Produced by Donatella Cinelli Colombini at Fattoria del Colle, in the high hills of southern Tuscany, this wine is the child of two indigenous grape varieties: Sangiovese, the undisputed king of Tuscany, and Foglia Tonda, a grape variety abandoned for over a century. A very rare grape variety, in total there are less than twenty hectares of this variety, it produces powerful wines and for this reason it is the ideal companion for Sangiovese. Together they create a unique wine, different from all the others but with absolutely Tuscan characteristics.

It is certainly no coincidence that the Primitivo grape variety is the most widely cultivated in Apulia. Native to the 'heel of our boot', this vine is capable of expressing itself in a thousand different ways, adapting from time to time to different climates, soils and exposures. In the Manduria area, then, Primitivo finds its ideal habitat, giving life to wines of rare pleasantness and complexity. Like this Elegia, Primitivo di Manduria DOC Riserva, produced by Produttori di Manduria. It comes from grapes harvested in vineyards between 35 and 50 years old, some of which are still cultivated using the traditional alberello system which, as experts know, allows low yields but very high quality. Harvested during the second half of September, the grapes are vinified in red, with a maceration period lasting about two weeks. After racking, the wine then matures for about a year in French oak barriques. Intense ruby red in colour, the nose is pleasantly elegant, with a distinct fruit component reminiscent of wild blackberries, prunes, raspberry jam and blueberries. Nutmeg, vanilla and cloves anticipate memories of aromatic herbs and leather. Hints of toasted almonds and wilted violet petals flank the typical hints of undergrowth. In the mouth it is characterised by a nice bright acidity, with dry tannins and a pleasant persistence. Excellent with strong-flavoured dishes, such as wild boar, but also roasts and braised meats.

We are used to thinking of Cabernet Sauvignon as a grape variety grown in our latitudes, rustic just enough, capable of expressing itself in wines of the highest level. Bodega La Rural, in this case, takes Cabernet Sauvignon plants all the way to the foothills of the Andes, south of the city of Mendoza. Here the special microclimate allows for the harvest of grapes of exceptional quality, capable of producing typical wines with an unmistakable stylistic signature. Bodega la Rural offers this San Felipe Roble Cabernet Sauvignon, the child of careful vinification of the best grapes that arrived at the winery after the harvest. Temperature-controlled fermentation and as many as 18 days of maceration allow color and fragrance to be extracted, which is then refined through slow maturation in American oak barrels. This delicate phase lasts for about nine months, resulting in a wine characterized by a beautiful deep red color, with clear notes of red and dark fruits and sweet spices. In the mouth, then, it reveals itself in all its power. Good structure, pleasant tannin, this red enjoys a long persistence that prolongs the pleasure of each sip for several seconds. Guado al Tasso is the marvellous Bolgheri estate of Marchesi Antinori. Here, Sangiovese gives way, for once, to the great international grape varieties, originally from the Bordeaux area, namely Cabernet Sauvignon, Merlot, and Cabernet Franc. The particular climatic and soil conditions of the Tuscan coast, in fact, have proved to be particularly suitable for the production of wines produced in a "French" style and matured in small oak barrels. Guado al Tasso is the result of a careful selection, first in the vineyard and then in the cellar, of the grapes harvested at two different times. All this is to ensure that only perfectly ripe grapes reach the fermentation tanks. Each variety is vinified separately. Fermentation and maceration take place in temperature-controlled stainless steel tanks and, after racking, the wine is transferred directly into barriques, where malolactic fermentation takes place. Only in February of the year following the harvest are the best batches selected and blended into the final blend. At that point, the wine is transferred back into new French oak barriques where it continues to age until bottling. Guado al Tasso 2018 presents itself in the glass with a beautiful intense ruby red colour. The nose reveals attractive notes of sweet spices and small ripe dark fruits, liquorice root, leather and tobacco. In the mouth the quality of the tannins is very graceful: silky on the entry and vibrant on the finish. A wine characterised by great balance, pleasantness and harmony. Perfect with main courses of meat, it is a wine that is especially appreciated if the steak is cooked slowly on the grill.

