Carbonare is - technically - an Additional Geographical Unit. In other words, a well-defined vineyard from which high quality grapes are sourced and used for the production of this Soave Classico. Or rather, as Inama's technicians say, 'their most modern interpretation of Soave Classico'. The vineyard, still cultivated with the classic Veronese Pergola system, is located in the Carbonare area and enjoys an eastern exposure. The soil is typical for the area, namely volcanic and capable of imparting a subtle minerality to the wines produced there. 100% Garganega, the vines are between 45 and 60 years old and are located at an altitude of approximately 250 metres above sea level. Once in the cellar, the grapes are gently pressed and remain in skin maceration for 3 to 12 hours. Alcoholic fermentation follows, in steel, after which batonnage is carried out monthly for a year. We speak of Kretzer referring to rosé born from Lagrein grapes, a technique that was already widespread in the Middle Ages. Le Pressoir Rouge presents itself in the glass in a luminous purple-red colour, with a 'mouth-watering nose' of small red fruits. In the mouth, it is persuasive, soft and fresh. An extremely drinkable wine, it is best served between 13 and 15°C. It goes well with vegetables and cured meats. However, it is also excellent as an 'off-the-beaten-path' aperitif.

Erbaluce is a native Canavese vine, cultivated for centuries in this area. Its compact bunches and thick skin give fresh, mineral wines of great finesse. This is also due to an ideal terroir, rich in sandy and calcareous soils, where the cool and ventilated climate favours the slow ripening of the grapes. The beneficial temperature fluctuations between day and night accentuate the minerality of the wine, giving it a distinct freshness and unmistakable personality. Anima is the result of rigorous and respectful processing of the grapes. The bunches, carefully selected in the vineyard, are harvested by hand and delivered to the winery in crates. Fermentation takes place at low temperature in stainless steel tanks, preserving the freshness and primary aromas of the grape variety. This is followed by an ageing period of 6 months on fine lees, which gives Anima complexity and harmony. Brilliant straw yellow in colour, with greenish highlights, the nose reveals a delicate and fragrant bouquet. Hints of green apple, exotic fruit, wild flowers and aromatic herbs. In the mouth, however, Anima reveals itself to be above all savoury, fresh and pleasantly lively, with a lively acidity that balances the softness and gives harmony to the sip. The structure is good, the persistence long, with a slight almondy hint on the finish that invites another sip. Excellent as an aperitif, thanks to its freshness and inviting taste, it goes well with delicate hors d'oeuvres, fish dishes, shellfish and vegetables. Also excellent with fresh cheeses and light first courses.

A wine of character, full-bodied and with a warm finish. These are the words chosen by the producers to describe this interesting Pinot Noir produced in the Slovenian hills. Careful processing of the grapes, harvested by local vintners at the perfect stage of ripeness, results in an interesting red with beautiful personality, perfect on more than one occasion. Deep ruby red with garnet reflections, this Pinot Noir offers a very typical bouquet, characterized by notes of small red fruits and berries. Perfect then is the correspondence with what is perceived in the mouth. Again, in fact, it is easy to discern notes of ripe fruit that are well complemented by ripe, subtle tannins. The body is full and the finish long and warm. A red that, as noted above, proves perfect on more than one occasion. Excellent, for example, to accompany a tasty duck breast. From the sunny island in the centre of the Mediterranean comes this Ala Blanca, Vermentino di Sardegna DOC, a white wine balanced between freshness, minerality and vivacity. It is offered here by Poderi Parpinello, a family-run winery known for its dedication to quality. The Vermentino grapes come from the company's vineyards in Alghero, in the north-west of Sardinia. An area characterised by a warm and sunny climate, with strong Mistral winds that favour optimal ripening of the grapes. The soils are sandy and calcareous, rich in minerals and give the wine unique characteristics. A pure Vermentino, the harvest takes place between the end of August and the beginning of September. Vinification begins with destemming and soft pressing. Fermentation takes place in stainless steel at a controlled temperature to preserve the freshness and vivacity of the initial fruit. This is followed by an ageing period of 6 months in stainless steel, which allows the wine to mature and develop greater complexity. Brilliant straw yellow in colour with greenish highlights, the nose is intense and fragrant, with aromas of yellow fruits, such as peach and pear, combined with delicate citrus notes, such as lime and citron. Then mineral nuances that give the wine a fresh and refined character. In the mouth, it conquers with its freshness and minerality. Medium structure and a pleasant, harmonious sip. A wine that impresses with its simplicity and elegance. An aperitif par excellence, it goes well with fish dishes, fresh cheeses and grilled vegetables.

Its simple, white label, with the words BORGOGNO in capital letters prominently displayed at the top, is already a guarantee for fans of the good red wines of Piedmont. We are, after all, in the presence of a historic Langhe company, whose wines are awarded and praised every year by international wine critics. In this case, in particular, we are dealing with a very interesting Barolo that comes from the union of the 5 cru vineyards owned by the company: Liste, Cannubi, Fossati, Cannubi San Lorenzo and San Pietro delle viole. An example of elegance and power at the same time. A true Barolo of yesteryear. In the cellar the grapes are fermented spontaneously, without added yeasts, in cement tanks for about 12 days. This is followed by a long submerged cap maceration phase that lasts at least 30 days and, after racking, malolactic fermentation is triggered. For the maturation phase, Borgogno grapes 4500-litre Slavonian oak barrels, where the wine rests without being disturbed for at least 4 years. This is followed by a further 6 months of bottle ageing. It is the wine of the feast, the one to be served with traditional dishes, such as the classic ravioli with meat sauce or with a mixed boiled meat. Obviously the meat 'must' be 100% Piedmontese.
