Le Casematte is a beautiful winery located in one of the most evocative areas of Sicily. We are in the province of Messina, where it benefits from a unique terroir. In fact, the vineyards are located on hills that enjoy sea breezes and abundant sunshine, creating ideal conditions for growing high quality grapes. This is where Sicilia DOC Rosso Peloro was born, a blend of two indigenous grape varieties: Nerello Mascalese (70%) and Nocera (30%). The Nerello is known for its elegance and ability to best express the terroir. For its part, Nocera, an ancient local variety, adds structure and depth to the finished wine, with its soft tannins and aromas of dark fruit and liquorice. Fermentation takes place in truncated conical steel vats, with punching-down carried out five times a day for a month, ensuring optimal extraction of colour and tannins. After pressing the skins, the wine is left on the fine lees until January of the following year, developing aromatic complexity and structure. This is followed by blending and maturation in steel with a light passage in wood, using new tonneaux for three months, adding subtle notes of vanilla and spices without overpowering the character of the wine. Bottle ageing for three months completes the process, allowing the wine to reach its full expression. A brilliant ruby colour with violet hues, the nose offers a broad and persistent bouquet, with aromas of small red fruits, such as cherries and wild strawberries, accompanied by floral notes of violet, carob and liquorice. There are also spicy hints of black pepper and cloves. In the mouth, it is fresh and rich in fruit, with a dense and nervous tannic texture that gives structure and longevity. The vibrant acidity balances the richness of the fruit, resulting in a long, harmonious finish.

When the climate becomes hot, as is often the case in Puglia, to cultivate grapes we often resort to the ancient folk wisdom that the vine must grow low, ripening its clusters close to the ground, to benefit from even the slightest coolness from the earth. The traditional espalier system is therefore preferred to the modern espalier. Beautiful to look at and effective in terms of the quality produced. But very, very tiring for those who have to take care of it. Every operation, in fact, must be carried out manually, without the help of any machine. Giustini offers this Acinorè, 'Old Vines'. This is a Primitivo di Manduria DOC, made from grapes cultivated in the Alberello style. A living heritage that the company preserves, protects and is committed to enhancing. Acinorè, in fact, represents the best interpretation of Primitivo proposed by the winery. Harvested - obviously - by hand, after destemming and pressing the maceration period lasts about 15 days, followed by alcoholic fermentation and a long period of maturation in French oak barriques. This reveals a wine characterised by a beautiful, intense ruby red colour, with complex aromas reminiscent of well-ripened red and dark fruit. Then vanilla and even chocolate. In the mouth it is full, soft and balanced. An important red, the kind that requires a dedicated menu. Very tasty first courses and meats subjected to long cooking. This is the only way to do it justice. Or, as a valid alternative, it can also be served away from meals, as a meditation wine.

Cuvée, Spumante Metodo Classico Brut by Nino Negri, comes from the spectacular vineyards of Valtellina Superiore, located along the slopes of the Retiche Alps in the province of Sondrio. Here the vineyards, located at an altitude of between 300 and 550 metres above sea level, benefit from optimal exposure. The soils are rocky and the steep terraces are supported by dry stone walls. The climate, with warm, sunny summers and cold winters, accompanied by considerable daily temperature fluctuations, contributes to the grapes' aromatic complexity. This Cuvée is produced from predominantly white grape varieties, carefully selected to guarantee quality and finesse. Harvesting takes place in late summer, when the grapes have reached perfect ripeness. After manual harvesting, the grapes undergo soft pressing, followed by static decantation of the must. The clear must is then sent for fermentation at a controlled temperature. At the end of fermentation, the wine stays on the fine lees for at least six months, enriching itself with aromas and structure. In June, the wine is then bottle-fermented, followed by at least nine months of ageing on its lees. A fine, persistent perlage, the nose reveals a fine, well-expressed bouquet, with distinct fragrances of bread crust and pleasant hints of apple and green bay leaf. On the palate, it is dry, full, savoury and clean, with extraordinary elegance and a long persistence. Ideal as an aperitif, it is also perfect with delicate foods. It pairs well with fish dishes, seafood, carpaccio and tartare, as well as grilled vegetables and fresh cheeses.

