In Italy, one of the areas historically most vocated to the cultivation of this vine is undoubtedly the Oltrepò pavese, where this very noble vine of French origin gives life to red, rosé and white wines, still and sparkling. The result is a fresh rosé with a fine and persistent perlage. The nose is complex and intense, pleasantly fruity, with hints of cherry and strawberry. Malanders is made from a blend of 95% Vernatsch (Schiava) grapes, with a touch of Lagrein to back it up. A quality wine that fully represents the characteristics of the Tuscan terroir and is distinguished by its aromatic complexity and balanced structure. This is, in a nutshell, the Chianti Classico DOCG Pagliarese Riserva of Félsina, a fine estate located in Castenuovo Berardenga, in the province of Siena, Tuscany. Its composition is mainly made up of Sangiovese, which alone accounts for about 90% of the blend. With it two 'minor' vines, Canaiolo and Mammolo, both at 5%. In this case, the vines grow on soils that are predominantly of sedimentary origin, characterised by clay and marl deposits. And it is precisely this particular soil composition that contributes to the typicality and quality of the wine. Vinification with temperature-controlled fermentation and then, after racking, the wine is transferred into medium-sized or large Slavonian oak barrels for a period of maturation lasting approximately one year. After this phase, the wine is bottled and left to mature in the cellar for a further 6 months. Chianti Classico Pagliarese Riserva in the glass has a brilliant ruby red colour. On the nose, one perceives aromas of ripe fruit, spices, notes of tobacco and black pepper. The Barolo DOCG Bergera, proposed here by Azienda Agricola La Spinona, comes from a 4-hectare vineyard with a southern exposure, located in the lowest part of the hillside. Here cold maceration begins, followed by 8-10 days of temperature-controlled fermentation with automatic punching-down and pumping-over in the air to maximise the extraction of aromas and tannic substances. After fermentation, Barolo Bergera matures for about 18 months in large 40-hectolitre Slavonian oak casks, acquiring tertiary notes that do not overpower the freshness of the Nebbiolo. The barrels used, with an average age of 15 years, allow a slow and delicate evolution, favouring roundness and balanced tannins. Finally, the wine is refined in the bottle for at least 12 months before being marketed. In the glass, Bergera has a ruby red colour, which evolves towards garnet with age. The nose offers a fresh and fine bouquet, with hints of cherry, floral notes and hints of delicate spices. In the mouth it is rightly tannic, with an elegant and persistent texture, characterised by a freshness that balances the structure, making it a balanced and versatile wine. And it is precisely because of its structure and balance that Bergera can evolve in the bottle for more than 8-12 years, developing increasingly complex and refined nuances. Carbonare is - technically - an Additional Geographical Unit. In other words, a well-defined vineyard from which high quality grapes are sourced and used for the production of this Soave Classico. The vineyard, still cultivated with the classic Veronese Pergola system, is located in the Carbonare area and enjoys an eastern exposure. The soil is typical for the area, namely volcanic and capable of imparting a subtle minerality to the wines produced there. 100% Garganega, the vines are between 45 and 60 years old and are located at an altitude of approximately 250 metres above sea level. It is bottled in November and then left to age for a few months before being presented on the market. A vertical wine with an important acidic shoulder, it has a distinct floral character. Re Befè is made from pure Nerello Mascalese. This an indigenous variety of Etna, it is especially loved for its ability to give rise to elegant wines. Red wines, for the most part, but also quality sparkling wines, pure expression of their terroir. Re-fermentation in the bottle and long aging on the lees result in a complex and refined sparkling wine. Grapes are harvested manually at dawn to preserve the freshness of the clusters. The bases are left in contact with their noble lees for at least 4 months. While the maturation in the bottle extends for a full 36 months, developing a beautiful aromatic complexity. After disgorgement, then, the Re Befè ages further for 6 months in bottle before being marketed. Bright yellow in color, the nose surprises with a beautiful rich and complex bouquet. Alta Langa DOCG is synonymous with superior quality classic method bubbly. Because the strict production regulations of the DOCG impose very high standards, even for the simplest sparkling wines. In this case Mirafiore offers a Blanc de Noir version, a white sparkling wine made only from red grapes. Specifically, it is a 100% Pinot Noir, from the Serralunga d'Alba area, and matured for 36 months in a cool, dark environment, in keeping with production traditions. Poured into the glass, the sparkling wine has a straw-yellow colour with light golden reflections and a fine and persistent perlage that helps to enhance the aromas of white-fleshed fruit, dried fruit and bread crust. The structure typical of Pinot Noir is immediately perceived in the mouth, enhanced by the pleasant creaminess of the foam. Long persistence, freshness and excellent flavour are the sensations that remain in the mouth and in the memory at the end of the tasting. An excellent sparkling wine for the whole meal, this Alta Langa DOCG should be served with delicate but intense dishes. The one proposed here is one of the great reds of the Piedmont region. We are talking about a Roero DOCG, a denomination known for its high quality wines. It is proposed by the Maccagno winery, starting with Nebbiolo grapes from its beautiful hillside vineyards. After harvesting, the grapes are soon taken to the cellar for processing. Crushing and destemming yield a must rich in sugar and, thanks to a maceration of the skins for about 20 days, also in colour. At the end of processing, after racking, the wine is put into French oak tonneaux, where it matures slowly for at least 12 months. This is followed by bottling and a further period of refinement in the bottle before final release. In the glass, the wine is a beautiful intense ruby red colour with garnet reflections. On the nose, the aromas are mainly reminiscent of well-ripened red fruit, even jammy. Then balsamic notes on the finish. In the mouth it is well balanced, with a nice structure and a delicate, long finish. Roero, as its producers remind us, is the 'King of Roero red wines', ideal with red meats, stewed and braised. It also goes well with traditional Piedmontese first courses and mature cheeses.