This is also the case with this Champagne Brut Rosé, proposed by Brimoncourt. 40% Pinot Noir, of which around 18% is vinified in red to give structure and colour, 35% Chardonnay, which lends elegance and finesse to the cuvée, and 25% Pinot Meunier, which gives the blend an unmistakable fruity profile. Vinification takes place in stainless steel vats and the base wines, after blending and bottling, rest in contact with their yeasts for at least 4 years, before disgorging and dosage (8 grams/litre). In the glass it has a beautiful salmon and rose gold colour, with a delicate pomegranate hue. The effervescence is bright and fine and introduces an aroma of strawberries and blackcurrants, with subtle hints of paprika. In the mouth, it is juicy and fresh, with hints of sweet spices and a cherry confit finish. Good today, this rosé has the capacity to mature for a few years in the cellar. It should be served with savoury dishes such as roast pigeon or medium-aged cheeses. Thanks to its moderate sweetness, this rosé from Champagne also lends itself to accompanying desserts that are not excessively sweet.

Obviously it is a pure Nebbiolo, according to the regulations, which ripens late, even in the second ten days of October. After all, that's the way Nebbiolo is, it likes to be waited for and keeps the producers in suspense for a long time, looking up to the sky and hoping that the good weather will hold out just long enough not to ruin the entire production. After pressing the grapes, fermentation and maceration in stainless steel tanks, this Barolo DOCG evolves for at least 18 months in barriques, followed by a few months of refinement in the bottle in the underground cellars. A bold and compact ruby red, with garnet reflections that tend towards orange over time, the bouquet is intense and broad. There are fruity notes of jam, dried plums and cherries in alcohol alongside spicy sensations of cinnamon, vanilla and tar. In the mouth it is rich in structure, with a long aromatic persistence. Its tannin envelops the mouth and makes it the right wine to serve when main courses of red meat, such as braised meats and medium to mature cheeses, come to the table.

The varieties used are Syrah (50%), Cabernet Franc (30%) and Merlot (20%). The grapes are harvested manually in small crates to preserve their integrity. The wine then matures for 18 months in 500-litre French oak tonneaux with different toastings, acquiring complexity and harmony. Finally, it rests for a further 6 months in the bottle before being marketed. In the glass, Coro is an intense red colour with brick red highlights. On the nose, notes of blackberry, plum and a delicate spiciness stand out, well integrated with the typical hints of wood. In the mouth it reveals a nice body, with elegant and complex tannins accompanying a long, clean finish. Thanks to its structure and ageing in wood, Coro can evolve for 10 years or more. The nose reveals scents of almond, biscuit, bread crust and yellow fruit that is still crunchy. In the mouth it is rich, creamy and elegant. Fresh and satisfying thanks to its delicate mineral notes. Proposed in the Brut version, therefore pleasantly dry, it is the ideal wine for those who want just one bottle from starter to main course. Perfect with fish hors d'oeuvres, it also goes well with white meats and shrimp or vegetable tempura.

Although the DOC was only created in 2010, the history of Ripasso goes back a long way. The oenological technique used involves the "ripasso" of Valpolicella wine on the fermented marc of the dried grapes used for the production of Amarone and Recioto. Originally, this involved a quick passage of the vintage Valpolicella over the marc. Today, however, there is a tendency to prolong this contact more, causing a second slow fermentation and obtaining a wine that is decidedly richer than the original one. Valpolicella Ripasso DOC Superiore di Santa Sofia is made from grapes harvested in the hillside vineyards located in the municipalities of Marano di Valpolicella, Fumane and San Pietro in Cariano. As is typical for the company, it starts with a cut of Corvina and Corvinone in clear majority, to which is added a share of Rondinella of about 30%. After 9 months of maturation in large 50-hectolitre casks and at least 6 months in the bottle, a wine of a beautiful, clear and very bright ruby colour is revealed, with a ruby-garnet rim that holds up well. On the nose, there are definite hints of black cherries in alcohol, prunes, underbrush, cloves, fine oak, cinnamon and liquorice root. A broad, enveloping and aristocratic olfactory profile. In the mouth, on the other hand, it displays fine concentration, a silky, velvety tannic texture and a very dynamic acidity. All, however, perfectly balanced by an important alcoholic warmth. Long and clean, its finish makes it perfect for various pairings. Above all, pasta with meat sauces, semi-mature cheeses and cured meats.

