Here the aura of the Piave valley and ideal exposure give the grapes, aromaticity and sweetness. This is where Tittoni Dry, Rive di Vidor, Valdobbiadene DOCG is born. The vineyard covers an area of about 2.6 hectares and lies at an altitude of about 240 metres above sea level. Grapes are harvested when fully ripe, and as soon as they reach the winery they are quickly sent to fermentation, which, in this case, takes place very slowly. The same slowness also characterises the subsequent frothing, with the yeasts slowly releasing a carbon dioxide that becomes almost creamy and persistent. The result is a sparkling wine characterised by a beautiful, brilliant, straw-yellow colour with golden highlights. In the glass, the perlage is persistent and fine-grained. The bouquet is complex and velvety, with hints of ripe yellow apple, yellow plum. Then white flowers, with predominance of white rose, and a light spiciness that lends balsamicity. In the mouth, it is intense and noble in structure, with a perfect correspondence to what was previously perceived. On the table it goes well with delicate dishes such as fillet of sea bream or milk-fed sirloin. Also good with classic tuna tartare.

The cool and ventilated climate, with significant temperature fluctuations, favours a slow and gradual ripening, preserving aromas and freshness. The grapes are harvested by hand at the perfect moment of ripeness. Alcoholic fermentation takes place in steel at a controlled temperature, to enhance the primary aromas of the grape variety. Then, according to the Charmat (or Martinotti) Method, the wine is re-fermented in autoclave for 25-30 days, acquiring its fine and persistent effervescence. A moderate residual sugar gives this Extra Dry a nice balance between freshness and smoothness. Straw yellow in colour with greenish reflections, the nose is rich and inviting, with notes of green apple, acacia flowers and citrus fruits that intertwine with hints of bread crust and yeast. In the mouth it reveals great vivacity, with a fine, persistent bubble that caresses the tongue. The crisp freshness balances perfectly with the softness of the fruit and the residual sugar, making for a satisfying and inviting sip. Best served with fish, shellfish and seafood dishes. Excellent as an aperitif, it makes every toast a special moment.

This is followed by meticulous tasting of the different cuvées, which are then expertly blended to produce a wine that is refined and fruity to the right degree. Second fermentation in the bottle creates effervescence. Light salmon color, this wine is characterized by a fine and persistent bubble. Captivating raspberry and blueberry aromas on the nose, enhanced by subtle floral notes. The palate, however, reveals a delicious strawberry sorbet. Then red berries and a delicate hint of cookie. An extremely enjoyable rosé, this Simonsig-branded Cap Classique reveals a pleasantly gastronomic soul. Excellent with fish first and second courses, vegetarian preparations and, if desired, even as an unusual end to a meal, accompanied with a bowl of fresh fruit.
