The Father of all wines, our most representative wine. These are the words used on the Cantina Sansilvestro website to present the Barolo DOCG Patres. It is normal, therefore, that in this case the expectations are particularly high. A symbol and spokesman for the Langhe, Barolo needs time to open up and express itself fully. And the Patres is a perfect example. Already good today, after a long period of maturation in the cellar, it is a red wine with character capable of evolving for a long time yet. All you have to do is store it well and not be in a hurry to uncork it at the first opportunity. 100% Nebbiolo, as is normal, the grapes used for its production come from the 11 communes of the denomination. After vinification, for the delicate phase of refinement, Patres remains for a minimum of 38 months in the cellar, of which at least 18 months in large Slavonian oak casks. Garnet red and elegant, the nose has hints of spices and dried flowers. In the mouth, however, it is velvety, full and enveloping, characterised by the presence of sweet tannins. A super intense wine, it requires a weighty combination. Excellent, for example, with game or a tasty braised veal. It goes well with stewed meats in general but also with mature cheeses.

The Riserva mention is assigned to those wines, Chianti Classico in this case, that for the particular quality of the grapes deserve an additional period of maturation in the cellar. More months in wooden barrels guarantee, in fact, a higher concentration and a higher quality. In the case of this Clemente VII of Castelli del Grevepesa, it is a 100% Sangiovese, harvested by hand, which after vinification is divided into two lots. About half of the wine is put into Slavonian oak barrels where it rests for at least 24 months. The other half, however, is put into barriques for only 12 months. Only at the end of this long wait, the wine is finally reassembled and bottled for the last period of refinement in glass before release. Very intense ruby red colour, the nose reveals marked aromas of berries and spices. In the mouth it is full, with excellent structure. A balanced and harmonious wine with a persistent aftertaste.

The word 'Bussia' indicates that this Barolo is produced with grapes from one of the most prestigious 'cru' in the region. A restricted production area that is particularly suited to the Barolo DOCG denomination. We are in the municipality of Monforte d'Alba, in the province of Cuneo. Here the soils are calcareous-clayey and rich in minerals, giving the wine structure and complexity. It is no coincidence that the wines produced from this cru are renowned for their elegance, complexity and capacity for ageing. Cantina Belcolle's Barolo DOCG Bussia, therefore, can rightly be defined as a Piedmontese oenological excellence. A prestigious red wine produced from grapes harvested in the Belcolle vineyards located in the upper part of the cru, with a south-southwest exposure that guarantees excellent sunshine and balanced ripening of the grapes. Vinification follows a rigorous process. The grapes ferment in stainless steel tanks at a controlled temperature for about 22-25 days. This is followed by post-fermentation maceration to extract colour and tannins. The wine then matures for 24 months in large oak barrels, where maturation is completed and complex aromas develop. A further refinement of 6 months in the bottle makes the wine ready to be tasted. The nose shows an intense and refined bouquet, characterised by notes of small red fruits, plums, cherries and spices. To these are added hints of dried flowers, liquorice and cocoa, with a mineral background that lends complexity. In the mouth it is soft and velvety, with well-integrated tannins and a pleasant freshness that makes it balanced and easy to drink. The structure is important and the aromatic persistence is long, with a mineral and lingering finish. A meditation wine, on the table it accompanies main courses of red meat and game, first courses with mushrooms and mature cheeses.

In the mouth, however, Anima reveals itself to be above all savoury, fresh and pleasantly lively, with a lively acidity that balances the softness and gives harmony to the sip. The structure is good, the persistence long, with a slight almondy hint on the finish that invites another sip. Excellent as an aperitif, thanks to its freshness and inviting taste, it goes well with delicate hors d'oeuvres, fish dishes, shellfish and vegetables. Íchnos is a Greek word meaning footprint. It stems from the winery's desire to promote a great vine from the Campi Flegrei area. We are talking about the so-called pér 'e palummo, or Piedirosso, in this case cultivated on a free-range basis. An indigenous black grape variety from Campania, it enjoys an enviable microclimate in this little corner of paradise, about 130 metres above sea level. Its curious name derives from the red colour that the vine-shoot takes on when it is ready to be harvested and which may remind one of a pigeon's foot. In the glass it has a beautiful bright ruby red colour. The nose recalls hints of cherry, then notes of aromatic herbs, hints of liquorice and black pepper. Forentum Aglianico del Vulture DOC originates from the volcanic soils of Lavello, in Basilicata. This municipality, identified by the ancient Romans as the ancient Forentum, has a millennial history linked to viticulture. This is testified by the words of classical authors such as Horace and Pliny. Lavello lies at the foot of Mount Vulture, an extinct volcano that has shaped not only the landscape, but also the composition of the soil. Here, at an altitude of around 400 metres above sea level, the Aglianico vines find perfect conditions for growing. The temperate climate, with hot, dry summers and cold winters, contributes to a slow and regular ripening of the grapes, which are harvested between the end of October and the beginning of November, guaranteeing a perfect concentration of sugars and aromas. Forentum is made exclusively from 100% Aglianico grapes. After a maceration on the skins for about 18 days at a controlled temperature, the wine is transferred into 225-litre French oak barrels, where it is aged for about 12 months. Ageing then continues in the bottle for at least 10 months, developing a unique complexity and balance. Bright ruby red in colour, the nose reveals an intense bouquet, with notes of fruit under spirits, accompanied by toasted hints of wood and spices such as black pepper and vanilla. In the mouth it is full-bodied and structured, with a well-defined tannic texture. The overall balance is perfect, while the finish is long and persistent with an aftertaste reminiscent of ripe fruit and spices. Thanks to its robust structure and long maturation in wood, Forentum can evolve well for more than 10-15 years, developing complex tertiary aromas such as leather, tobacco and undergrowth. It goes well with rich, structured dishes.

Carbonare is - technically - an Additional Geographical Unit. In other words, a well-defined vineyard from which high quality grapes are sourced and used for the production of this Soave Classico. The vineyard, still cultivated with the classic Veronese Pergola system, is located in the Carbonare area and enjoys an eastern exposure. The soil is typical for the area, namely volcanic and capable of imparting a subtle minerality to the wines produced there. 100% Garganega, the vines are between 45 and 60 years old and are located at an altitude of approximately 250 metres above sea level. Trepat is a grape variety originating in the Spanish region of Catalonia, and more specifically in the Conca de Barberì area in the province of Tarragona. Its name is believed to derive from the Catalan word 'trépate', meaning to climb or climb, in reference to the particular bearing of the ripe bunches on the plant. A red grape variety, it is mainly used to produce dry red wines. In this case, however, Casa Rojo uses it as the basis for a Cava sparkling wine. It starts with a manual harvest in the first week of September, when the grapes have reached an optimal degree of ripeness. In the cellar, there is a quick 2-hour maceration on the skins, which allows sufficient extraction of aromas and colour. This is followed by soft pressing and fermentation, carried out in this case in stainless steel tanks at a low temperature. Secondary fermentation takes place in the bottle, according to the Metodo Classico. Pale pink colour with brilliant golden reflections, the bubble is delicate and small. Aromas of good intensity, with aromas of small red fruits combined with citrus fruits, butter and delicate pastry notes. On the palate it is fruity and creamy, with hints of liquorice and a good acidity that gives it a fresh and persistent finish. The black sheep of bubbles! Limited production.
