Asolo Prosecco DOCG Brut Biodiversity by Villa Sandi is made from 100% Glera grapes from the area of Crocetta del Montello, in the province of Treviso. Harvested by hand and vinified in the autoclave using the Martinotti method, they produce a wine of great pleasure and elegance. In the glass it reveals a beautiful straw yellow colour with a perlage that, despite the method, is fine and persistent. The nose is rich and immediately reveals hints of white flowers, citrus and apple. The mouthfeel is dry, rightly dosed, and with good structure. The finish is pleasant and well balanced.

Welcome Prosecco Rosé! One has always been accustomed to thinking of Prosecco as a simple and pleasant white sparkling wine. Produced with Glera grapes in purity (or almost) but in any case only with white varieties. This is no longer the case today. Prosecco, in fact, can also be rosé, as in this case, always produced with Glera, 85%, and Pinot Noir vinified in red for the remaining part. A simply revolutary change that promises to give the many fans of the denomination unexpected satisfaction. To produce Il Fresco, Prosecco DOC Rosé, Villa Sandi's winemakers combine the must obtained from Glera with a portion of red wine obtained from a quick maceration of Pinot Noir grapes. Then new selected yeasts are added and the resulting cuvée is fermented at a controlled temperature, between 15 and 16 ltC. Once the desired alcohol content and sugar content has been reached, fermentation is stopped and, after a period of at least two months on the lees, the sparkling wine is ready to be bottled. In the glass it has a beautiful, elegant pink color with copper highlights and a fine, persistent perlage. On the nose it offers a bouquet of red fruits and floral scents, including notes of pomegranate and rose. on the palate, however, it is soft and silky. Well balanced, it is a great wine to bring to the table, to surprise our guests with a new sparkling wine but already destined for great things.

Super fresh and fun, this Prosecco DOC from the province of Treviso and proposed by Villa Sandi, is packaged with the classic cork that protrudes a few millimetres from the neck of the bottle and is secured with a strong cord, a string, with careful tying. This traditional system of bottle closure is today reserved for only a few precious bottles outside the region. The Prosecco offered here is slightly less sparkling than the classic spumante, so much so that it is classified as 'sparkling'. Pale straw yellow in colour, it has intensely fruity and floral aromas, with small notes of flowers and ripe fruit, as well as citrine. Excellent as an aperitif, it is the wine to uncork on all convivial occasions. Perfect with simple fish dishes, it also perfectly accompanies a free-range chicken or a barbecued cockerel.