Today we are in the heart of Monferrato, amidst sinuous hills and sun-kissed vineyards. This is the birthplace of this Nizza DOCG by Oddero, a red wine that represents the most authentic soul of Piedmont. 100% Barbera, the grapes come from the vineyards of Scrimaglio, at 250 metres above sea level, this wine benefits from a unique terroir, characterised by calcareous-clayey soils with sandy components that give the grapes a decisive and mineral character. The vineyards here enjoy a privileged southern exposure, which maximises sunshine and favours perfect ripening of the grapes. The altitude, combined with the composition of the soil, gives the Barbera a marked acidity that wisely balances the richness of the fruit and gives the wine a crisp freshness. In addition, the old vines, aged between 30 and 60 years, provide grapes that are concentrated and rich in extracts, resulting in a deep and long-lived wine. Harvested by hand, with careful selection of the ripest and healthiest bunches, fermentation and maceration take place in stainless steel for about 15 days, preserving the freshness and liveliness of the aromas. Malolactic fermentation follows, which softens the tannins and gives the wine a more harmonious profile. Finally, ageing in 40 and 65 hectolitre oak casks for 16 months gives Oddero's Nizza DOCG complexity, elegance and a long capacity for evolution. An intense ruby red colour, the nose seduces with an enveloping bouquet of ripe red fruit, such as cherries and plums, enriched by notes of bitter cocoa, coffee and sweet spices. With age, tertiary hints of leather, liquorice and undergrowth emerge, enhancing the aromatic complexity of the wine. In the mouth, however, it surprises with its firm structure and rich body. The vibrant acidity expertly balances the fruit and with the soft, velvety tannins creates a harmonious and persistent sip. Ideal with braised or baked red meats, game and mature cheeses. Excellent with bagna cauda, a typical Piedmontese winter dish of anchovies, garlic and oil.

Cultivated using the traditional alberello system, Moscatello Selvatico is known for producing aromatic and fresh wines. Harvesting takes place between late August and early September. After the harvest, the grapes are quickly transported to the cellar for destemming. The bunches are cooled to 10° and undergo a short maceration in the press for 4-6 hours, a crucial step to extract the aromas from the skins. The flower must obtained is then fermented in stainless steel and the wine matures for 40 days on the lees before being bottled. After harvesting, the grapes are gently pressed and the must decanted statically to separate solid particles. Fermentation takes place at a controlled temperature to preserve the fresh and delicate aromas of the fruit. The wine is then aged in stainless steel on the fine lees until the end of October, helping to develop complexity and depth. Once the ageing process is complete, the wine is bottled. The Aromatico has a brilliant straw yellow colour. On the nose, it offers intense aromas of peach, almond, apricot and orange blossom, accompanied by a distinct minerality. Ca' del Bosco's Cuvée Prestige Rosé comes from the separate vinification of 80 per cent Pinot Noir and 20 per cent Chardonnay grapes. All grapes are hand-picked in small crates, graded and chilled. Each bunch is selected by expert eyes and hands, and then benefits from the special bunch washing system developed by the Franciacorta winery. The Pinot Noir grapes, once transported over the vat, are separated from the stalks and the berries are dropped into them by gravity. Thus begins the 'pink' maceration phase lasting 24-36 hours, to obtain that particular shade of colour that distinguishes this Franciacorta DOCG. Then the must, separated from the skins, ferments in small barrels and steel vats at a controlled temperature. The Chardonnay grapes, on the other hand, are vinified in the traditional way, with pressing of the whole bunches and only the best fractions of must are then fermented in vats. After 7 months of ageing, the cuvée is created by blending the Pinot Noir and Chardonnay wines. This is bottled and matured on the lees, at a constant temperature of 12°C, for an average period of 30 months. Dégorgement takes place in the absence of oxygen, using a unique system, invented and patented by Ca' del Bosco. This avoids oxidative shocks, further additions of sulphites and makes its Franciacorta wines purer, and more long-lived. Cuvée Prestige Rosé Edition 46 is distinguished by its salmon-pink colour, delicate yet brilliant, with golden reflections and a fine, elegant effervescence. The nose reveals a rich and seductive bouquet, with aromas of red fruits such as strawberries, raspberry and cherry, accompanied by floral notes of rose and peony. This is followed by nuances of citrus fruits and a light roastiness that provides intriguing complexity. In the mouth, it is fresh and lively. The acidity is well balanced and contributes to a pleasant and refreshing drink. Ripe red fruit flavours intertwine with notes of bread crust and a hint of spice, ensuring a long and pleasantly persistent finish that leaves an elegant and harmonious memory.

