The area of origin is Soave. Or rather, that of the Classical Soave area, which is the most historic and vocational. It is called Sella and is one of the most interesting white wines produced in the area by the Sartori winery in Verona. Almost pure Garganega, the blend of this wine is completed with 10% Trebbiano di Soave. The grapes are softly pressed, with a short maceration period. Fermented at a controlled temperature, this Veronese white refines mainly in steel or cement vats, with the exception of a percentage, which may vary from year to year, that refines in small and medium-sized wooden barrels. The result is a white wine characterised by a beautiful straw yellow colour with golden highlights. On the nose, the gentle bouquet is characterised by delicate and fragrant notes of fresh fruit. In the mouth, on the other hand, one discovers a wine characterised by a pleasantly dry and harmonious flavour, with a bitter aftertaste. A perfect wine to start an evening, it can be served both as an aperitif and in combination with hors d'oeuvres and fish dishes.

Cannonau is considered a grape of great character, capable of producing rich and full-bodied wines. Dimonios, the Cannonau di Sardegna DOC Riserva proposed by Sella & Mosca, is no exception. Let's start with the name. Dimonios takes its name from the anthem of the Brigade Sassari. Founded in 1915, it is the only unit in the Italian army to be composed of members from the region of Sardinia. The Cannonau grapes used in this wine come only from the most suitable vineyards on the island, where the sun shines for many hours a day, guaranteeing the grapes a good dose of sugar. Fermentation and maceration in large Slavonian oak barrels to obtain a wine with a strong and distinctly territorial character. In the glass it has a beautiful deep ruby red colour. The scents recall the Mediterranean scrub and ripe red fruit. In the mouth it is enveloping, spicy and pleasantly alcoholic. A wine that requires a serious pairing, better if regional, such as with suckling pig or grilled meat.

From the encounter/clash between Cannonau and Cabernet Sauvignon comes Tanca Farrì. The vineyards are planted on strong, clayey, red soil rich in iron. Strength that is tamed in the cellar where the wine, after vinification in steel, continues with maturation in wood for at least a year. Part in French barriques of second passage and part in large barrels. After ageing, the wine is bottled and left to rest in the cellar for a period of about three months before being put on the market. The strong character of this red reveals itself from its appearance. In the glass, in fact, there is a ruby color with garnet reflections. The nose is ample and enjoyable. Rich and expressive, it is characterized by herbaceous and fruity tones. In the mouth, however, it is well-structured. Pleasantly tannic, it is a red wine of great balance and elegance. Long, if not very long, the finale leaves a pleasant toasted sensation in the mouth, the result of the wise use of wood in the cellar.

Cuvée 161 represents the highest expression of the Torbato grape variety in the Sella & Mosca range. A pleasantly modern wine that comes from a careful processing of this ancient grape variety. Fermentation takes place in temperature-controlled stainless steel vats, except for a portion, about 15%, which is fermented in oak barriques. Same process for the refinement phase. Most of the wine, in fact, remains in steel, in contact with its own yeasts, for a period of about 6 months. 15% of the mass, however, is aged in barriques. The result is a wine characterized by a bright yellow colour, with evident golden hues. On the nose, scents of Mediterranean scrub, thistle and medicinal herbs. Fresh flowers and ripe fruit, however, are easily recognizable on the palate, with a slight spicy tone and strong mineral traits. Soft on the entry, savory, almost brackish, it proves to be a well-balanced wine, thanks also to a nice acidity that balances with the alcohol and structure.

Let's start with a curiosity... Marchese di Villamarina is one of Italy's most awarded wines. It has won numerous international awards, including the 'World's Best Cabernet Sauvignon' award at the Decanter World Wine Awards. For this reason, it is certainly not excessive to define Marchese di Villamarina, Cabernet Riserva Alghero DOC by Sella&Mosca, a true Italian excellence that stands out for its complexity, elegance and power. In this case, the grapes used to produce this wine come from vineyards located in the Alghero area of Sardinia. The soil here is characterised by ferrous clays and aeolian sands and gives the wine a unique minerality and structure. The grapes are harvested by hand and fermented with long maceration on the skins. The wine then matures for about 18 months in new and second-passage French barriques. After bottling, it then rests in the cellar for a further 12 months. In the glass, it has a beautiful, decisive ruby red colour, with violet streaks. The nose reveals a broad and intense bouquet, with notes of morello cherry, blackcurrant, tobacco and spices. In the mouth it is rhythmic, silky, with great structure and good acidity that keeps it balanced. The finish is warm, seductive and very long lasting. It goes well with mature cheeses and first courses with meat sauces. Marchese di Villamarina best represents the terroir from which it comes.

Torbato is the name of the rare and precious vine, rediscovered and enhanced by Sella & Mosca in years of work. From this grape, which grows on soils rich in limestone of ancient marine origin, the historic Sardinian company produces a sparkling wine of great pleasure. The harvest is carefully carried out to select only those grapes that guarantee the right natural acidity. In the winery, the grapes are processed at low temperature, in full respect of the finest aromas. The long stay on the lees at the end of fermentation gives this brut an aristocratic character, as well as a fine perlage and a surprising aromatic intensity. Bright and brilliant straw yellow in colour, it has aromas ranging from acacia flowers and pink grapefruit to yeast and bread crust. In the mouth it is pleasantly savoury, creamy and full. Proposed as an aperitif at the beginning of the evening, it has only one flaw. It tends to monopolize the scene. Hard to abandon it and move on to another wine. It's best to be prepared and keep a generous supply already in the fridge.
