Rosé wine has been part of the Ligurian oenological tradition for many years. In Mearosa, Colli di Luni DOC proposed here by Lunae Bosoni, one can appreciate all the typical characteristics of its territory of origin. Freshness, elegance, fruit and complexity. Mearosa also has another peculiarity. It is, in fact, a wine produced from an ancient autochthonous vine, rediscovered and replanted thanks to Paolo Bosoni's sensitivity: the black vermentino. Vineyards located in the hills of Luni and Castelnuovo Magra, in this case the grapes undergo cold maceration on the skins for about 8 hours. This is followed by alcoholic fermentation, again at a controlled temperature, in steel, and a slow ageing phase on the fine lees lasting 4 months. The black Vermentino is characterised by elegance, fruit, freshness and delicate tannins. Perfect elements for a rosé of great quality. Careful vinification of the grapes at a controlled temperature and not excessive time on the skins give the finished wine a delicate pomegranate pink colour, with intense aromas of great elegance.

Labianca, Liguria di Levante IGT, is the wine proposed here by the Lunae Bosoni winery, one of the most interesting wine producers in Liguria. Specialising in Vermentino grapes, in this case Lunae does not vinify them in purity but associates them with Malvasia. The grapes come from vineyards cultivated in the light, sandy soils of the Luni plain, squeezed between the Ligurian Sea and the Apuan Alps. This land, with its special microclimate, yields a Vermentino that is fresh, delicate and rich in savoury notes. The small addition of Malvasia gives the finished wine a pleasant softness. The result is a delicate and persuasive wine, fresh thanks to its summery aromas. Super thorough vinification in temperature-controlled stainless steel tanks, after processing the wine is matured on its fine lees, again in stainless steel tanks, for about 4 months. Greenish yellow, on the nose decisive tropical notes of maracuja and mango emerge, blending with those of peppermint and white pepper, sage, Mediterranean scrub and a salty undertone. In the mouth, it is soft and enveloping. Well balanced by freshness and savouriness, it enjoys a fruity finish and good persistence.

This Vermentino Etichetta Grigia has a very special significance in the Bosoni family's heart. Etichetta grigia, in fact, is the first wine made from the vinification of Vermentino grapes by Paolo Bosoni more than forty years ago. And, today as then, it still follows the same path, becoming over time, the emblem and icon of the winery. Colli di Luni DOC, this pure Vermentino comes from the foothills of Luni, Castelnuovo Magra and Sarzana. The grapes come from both estate vineyards and the vineyards of the winegrowers. Vinification is simple and respectful, aimed at enhancing the classic characteristics of Vermentino: freshness and elegance, sapidity and balance on the palate. Auxo, Colli di Luni DOC red, is one of the most interesting labels offered by Lunae Bosoni. It comes from a vinification of Sangiovese, Canaiolo and Ciliegiolo grapes. The three grape varieties that make it up clearly refer to the Tuscan oenological tradition. But the presence of these vines in the Colli di Luni is nothing other than the fruit of historical and social influences that the two territories have always had. The particular Ligurian terroir, characterised by the strong proximity of sea and mountains, gives these grapes elegance and identity. A curiosity about the name. Auxo is a Latin term that identified the growth, the vegetative development of plants and represented one of the four seasons of the year. The vinification process initially involves a 10-day maceration of the skins. Then, after racking, follows a maturation phase in 20-hectolitre oak casks that lasts for about 10 months. A medium intense ruby red, this red has a pleasantly multifaceted nose, including aromas of cherries in spirit, strawberries and plums, associated with notes of sweet cocoa and pipe tobacco with a slight background of violet petals and blood orange. In the mouth, the drink is soft and silky, but acidity and flavour make it lively and intriguing. The finish is pleasantly floral and spicy.

Etichetta Nera is perhaps the best known, and best loved, of the Vermentino wines produced by Cantina Lunae. A great Vermentino dei Colli di Luni Doc that comes from vineyards with excellent exposure and an average age of 35 years. Its particular processing technique involves maceration on the skins for 48 hours, followed by racking, fermentation and finally vinification in steel tanks. The result is a white wine of great substance and charm, characterized by an intense straw yellow colour, with light golden reflections. The nose is noted for its great elegance, with hints of wild flowers, herbs, spices, ripe fruit and honey. The mouthfeel is tasty, well balanced and above all very persistent.

Rare things are more valuable, by definition. Not even this rare - and precious - Vermentino Nero, a limited edition of Cantina Lunae, a tribute by Paolo Bosoni to a local grape variety that is almost extinct, is exempt from this golden rule. A red made from Vermentino Nero grapes, to which a small part of other local varieties grown in the Tuscan town of Fosdinovo, is added. Fermentation in large wooden barrels and aging of 8 months, also in wood, followed by another 12 months in cement. The result is a wine characterized by an intense ruby red colour. On the nose, hints of berries, violets, roses and Mediterranean herbs, well balanced by hints of spices, such as juniper, cloves and pepper. A white wine with great personality. Pleasantly tannic, it has a particularly long and pleasant finish.
