A symbolic wine of the Veneto wine-growing tradition, and of the Quintarelli winery, Amarone della Valpolicella Classico DOCG is a little jewel of 'alta enologia' (high oenology). It originates from the hills of Negrar, in the heart of the Classica zone, the most historic and world-renowned for the quality of the wines produced there. The Quintarelli winery, for its part, is undoubtedly one of the most renowned and respected in Italy. Obtained from a traditional blend of Corvina (55%) and Rondinella (30%), it is enriched by an international touch of Cabernet, as well as Sangiovese, Nebbiolo and Croatina, all together amounting to about 15%. Corvina, the backbone of the blend, offers elegance and complexity, with notes of cherry and spices. The Rondinella, on the other hand, contributes freshness and structure. The production process is long and meticulous. It begins with a careful selection of the best grapes in the field. These are left to dry naturally for several months in fruit lofts. This process concentrates the sugars and enriches the aromatic components. The subsequent vinification involves maceration for about 20 days and an alcoholic fermentation that can last up to 45 days. Slow and controlled, fermentation is activated by means of indigenous yeasts. Subsequent ageing takes place in Slavonian oak barrels, where the wine rests for about 7 years. In the glass, Quintarelli's Amarone has a deep garnet red colour, dense and luminous. On the nose, an intense and complex bouquet, with hints of black cherry, bitter almond, tobacco, liquorice, cocoa, oak and a very intriguing spicy touch. An incredible bouquet in continuous evolution. In the mouth, it is warm and powerful, with a full body and a perfectly balanced tannic structure. The finish is long, refined and persistent, with notes of dried fruit and sweet spices. A wine destined for very long ageing (up to 25 years), it is the ideal companion for robust and richly flavoured dishes.

Hermitage is one of the most famous and prestigious appellations in the Rhone Valley. Situated on a hill overlooking the river, this region is known for its unique soils and an ideal microclimate for viticulture. The vines from which Le Pavillon comes are planted on a parcel of around 4 hectares, characterised by a soil rich in fine sediments on a granitic subsoil. The vines, which are between 90 and 100 years old, produce grapes of exceptional quality, thanks in part to their advanced age that guarantees a low yield but very high concentration. The grapes are harvested by hand at the limit of over-ripening. After harvesting, the bunches are completely destemmed and fermentation takes place in cement tanks, with temperatures not exceeding 32°C. Maceration lasts between 4 and 5 weeks and allows optimal extraction of the tannins, giving the wine its typical structure. For ageing, the producer chooses to use only oak barrels, with a percentage of new ones of 30%. This phase lasts 18 to 20 months. Before bottling, clarification takes place naturally, without mechanical intervention. Crimson in colour with garnet highlights, on the nose, notes of asphalt and graphite emerge, with subtle hints of cedar. In the mouth, it then reveals great complexity. The structure is powerful yet elegant, with well-polymerised tannins and a long, persistent finish. Depending on the vintage, Le Pavillon can age for an extraordinarily long period, ranging from 30 to 60 years, and in some exceptional vintages it can even last 50 to 75 years. The care devoted to the vineyards and the attention paid by Krug to the unique characteristics of each plot and each wine have resulted in the depth of expression of this Edition of Krug Grande Cuvée. It is the Complete Orchestra interpreting the Symphony of Champagne. In total, the reserve wines from the Maison's extensive collection make up 42% of the final blend, bringing breadth and roundness, indispensable elements of each Krug Grande Cuvée Edition. The vinification of this Colore follows a careful process. Each plot is vinified separately and the grapes, after careful selection in the vineyard and in the cellar, are gently crushed and fermented in open barriques and steel or wooden vats. Fermentation takes place with indigenous yeasts, with manual pumping over and punching down to extract colour and aromas. After fermentation, the wine matures in barriques for 18 months. On the nose, red flowers, spices and leather blend with notes of ripe fruit, creating an elegant and persistent bouquet. In the mouth it conquers with its firm structure and elegance. Fine, well-integrated tannins support a rich, persistent body, giving a long, satisfying sip with a spicy, lingering finish. It is a wonderful accompaniment to savoury red meats, roasts and braised meats. Also excellent with mature cheeses.

