You can't say Friuli without instinctively thinking of Ribolla Gialla. In this case, in particular, we are in the presence of Livio Felluga's Ribolla Gialla. Friuli Colli Orientali DOC, this Ribolla has its roots in a particularly suitable soil, in vineyards located in the Rosazzo area. Harvested by hand between the first and second ten days of September, the grapes are gently destemmed and left to macerate for a short period. At the end of fermentation, then, the wine is kept on its lees in stainless steel containers for about six months, acquiring greater complexity and depth. Straw yellow in colour with delicate green highlights, this Ribolla is characterised by an intense, fresh and refined bouquet. White spring flowers and fruity notes of strawberry pulp, Renetta apple, citrus and balsamic herbs. In the mouth, however, it reveals itself to be a lively and pleasantly mineral wine. Here the citrus notes of citron and lime give a lingering sensation of freshness. Delicate and enveloping, it has a slightly balsamic aftertaste. Excellent as an aperitif, this is the white wine to serve alongside a nice fried dish, battered vegetables, prawns and small fish.

This interesting white wine, in fact, is the result of an unusual blend of Ribolla Gialla, the flagship wine of the region, and Chardonnay, the international grape par excellence. A marriage that is not so common but decidedly successful. From a technical point of view, in fact, the combination of these grape varieties gives the finished wine balance and complexity. The Chardonnay gives elegance and richness. The Ribolla Gialla, for its part, brings freshness and vivacity. Bright yellow in colour with golden highlights, Sharis immediately reveals an intense and captivating bouquet. Elegant notes of white and yellow flowers combine with fresh hints of fruit. From lime to Golden apple. On the finish, a pleasant note of custard makes the whole even more interesting. In the mouth it is lively, balanced and enveloping, with balsamic hints on the finish and a good persistence at the end. Once again, this is an excellent aperitif wine, but also suitable for interesting pairings. Excellent with asparagus and vegetable soups, it also goes well with fish dishes.
