A genuine wine that comes from an area rich in history and highly vocated, this Gutturnio originates from vineyards in Ziano Piacentino, a small municipality situated in the hills. An area known for the variety of its soils and favourable climate. The name Gutturnio derives from the ancient Roman vessel, the 'gutturnium', used for drinking wine during banquets. Specifically, this one proposed by Torre Fornello is a blend of 60% Barbera and 40% Bonarda, or rather Croatina, two grape varieties that together give life to a wine characterised by a beautiful pleasantness. The Barbera, in particular, is known for its acidity and freshness, and gives the wine great drinkability. Croatina, for its part, brings softness, body and an aromatic bouquet reminiscent of berries. After the grapes are harvested, Barbera and Bonarda are vinified separately. This starts with maceration and fermentation at a controlled temperature for about 7-10 days. Once fermentation is complete, the two masses are cold-assembled and re-fermentation takes place in an autoclave, according to the Charmat method. To the eye, this sparkling wine from Piacenza has a brilliant ruby red colour. The nose is fresh and vinous, with clear notes of berries, such as blueberries and raspberries. In the mouth it is rich, full and persistent, with a flavour reminiscent of ripe berries. The slight effervescence enhances the freshness, inviting a second sip. Designed to be consumed young, this wine is perfect to accompany traditional Emilian dishes.
