This area, known as the Quattro Vicariati (Four Vicariates), is the southernmost in the region and is therefore the most suitable for the production of great red wines. Vinified in red, with maceration on the skins for about two weeks, after fermentation the wine is left to mature in barriques and small oak barrels for at least 24 months. Then, after bottling, follows further ageing in the bottle for about another 12 months. A red wine with an intense, bright ruby colour, the nose offers balsamic, plum, blackberry and tobacco sensations. In the mouth, however, it shows great balance, with typical notes of green pepper and ripe red berries. Savoury and soft, it has noble tannins and a long, enveloping finish. A red of fine character, this Quattro Vicariati is ideal with first courses dressed with tasty sauces, but also grilled meat and mature cheeses.

The "scalandrino" is a rustic tool once used by farmers to climb over hedges. A 100% white Vermentino, the Mantellassi vines are rooted in soils of ancient tufaceous and calcareous origin, with low yields and high quality fruit. Softly pressed, with a very low yield (around 50%), Scalandrino ferments in French oak barrels. Then, at the end of vinification, the wine remains in barriques for a short period of maturation of about five months. This is followed by bottling and a further period of refinement in the cellar before going on sale. Brilliant straw yellow in colour, this Maremma Vermentino offers a fruity and persistent bouquet, the result of careful selection of the grapes elevated in oak barrels. In the mouth, however, one discovers a wine characterised by a soft body and a pleasantly persistent finish.

IGT Lazio Rosso, Campo Vecchio is one of the good labels offered by the Castel de Paolis winery in Grottaferrata. This is one of the Lazio winery's historic wines, produced since 1993. An international grape variety, therefore, and an indigenous Latium grape that together find an absolutely interesting balance. Hilly vineyards at 250 metres above sea level, the soils are of volcanic origin and the plants have an average age of just under 30 years. Vinification in stainless steel at a controlled temperature, at the end of the process the wine is divided into two parts. One half takes the barrique route, the other remains in steel vats until final blending and bottling. A ruby red of beautiful intensity, the nose reveals clear scents of red fruit, blackberries and raspberries, followed by a sweet and spicy background. In the mouth, however, the most interesting feature is undoubtedly the good balance of all its components, with sweet tannins and good minerality. On the table it accompanies meat-based first and second courses, grilled meats and medium-aged cheeses.

Fruity notes well integrated with those of the wood, make the wine intriguing. Finally, its distinctive acidity and sapidity make it easy to drink.

Bright ruby red in colour, it has intense aromas reminiscent of wild violets, cherries, berries and spices such as black pepper. In the mouth it is full, enveloping, soft and persistent. Pleasant tannin and good structure. Also perfect as an aperitif, with a board of cheeses and cold cuts it is simply ideal.

Clinio, IGT Toscana, is an international red wine proposed by Tenuta Fratini. We are talking about a fine Bolgheri reality that can count on large vineyard plots in particularly suitable areas. Specifically, the vineyards from which the Cabernet Franc grapes (mostly) used to produce this Clinio come are located in the municipality of Castagneto Carducci, a hamlet of Donoratico, in the province of Livorno. Here the soil is composed of sedimentary rocks, ideal for the ripening of the Bordeaux red grape variety. It should also be emphasised that the care taken at every stage of the production process is remarkable. Starting with the careful selection of the best bunches in the vineyard, hand-picked only when they have reached perfect ripeness. Once in the cellar, then, the grapes undergo further selection and only then are the 'perfect' grapes sent to the fermentation phase in temperature-controlled stainless steel conical tanks. Fermentation, it should be emphasised, takes place thanks to the action of spontaneous yeasts. At the end of vinification, the wine passes into barriques, of second and third passage, for a slow maturation of no less than 12 months. In the glass, it has a beautiful red-purple colour with violet reflections. The nose reveals great complexity, with typical sweet Mediterranean notes and fruity sensations that blend, in perfect balance, with aromatic freshness. A wine of great pleasantness, it then reveals a harmonious tannic texture in the mouth. Refined and persistent, it is a wine that is already good today but which will certainly benefit from a period of rest in the cellar. Clinio di Tenuta Fratini is a red that expresses great balance of taste and all the harmony typical of the great wines of its territory. Perfect in combination with red meats and cheeses.

You can't think of Argentina without smelling the aroma of grilled meat. And you can't think of Argentinian wines without mentioning the most classic of blends, that between the international Malbec and Bonarda. Be careful, though. The name Bonarda should not mislead us. Although the Argentine Bonarda may be reminiscent in some respects of the good wines produced in Italy between the lower Piedmont and Oltrepò regions (which are, moreover, the product of different grape varieties such as Uva Rara and Croatina), there is no connection between them. Bright ruby red to the eye, this wine offers intense aromas of ripe fruit and spices. In the mouth it is soft and round, not particularly tannic but very persistent. Made to be shared with friends, this wine calls for meat cooked slowly on the grill.

Venezia Giulia IGT, Bastianich's Vespa Rosso comes from a skilful blend of both indigenous and international grapes, carefully chosen by the winery team in vineyards that have an average age of around 60 years. In this case, the three Bordeaux grape varieties par excellence, Merlot, Cabernet Sauvignon and Cabernet Franc, are blended with Refosco dal Peduncolo Rosso, the most typical red grape of the area. The result is a fortunate mix that is enriched by an expert maturation in barriques for 18 months. Ruby red with slight garnet hues, the nose is very fruity, despite the fact that this is a red wine from a cold climate. In the mouth it confirms its nature, revealing pleasant notes of small red fruits, also jammy. Able to amaze for its balance and finesse, with the passing of the seconds it reveals itself as a pleasantly soft wine, with a slightly more bitter finish. Ideal with roasts and pork dishes. The refinement is prolonged for more than 30 months and the final result is a bubble of great personality, characterized by a goldish-pale straw yellow color. The nose is fresh, elegant and complex with notes of white fruits, acacia flowers, hazelnut and honey, enhanced by mineral sensations. In the mouth, however, it is delicate, elegant and concentrated. Characterized by an exceptional permanence on the palate and good aromatic persistence.
