Maria Rigol Ordi specializes in producing excellent organic Cava sparkling wines. All super-dry bubbles, with very low dosages, when not at all (as in this case) and respectful of tradition. Cava "Mil-Lenni" Reserva Brut Nature, comes from processing the classic triad of grapes typical of the region, Xarel-lo, Macabeo and Parellada, to which a small percentage of Chardonnay is added. The special feature of this classic method is that during maturation the bottles are not corked with the classic crown cork but with cork. This limited contact between wine and wood, prolonged for more than two years (although often up to 36 months), gives the wine greater complexity and a unique pleasantness. Pale yellow with greenish hues, the nose reveals an elegant and fine bouquet, with distinct hints of Golden apple and peach. Then citrus, lime zest, and the typical recall to baked goods, such as cookie, and butter. In the mouth it is fresh, with creamy, fine bubbles. Good acidity and dry finish. Modernity and elegance for a pleasantly gastronomic bubbly. Excellent with raw fish and shellfish, on the table it has enough stuff to hold its own with flavorful white meat dishes as well.

Ideal as an aperitif, on the table it goes well with seafood, shellfish and fresh cheeses.

Alta Langa DOCG Pas Dosé di Belcolle is a classic method sparkling wine born from the desire to pay homage to the splendid landscape of the Alta Langa. Produced from Pinot Noir (95%) and Chardonnay (5%) grapes, this bubble represents the excellence of wine production in this area. The grapes are harvested by hand and gently pressed. This is followed by fermentation partly in steel and partly in new French oak tonneaux. In the spring following blending, the wine is drawn off. The wine matures in the bottle for at least 48 months at a constant temperature. The final dosage is carried out without the addition of sugar. In the glass it has a beautiful, brilliant straw yellow colour and a fine, persistent perlage. The nose reveals intense floral and fruity aromas, with notes of hawthorn, broom, green apple and citrus fruits. On the palate, however, it is crisp, vertical, very typical, elegant and powerful. The freshness and minerality are perfectly balanced with the wine's structure and complexity. Perfect as an aperitif, it goes well with shellfish, molluscs or seafood pasta. Without wanting to be patriots at all costs, why do you have to go all the way to France to find a pleasant and well-made Pinot Noir-based bubbly ‘ Sometimes, in order not to be disappointed, one only has to 'fly' 'across the Po', to the province of Pavia, where Pinot Noir seems to be more than at home. And where a 'good' bottle does not cost an arm and a leg. Just like this Oltrenero Brut Nature, 100% Pinot Noir, 48 months on the lees. Dry, very dry. But super pleasant. Pale straw yellow in colour, with slight golden reflections. As soon as it is poured, in the glass it is covered with a lovely soft mousse, nourished by a perlage of extraordinary finesse. The nose is broad and complex, with clear hints of bread crust and perceptions both mineral and floral, of rose and acacia. The fruity notes, on the other hand, are typical of the black grape variety from which it originates, namely small red fruits, including currant and raspberry with a pleasant hint of citrus and a slight sweet hint of pastry. In the mouth it is sumptuous with a lively savouriness and pleasantly citrus freshness. The slightly almondy and toasty finish completes the picture. It accompanies the whole meal well, from aperitifs to main dishes. Try it with risottos, seafood and sushi. For lovers of "extreme" pairings this Brut Nature is also capable of accompanying meat dishes.

A red wine from the territory, Scalunera is made from a selection of Nerello Mascalese grapes with the addition of a small percentage of Nerello Cappuccio (Nerello Mascalese 97% - Nerello Cappuccio 3%), grapes from organically grown vineyards. After vinification, the wine rests for 24 months in oak barrels and, after bottling, for at least another 4 months in the bottle. An expressive and complex red, Scalunera surprises with its intense aromas of red fruits, dates and a slight smokiness. Soft on the palate and concentrated, it is characterised by a savoury finish in harmony with silky tannins. An elegant, meditation wine, it is perfect with traditional Sicilian meat dishes such as pork and lamb, but also with tasty fish, goat cheese and vegetables.

In spring, the wine spontaneously undergoes malolactic fermentation and is then aged for between 18 and 36 months in large Slavonian oak casks. Transparent ruby colour with garnet hues, on the nose, it is clearly reminiscent of violets, rose hips, cloves and cinnamon, joined by intense notes of dark jam, resin and blond tobacco. In the mouth, it conquers with its harmony, freshness and elegance. A complex and long-lived wine that offers an unforgettable sensory experience.