Napa Valley stretches for about 48 kilometres along the Napa River, offering a great variety of climatic conditions that make this area particularly suitable for grape growing. Tenuta Quintessa, in particular, is located on the west side of the Silverado Trail. Here the vineyards benefit from an ideal microclimate, characterised by warm, dry days and cool nights that allow the grapes to ripen slowly, developing beautiful aromatic complexity and great tannic structure. Quintessa is defined as 'a wine of precision', the result of an expertly balanced blend of Bordeaux grapes. The main component is Cabernet Sauvignon, which makes up 91% of the blend. With him, small percentages of Cabernet Franc (4%), Merlot (2%), Carménère (2%) and Petit Verdot (1%) are used to add complexity to the blend. The grapes, carefully selected during the harvest, are vinified in such a way as to preserve the varietal and territorial characteristics as much as possible. After fermentation, the wine matures for 22 months in French oak barrels, 60% of which are new. To the eye, Quintessa has an intense, dark ruby red colour. On the nose, there are fruity notes of blackcurrant, black cherry and redcurrant, accompanied by hints of spice and a slight hint of dried herbs. In the mouth, it is a symphony of flavours, with structured tannins that blend harmoniously with the intense minerality typical of this Californian terroir. A wine with an extraordinary capacity for ageing, although already enjoyable when young, it expresses itself at its best over the next twenty years, evolving and acquiring further complexity with the passage of time. On the table, it is perfect with roast meats and stews, rich and flavoursome dishes typical of star cuisine.

Hermitage is one of France's most famous wine-growing areas, located on the left bank of the Rhône, where the vineyards stretch out on steep slopes that benefit from optimal exposure. It is from here that De L'Orée, proposed by M. Chapoutier, comes, a white, biodynamic, iconic wine that reflects the essence of the Rhone Valley's winemaking tradition. A pure expression of the Marsanne grape variety, the grapes destined for the production of De L'Orée come from the 'Les Murets' parcel, characterised by very old alluvial soils. This unique soil, rich in pebbles and coarse sand, provides excellent drainage and contributes to the concentration and aromatic complexity of the Marsanne grapes. De L'Orée is made exclusively from grapes from old vines, up to 60-70 years old. Mature vines, with naturally low yields, produce small but high-quality clusters, concentrating aromas and flavours. Harvested by hand, the grapes are gently pressed and the must is decanted cold for about 24 hours. This allows natural clarification and preserves the purity of the aromas. Afterwards, approximately 50% of the wine is fermented in large 600-litre wooden barrels, with regular btonnage to enrich the texture and add complexity. The remainder is vinified in steel tanks to maintain freshness. Ageing on the lees lasts between 10 and 12 months, during which the wine is regularly tasted to monitor its evolution and ensure its perfect balance. In the glass it presents itself with a luminous golden hue. The nose immediately reveals intense aromas of ripe yellow fruit, followed by delicate notes of toasted hazelnut and a hint of caramel. In the mouth it is full and enveloping, with a creamy texture and freshness well balanced by vibrant acidity. De L'Orée, like many of the labels from the M. Chapoutier, can be stored for decades. It pairs beautifully with foie gras, lobster, fish and white meats. But also goat and blue cheeses.

