Thanks to its robust structure and long maturation in wood, Forentum can evolve well for more than 10-15 years, developing complex tertiary aromas such as leather, tobacco and undergrowth. In accordance with strict production regulations, this red wine comes from a pure processing of Sangiovese grapes from the Montalcino hills. Once in the winery, processing begins with a long maceration on the skins, during which frequent pumping over is carried out. After racking, the delicate period of maturation in wood begins, which, in the specific case of this label, lasts for about 40 months in large 50-hectolitre Slavonian and French oak casks. After bottling, the wine then rests in the cellar for at least a further 4 months before being released for sale. A wine of great expressive rigour, with a noble character, it is endowed with a natural elegance, daughter of its terroir. In the glass it has a beautiful intense ruby red colour tending towards garnet. The nose reveals a pleasantly fruity bouquet, with clear hints of toast and balsamic notes. Intense, complex and fine, it reveals great structure in the mouth. An elegant and harmonious wine, it enjoys a particularly pleasant and persistent finish. In the Treviso dialect, the word 'serrai' means 'serraglio', i.e. the place where farmyard animals were once kept. Today, in the Serrai area, near the birthplace of the Vettoretti family and the La Tordera winery, one of the most versatile sparkling wines in the range is produced, which has already won awards from the most demanding wine critics. This is Serrai Extra Dry, the result of green viticulture. The vineyard is located on the slopes of the Vidor hills, at a height of about 200 metres above sea level. A naturally ventilated and sunny area, where the Glera, Bianchetta, Verdiso and Perera grapes are able to reach perfect ripeness, developing fine and intense aromas. The grapes are harvested entirely by hand and the cold chain is strictly adhered to in order to safeguard the health of the grapes. In the cellar, the addition of sulphites during fermentation is kept to a minimum and this allows the production of a healthier and still pleasant sparkling wine. Bright straw yellow, this interesting Extra Dry has intense and pleasant aromas reminiscent of citrus fruits and fresh flowers. In the mouth it is pleasantly soft and well balanced. Excellent as an aperitif, it is a versatile and intriguing bubble.

Grapes harvested in the hamlet of Vergne, 380 metres above sea level, on clay soils exposed to the south-east and south-west. Here, a special microclimate, characterised by strong temperature variations between day and night, favours optimal ripening of the grapes, giving the wine structure and complexity. 100% Nebbiolo, after manual harvesting, the bunches are pressed in vertical steel vats to begin alcoholic fermentation, which lasts 30-40 days, with maceration on the skins. In spring, the wine spontaneously undergoes malolactic fermentation and is then aged for between 18 and 36 months in large Slavonian oak casks. Transparent ruby colour with garnet hues, on the nose, it is clearly reminiscent of violets, rose hips, cloves and cinnamon, joined by intense notes of dark jam, resin and blond tobacco. In the mouth, it conquers with its harmony, freshness and elegance. A complex and long-lived wine that offers an unforgettable sensory experience.

Freshness and elegance. These are the words that sum up the Terre Siciliane IGT Hanami, a fine rosé wine offered here by Cantine Fina. A wine that conquers from the first sip for its freshness and harmonious taste. Produced from Merlot and Cabernet Sauvignon grapes, this rosé represents a modern and refined interpretation of a style - that of rosé wines - that is gaining ever greater consensus among wine lovers in Italy. Made with grapes from vineyards located in central-western Sicily, at an altitude of 850 metres above sea level, where the climate and soil conditions are simply ideal for these Bordeaux-derived varieties. Harvesting takes place in mid-August. In the cellar, the grapes are vinified in stainless steel at a controlled temperature. The must is then racked into steel vats filled with nitrogen. Maturation in stainless steel follows with a period of about three months on the lees. Pale pink in colour, lively and brilliant, the nose reveals an intense and complex bouquet, with floral notes of peach, jasmine and orange blossom, and vegetal hints of boxwood. Trepat is a grape variety originating in the Spanish region of Catalonia, and more specifically in the Conca de Barberì area in the province of Tarragona. Its name is believed to derive from the Catalan word 'trépate', meaning to climb or climb, in reference to the particular bearing of the ripe bunches on the plant. A red grape variety, it is mainly used to produce dry red wines. In this case, however, Casa Rojo uses it as the basis for a Cava sparkling wine. It starts with a manual harvest in the first week of September, when the grapes have reached an optimal degree of ripeness. In the cellar, there is a quick 2-hour maceration on the skins, which allows sufficient extraction of aromas and colour. This is followed by soft pressing and fermentation, carried out in this case in stainless steel tanks at a low temperature. Secondary fermentation takes place in the bottle, according to the Metodo Classico. Pale pink colour with brilliant golden reflections, the bubble is delicate and small. Aromas of good intensity, with aromas of small red fruits combined with citrus fruits, butter and delicate pastry notes. On the palate it is fruity and creamy, with hints of liquorice and a good acidity that gives it a fresh and persistent finish. The black sheep of bubbles! Limited production.
