The one proposed here is the purest and most surprising version of Franciacorta DOCG. We are talking, in fact, about a Brut Nature, to which no sugar is added to make it softer and more pleasant. But let us proceed with order. It is born in the heart of Franciacorta, in Provaglio d'Iseo. This Franciacorta DOCG Brut Nature is made entirely from Chardonnay grapes that have their roots in the beautiful hills shaped by glaciers over the millennia. The soils here are moraine and rich in minerals, ideal for growing vines. The southern exposure of the vineyards also guarantees excellent ripeness of the grapes, which are thus able to bring freshness and minerality to the wine. The grapes, harvested at the right degree of ripeness, are pressed and the must obtained ferments in steel vats. Then, after careful blending, the base wine is bottled with the addition of yeasts and sugars to start the frothing process. This is followed by a long maturation on the lees for at least 20 months, during which the wine develops its complex aromatic notes and fine perlage. At the end of this phase, the wine is disgorged and re-tapped without any dosage, i.e. without the addition of liqueur d'expédition. The result ‘ To the eye, it has a luminous golden yellow colour, enhanced by a persistent perlage. On the nose, the bouquet is intense and complex, with notes of elderflower, rosemary and thyme, complemented by fruity nuances of gooseberry, nectarine and lime. A delicate nuance of yeast finally adds depth to the aromatic profile. In the mouth, freshness is the protagonist, flanked by a good savouriness that gives the wine great minerality. This Franciacorta DOCG Brut Nature is the wine to uncork for a refined aperitif. Excellent with delicate fish and white meats.

In addition to the so-called frothing, therefore, Champagne is greatly enriched precisely because of the slow release of aromatic substances by the yeasts. Last special feature. In the cuvée, that is, in the blending of the base wines to produce Champagne, in this case the producer also adds 15 percent of reserve wines, that is, wines produced from previous vintages. Legend has it that the inspiration for the creation of this wine came suddenly one summer evening. It came from a particular bottle of Champagne. Vineyards are properly exposed to the south, with plants of an average age of 35 years. The soil here is typically clayey-chalky, with a good presence of limestone and sand. Harvested by hand in September, the base wine is vinified in temperature-controlled stainless steel tanks. In this case, most of the bases, about 88% of the wines produced, undergo malolactic fermentation, while about 4% of the bases are vinified in wooden barrels. In this case, maturation in the bottle continues for a good 10 years, always in contact with its own yeasts, in the dark, in a horizontal position. A precious little jewel, produced in only 2,000 bottles. In the glass it has a beautiful golden yellow colour, with a very fine, uninterrupted perlage. The nose is characterised by rich notes of dried fruit and yellow berries, such as apple and peach, with citrus notes and light floral hints. On the finish, there are pleasant notes of yeast, almonds and brandy. In the mouth, it is fresh and elegant, with fruity notes of apple and ripe peach, followed by hints of citrus and dried fruit. As the seconds pass, light floral, jasmine and yeast hints also emerge. Balanced and persistent, this is a Champagne for true enthusiasts. Without compromise or sugar to soften the drink, this Champagne is perfect for an elegant fish dinner. Excellent with oysters and lobster. When it takes... it takes!

Pale in color, with a fun and playful bubble, this Cava plays all on verticality. It is, in fact, a pleasantly citrusy sparkling wine with immediate hints of fresh fruit, pear, apricot and peach. As the minutes pass, and with oxygenation, it gains more intensity and sweeter notes reminiscent of tropical fruits, such as pineapple and mango, also make their appearance. In the mouth, same vertical feel, with herbaceous notes and some hints of yeast. The finish, then, is very refreshing and not overly persistent. It is a great alternative, for those who do not want to limit themselves to "made in Italy" drinking. Trepat is a grape variety originating in the Spanish region of Catalonia, and more specifically in the Conca de Barberì area in the province of Tarragona. Its name is believed to derive from the Catalan word 'trépate', meaning to climb or climb, in reference to the particular bearing of the ripe bunches on the plant. A red grape variety, it is mainly used to produce dry red wines. In this case, however, Casa Rojo uses it as the basis for a Cava sparkling wine. It starts with a manual harvest in the first week of September, when the grapes have reached an optimal degree of ripeness. In the cellar, there is a quick 2-hour maceration on the skins, which allows sufficient extraction of aromas and colour. This is followed by soft pressing and fermentation, carried out in this case in stainless steel tanks at a low temperature. Secondary fermentation takes place in the bottle, according to the Metodo Classico. Pale pink colour with brilliant golden reflections, the bubble is delicate and small. Aromas of good intensity, with aromas of small red fruits combined with citrus fruits, butter and delicate pastry notes. On the palate it is fruity and creamy, with hints of liquorice and a good acidity that gives it a fresh and persistent finish. The black sheep of bubbles! Limited production.

Specifically, it is Franciacorta DOCG 'Coupé', a Brut Nature, produced from a large majority of Chardonnay, almost 95%, to which is added a small percentage of Pinot Noir. The grapes come from 15 crus, spread over the 70 hectares of vineyards in the Franciacorta region. The base Cuvée is made up of around 87% wines from the last vintage and 13% reserve wines. After harvesting, which is done manually in boxes, the grapes are taken to the cellar for soft pressing, with selection of the best part of the bunches, with an overall yield of no more than 55%. Each cru is vinified in purity. Then the bases are partly refined in steel vats and partly in oak barrels. After creation of the cuvée and bottling, the wine rests in the bottle for more than 24 months. Straw yellow, luminous and with lime peel reflections, the Coupé reveals a suave bouquet on the nose, with hints of elderflower and white peach. In the glass it is constantly evolving, with vegetal and marine touches that with time lead back to notes of fresh almonds. In the mouth, the contrast between the creaminess and balance of the perlage is surprising. The finish is savoury and balsamic. The perfect aperitif, this non-dosed Franciacorta DOCG is also ideal with cured meats and cheeses, but especially with sushi, sashimi and seafood.

Only the best Chardonnay from the vineyards in Zell, a hamlet of Trento located 500 metres above sea level, is used as the sparkling wine base for this refined TrentoDOC Brut Nature. These are particularly scenic vineyards, laid out in a gyropole pattern, with plants of an average age of 15 years. We are located on a large natural terrace facing south towards the Adige Valley. Vinified in stainless steel at a controlled temperature, the base wines rest in the cellar until March, when they are tasted to create the cuvée destined for drawing. Zell Nature remains on the lees for at least 30/36 months before remuage and subsequent dégorgement. The result is a wine characterised by a beautiful intense straw yellow colour, with abundant white foam and a fine and persistent perlage. The special feature of this classic method is that during maturation the bottles are not corked with the classic crown cork but with cork.