Specifically, Gorgona is made from a blend of Sangiovese and Vermentino Nero. The grapes, harvested by hand by the inmates, are transported to the cellar where they undergo temperature-controlled fermentation with maceration on the skins. A particular feature of this wine is the ageing process: Gorgona, in fact, matures for over a year in terracotta jars. This traditional method allows the aromatic integrity of the wine to be preserved, while at the same time conferring a natural micro-oxygenation that enriches its complexity. An intense and brilliant red colour, the nose reveals a varied bouquet that ranges from Mediterranean herbs such as rosemary, lentisk and sage, to spices such as star anise, and fruity notes of blueberry, blackcurrant and blackberry. In the mouth it reveals an enveloping warmth, accompanied by a marked sapidity, characteristic of wines from maritime areas. A bottle like this, impossible not to notice. We are of course talking about Belle époque, Cuvée de prestige from Maison Perrier-Jouët. Its history goes as far back as 1902, when the maison asked Emile Gallé, a glassmaker and decorator, to embellish the glass of the bottle intended for a new Cuvée. A wine that was supposed to celebrate the happy historical period they were living, the Belle époque precisely. The artist decorated the bottle with white anemones, but for various reasons they were not used for more than 60 years. They were revived only in 1964, when Chef de Cave André Bavaret, decided to bottle the iconic Cuvée precisely in a bottle decorated in such an original way. Since then the Belle époque has been a symbol of Champagne and Maison Perrier-Jouët's most prestigious wine. Chardonnay 50%, Pinot Noir 45% and Pinot Meunier 5%, Belle époque rests in the Maison's cellars for at least five years. The 2013 vintage proves to be an elegant and exciting Champagne, characterized by a beautiful clear gold color with subtle greenish reflections. On the nose, notes of white flowers combined with white peach, crisp pear and citrus. In the mouth it is very fresh, with a lingering and harmonious finish. Try it with a risotto with porcini mushrooms, as well as with classic shellfish and seafood.

The nose is surprising for its complex and enveloping bouquet, with hints of ripe red fruit, black cherry under spirits, dried flowers, liquorice, sweet spices and subtle notes of undergrowth. The finish is long and persistent, with pleasant fruity and spicy returns. Destinée is a wine for long ageing, capable of evolving for decades, waiting for a special occasion. Guado al Tasso is the marvellous Bolgheri estate of Marchesi Antinori. Here, Sangiovese gives way, for once, to the great international grape varieties, originally from the Bordeaux area, namely Cabernet Sauvignon, Merlot, and Cabernet Franc. The particular climatic and soil conditions of the Tuscan coast, in fact, have proved to be particularly suitable for the production of wines produced in a "French" style and matured in small oak barrels. Guado al Tasso is the result of a careful selection, first in the vineyard and then in the cellar, of the grapes harvested at two different times. All this is to ensure that only perfectly ripe grapes reach the fermentation tanks. Each variety is vinified separately. Fermentation and maceration take place in temperature-controlled stainless steel tanks and, after racking, the wine is transferred directly into barriques, where malolactic fermentation takes place. Only in February of the year following the harvest are the best batches selected and blended into the final blend. At that point, the wine is transferred back into new French oak barriques where it continues to age until bottling. Guado al Tasso 2018 presents itself in the glass with a beautiful intense ruby red colour. The nose reveals attractive notes of sweet spices and small ripe dark fruits, liquorice root, leather and tobacco. In the mouth the quality of the tannins is very graceful: silky on the entry and vibrant on the finish. A wine characterised by great balance, pleasantness and harmony. Perfect with main courses of meat, it is a wine that is especially appreciated if the steak is cooked slowly on the grill.

Chteau Pontet-Canet, 5ème Cru Classé, is the result of biodynamic farming, an agricultural approach that aims to respect and enhance the natural balance of the terroir. Certified by Demeter, this estate is a fine example of sustainability and respect for the environment, guaranteeing the production of authentic, high quality wines. The blend is composed of 60% Cabernet Sauvignon, 32% Merlot, 4% Cabernet Franc and 4% Petit Verdot. This selection gives the wine a unique complexity and depth, with a structure that guarantees a long life. In the cellar, the approach is non-interventionist and aims to bring out the characteristics of the grapes and terroir to the full. Ageing takes place with great care, with 50% of the wine in new barriques, 35% in cement amphorae and 15% in one-year barriques. This process gives the wine a unique complexity and structure. Chteau Pontet-Canet is distinguished by its complex aromatic profile, with notes of blackcurrants and black cherries. Then nuts, thyme, cocoa powder and graphite. In the mouth, it is full-bodied and enveloping, with layers of ultra-fine, silky tannins that elegantly coat the palate, allowing the juicy, vibrant fruit to shine through.
