Carbonare is - technically - an Additional Geographical Unit. In other words, a well-defined vineyard from which high quality grapes are sourced and used for the production of this Soave Classico. Or rather, as Inama's technicians say, 'their most modern interpretation of Soave Classico'. The vineyard, still cultivated with the classic Veronese Pergola system, is located in the Carbonare area and enjoys an eastern exposure. The soil is typical for the area, namely volcanic and capable of imparting a subtle minerality to the wines produced there. 100% Garganega, the vines are between 45 and 60 years old and are located at an altitude of approximately 250 metres above sea level. Once in the cellar, the grapes are gently pressed and remain in skin maceration for 3 to 12 hours. Alcoholic fermentation follows, in steel, after which batonnage is carried out monthly for a year. It is bottled in November and then left to age for a few months before being presented on the market. A vertical wine with an important acidic shoulder, it has a distinct floral character. This is followed by citrus sensations and a sharp, savoury finish. An intense white with character, this Soave calls for a delicate pairing. We speak of Kretzer referring to rosé born from Lagrein grapes, a technique that was already widespread in the Middle Ages. The name "Kretzer" comes from the word "Kretze," a woven wicker basket in which the must was strained, to separate the juice from the skins. Today, production techniques have refined, of course. But the principle is still the same. It only takes a few hours of contact between must and skins to color the liquid just the right shade of pink. In this case, the Lagrein grapes come from vineyards in Bolzano, at 260 meters above sea level, with roots sinking into deep sandy soils of alluvial origin. Grignolino, a typical red grape variety, is common on the hills of Monferrato, in Piedmont. In all probability its name derives from the dialectal word 'grignolo', meaning grape seed, the abundance of which in the berries gives a pleasant bitterish taste to both the grapes and the wine. A very demanding vine, not easy to grow. In the countryside, it requires the right soil composition and layout, while in the cellar it must be treated with white gloves. The final product, however, generally repays all this effort. To discover it in its most traditional version, Vinchio Vaglio offers this label, Le Nocche, whose name refers to a well-known hamlet in the municipality of Vinchio. Vinified in temperature-controlled steel tanks, at the end of alcoholic and malolactic fermentation, the wine is left to age for a few months, again in steel, before bottling. The colour is a clear ruby red, tending towards orange with the passage of time. The nose is richly fruity and vinous, with varietal notes of flowers. In the mouth it is fine, with good freshness and persistence. Dry, savoury and slightly tannic, this Piedmontese red is a true wine for the whole meal. Try it with richly flavoured dishes such as risotto with Castelmagno cheese or, for fans of typical recipes, with Finanziera. True magic.

We are talking about a Brunello di Montalcino DOCG, harmonious and complex, capable of enveloping the palate with its incredible persistence. In accordance with strict production regulations, this red wine comes from a pure processing of Sangiovese grapes from the Montalcino hills. Once in the winery, processing begins with a long maceration on the skins, during which frequent pumping over is carried out. After racking, the delicate period of maturation in wood begins, which, in the specific case of this label, lasts for about 40 months in large 50-hectolitre Slavonian and French oak casks. After bottling, the wine then rests in the cellar for at least a further 4 months before being released for sale. A wine of great expressive rigour, with a noble character, it is endowed with a natural elegance, daughter of its terroir. The name says it all. A Loire Valley red made exclusively from Gamay grapes, it is the result of environmentally and health-conscious processing. An organic red, it is produced from grapes harvested by hand in vineyards rooted in very special soils, rich in rocks and minerals that give the wine a unique organoleptic profile. Vinification begins with a carbonic maceration phase, followed by a month-long fermentation in steel. Then the wine undergoes a special 'earth' filtration, using a fossil conglomerate of fine-shelled unicellular algae, ground as finely as flour. Only then is it ready to go into the bottle. Le Pressoir Rouge presents itself in the glass in a luminous purple-red colour, with a 'mouth-watering nose' of small red fruits. In the mouth, it is persuasive, soft and fresh. An extremely drinkable wine, it is best served between 13 and 15°C. It goes well with vegetables and cured meats. However, it is also excellent as an 'off-the-beaten-path' aperitif.

Anima is the result of rigorous and respectful processing of the grapes. The bunches, carefully selected in the vineyard, are harvested by hand and delivered to the winery in crates. Fermentation takes place at low temperature in stainless steel tanks, preserving the freshness and primary aromas of the grape variety. This is followed by an ageing period of 6 months on fine lees, which gives Anima complexity and harmony. Brilliant straw yellow in colour, with greenish highlights, the nose reveals a delicate and fragrant bouquet. Hints of green apple, exotic fruit, wild flowers and aromatic herbs. In the mouth, however, Anima reveals itself to be above all savoury, fresh and pleasantly lively, with a lively acidity that balances the softness and gives harmony to the sip. The structure is good, the persistence long, with a slight almondy hint on the finish that invites another sip. Excellent as an aperitif, thanks to its freshness and inviting taste, it goes well with delicate hors d'oeuvres, fish dishes, shellfish and vegetables. Also excellent with fresh cheeses and light first courses.

It is offered here by Poderi Parpinello, a family-run winery known for its dedication to quality. The Vermentino grapes come from the company's vineyards in Alghero, in the north-west of Sardinia. An area characterised by a warm and sunny climate, with strong Mistral winds that favour optimal ripening of the grapes. The soils are sandy and calcareous, rich in minerals and give the wine unique characteristics. A pure Vermentino, the harvest takes place between the end of August and the beginning of September. Vinification begins with destemming and soft pressing. Fermentation takes place in stainless steel at a controlled temperature to preserve the freshness and vivacity of the initial fruit. This is followed by an ageing period of 6 months in stainless steel, which allows the wine to mature and develop greater complexity. Brilliant straw yellow in colour with greenish highlights, the nose is intense and fragrant, with aromas of yellow fruits, such as peach and pear, combined with delicate citrus notes, such as lime and citron. Then mineral nuances that give the wine a fresh and refined character. In the mouth, it conquers with its freshness and minerality. Medium structure and a pleasant, harmonious sip.
