Brilliant and transparent, it reveals an excellent consistency, with tight bows. The nose is imposing and graceful at the same time. Broad and very fine, with fruity hints of dried figs, dates and ripe apricots. Then honey and sweet spices. In the mouth, however, it reveals a velvety softness. Sweet but never cloying, it is well balanced thanks also to the great savouriness. Excellent with almond paste desserts, Sicilian cassata and small pastries. Try it also with spicy pecorino cheese and orange honey.