Let's start at the appellation. The one proposed here is a red that belongs to the Rioja AOCa, one of the most prestigious (and trendy) in Spain. It is proposed by Qui Artis Bodega, a fine establishment capable of combining tradition and innovation in a perfect way. It comes from a processing of Tempranillo and Graciano grapes, aged in French oak barrels. In the glass, it is a beautiful bright red color with purplish reflections. The nose surprises with captivating vanilla and pastry notes, while red fruit notes appear in the background in good balance with the wood. Finally, the mouth reveals a red of good character, with velvety, rounded tannins and good natural acidity. Medium body and smooth finish, roasted notes return due to its aging in French oak barrels. Ideal for accompanying all types of red meats, including more flavorful ones such as lamb and game. Also excellent with mildly aged cheeses. Good today, if stored properly in a cool, dark and quiet place, it will evolve well in the bottle for a few years.

On the label of this wine, which is very elegant by the way, we can read: Vallée d'Aoste Torrette Superieur élevé en fût de chêneen, that is, aged in oak barrels. It is not difficult to imagine, therefore, what kind of wine it is. It is made from a blend of three different grape varieties. Petit Rouge for 70%, then Fumin for 25% and Cornalin for the remaining 5%. Three vines that do well in the Aosta Valley because they are not afraid of its cool climate but require excellent exposure to absorb all they can from the sun that shines during the day. The grapes used for the production of this Torrette Sup. come from four different parcels located in the communes of Saint Pierre, Villeneuve, Sarre and Charvensode. We are well over 700 metres above sea level and in some cases the vineyards even touch 900 meters. To the limits of Italian viticulture. Matured in exhausted barriques for 12 months, this red wine appears in the glass in a beautiful, dense ruby colour, with still purple hues that reveal its young character. The nose reveals intense aromas of spice, blackberry, jam and underbrush. In the mouth, however, it is well-structured and rewarding. There are clear notes of vanilla and incense that accompany herbaceous sensations. The tannin is there and you can feel it but it does not disturb at all since it is well ripe and polished. The finish is also long and pleasant, leaving a pleasantly fruity note in the mouth.

There is no better way to celebrate the short but intense history of Franciacorta than to uncork a bottle produced right where the famous Lombardy sparkling wine was born. The year was 1961. The oenologist was Franco Ziliani and the cellar was that of the famous Guido Berlucchi. The one proposed here is the Brut cuvée of a line dedicated by the historic Corte Franca winery precisely to that invention. Chardonnay in clear predominance with a hint of Pinot Noir, the grapes come from the most suitable vineyards in the 19 communes of Franciacorta. Soft mousse with good persistence, thanks to the fine, continuous perlage, this sparkling wine has a beautiful straw-yellow colour with greenish highlights. The nose is fresh, rich and elegant. Notes of white-fleshed fruit and citrus scents are also found on the palate. In the mouth it is fresh, well supported by pleasant acidity, but also soft and well balanced. Perfect as an aperitif, it also does not disdain a place on the table. For a territorial pairing, we can pair it with classic casoncelli, the tasty traditional stuffed ravioli, or with a lake fish dish, such as risotto with perch or a char fillet. But wine is versatile and can adapt to a thousand situations. The only limit might be our imagination.