100% Garganega. No concessions in terms of quality. Marani, in fact, is the fruit of a strict selection of grapes that come from hillside vineyards in the Soave area, north of the municipality of Colognola ai Colli. Bianco Veronese IGT, the perfectly ripe grapes are harvested and selected by hand, then placed in drying lofts where they are dried for at least 40 days, thus favouring an important reduction in the percentage of water and the consequent concentration of the sugars contained in the grapes. Traditional processing with a short cold maceration of the marc, part of the must is fermented in oak barrels. At the end of vinification, all the wine is aged "sur lie". Intense golden yellow in colour, the nose recalls notes of ripe fruit and honey. In the mouth, on the other hand, it reveals a voluminous and aristocratic white. An important wine that requires a decisive pairing. Excellent with a rich risotto, it can also accompany fish recipes or medium-aged cheeses.

The wine, Nebbiolo d'Alba DOC Michet, on the other hand, needs no tricks to convince you of its high quality. We are talking about a pure Nebbiolo that comes from one of the most suitable areas for the cultivation of this eclectic variety. Calcareous clayey hills that produce beautifully structured grapes with fragrant and fruity aromas. Michet, as few people know, is the name of a particular clone of Nebbiolo, characterised by small and scattered bunches capable of producing wines full of colour and extract. The wine is then aged in small oak barrels and then, before bottling, it is blended in the traditional large Slavonian oak barrels that contribute to its harmony and balance. The result is a red wine characterised by a beautiful ruby colour tending towards garnet. The bouquet combines the fruity scents of raspberries with the ethereal and spicy scents of violets and vanilla. In the mouth it is a full and harmonious wine. Well balanced, it has sweet tannins, not too evident, and a delicate woody note. A nicely structured red, it goes well with tasty hors d'oeuvres, rich first courses and roasted or stewed meats. It is also excellent with a fine selection of cured meats and mature cheeses.

After the grapes are crushed and destemmed, the must undergoes controlled fermentation at temperatures between 25º and 29ºC, which preserves and enhances the fruity aromas without compromising the structure. Periodic pumping over during fermentation ensures optimal extraction of polyphenols and tannins, contributing to the smoothness and complexity of the wine. The result is a dark red wine with ruby highlights. The nose reveals a complex bouquet of red fruits, such as cherries and currants, with delicate notes of spices and vanilla. Experts rate 2016 as a 5-star vintage, one of the best in recent years. Accomplicated by a climatic trend that favoured a long harvest, with grapes of perfect quality. The 2016 Barolo wines, in particular, are characterised by excellent balance and structure. A fine example is this Sorì Gepin, produced by the family-run La Spinona winery in the commune of Novello. For five generations, La Spinona has cultivated the land and produced its wines with passion and respect for tradition. Sorì Gepin, in particular, is a Barolo that stands out for its aromatic complexity and the perfect balance between power and finesse. The grapes come from a single vineyard on top of a hill with southern exposure. The harvest takes place between the end of October and the beginning of November, when the Nebbiolo reaches its maximum maturity. The bunches are picked by hand and carefully selected in small baskets. After harvesting, the grapes undergo cold maceration for one day, followed by fermentation for 15-20 days, with automatic punching-down and pumping-over to allow optimal extraction of the noble substances from the skins. The malolactic fermentation, conducted at a controlled temperature, softens the natural acidity of the Nebbiolo, giving roundness and harmony to Sorì Gepin. The wine matures for approximately 18 months in large 25-hectolitre Allier and Slavonian oak casks, with barrels between 5 and 10 years old, to ensure depth without overpowering the elegance of the Nebbiolo. After barrel ageing, Sorì Gepin matures for a further 12 months in the bottle, achieving a perfect balance of freshness, structure and aromatic complexity. In the glass it is ruby red in colour, evolving towards garnet shades with age. The nose offers a rich and layered bouquet: aromas of ripe red fruits mingle with delicate floral notes and complex nuances of spices, leather and tobacco, developed during the long ageing in wood. In the mouth, Sorì Gepin is austere and deep, with robust, well-integrated tannins and extraordinary persistence. The full body and the balance between freshness and tannic intensity make it a harmonious and enveloping wine. Able to age for more than 10-15 years, Sorì Gepin is ideal with full-bodied dishes such as braised meats, roasts, game and mature cheeses. It is also perfect as a meditation wine, to be savoured slowly to grasp every nuance of its long evolutionary path.