Situated 350 metres above sea level, the estate benefits from a unique microclimate, characterised by the protection of the Lepini Mountains and the gentle sea breeze that caresses the vines. This combination of climatic factors allows the grapes to ripen in a balanced way, developing an aromatic complexity and structure that are reflected in the wines produced. Lazio Rosso IGT Poggio Santa Lucia is made from 100 per cent Nero Buono grapes, an indigenous grape variety of Latium known for its ability to produce robust and intense wines with deep colouring and distinctive aromatic richness. Vinification, in red, involves frequent punching-down and daily pumping-over for approximately 15-20 days at a controlled temperature, a process that allows for the perfect extraction of tannins and aromatic compounds. After fermentation, the wine is matured on the noble lees for about 90 days, a step that enriches the body and complexity of the wine. It then matures for about 2 months in second-passage French oak barrels, where it acquires delicate woody notes. Finally, it is bottled and left to refine in the bottle for a further 120 days before being released for sale. To the eye, Poggio Santa Lucia shows an intense ruby red colour. The nose is elegant and fruity, with clear notes of cherry and morello cherry dominating the aromatic profile. In the mouth, on the other hand, it is rich and full-bodied, rightly tannic but never aggressive, offering a nice structure and pleasant persistence. The balance between tannins, acidity and fruit is excellent, making the tasting of this wine decidedly satisfying.

Hermitage is one of France's most famous wine-growing areas, located on the left bank of the Rhône, where the vineyards stretch out on steep slopes that benefit from optimal exposure. It is from here that De L'Orée, proposed by M. Chapoutier, comes, a white, biodynamic, iconic wine that reflects the essence of the Rhone Valley's winemaking tradition. A pure expression of the Marsanne grape variety, the grapes destined for the production of De L'Orée come from the 'Les Murets' parcel, characterised by very old alluvial soils. This unique soil, rich in pebbles and coarse sand, provides excellent drainage and contributes to the concentration and aromatic complexity of the Marsanne grapes. De L'Orée is made exclusively from grapes from old vines, up to 60-70 years old. Mature vines, with naturally low yields, produce small but high-quality clusters, concentrating aromas and flavours. Harvested by hand, the grapes are gently pressed and the must is decanted cold for about 24 hours. This allows natural clarification and preserves the purity of the aromas. Afterwards, approximately 50% of the wine is fermented in large 600-litre wooden barrels, with regular btonnage to enrich the texture and add complexity. The remainder is vinified in steel tanks to maintain freshness. Ageing on the lees lasts between 10 and 12 months, during which the wine is regularly tasted to monitor its evolution and ensure its perfect balance. In the glass it presents itself with a luminous golden hue. The nose immediately reveals intense aromas of ripe yellow fruit, followed by delicate notes of toasted hazelnut and a hint of caramel. In the mouth it is full and enveloping, with a creamy texture and freshness well balanced by vibrant acidity. De L'Orée, like many of the labels from the M. Chapoutier, can be stored for decades. It pairs beautifully with foie gras, lobster, fish and white meats. But also goat and blue cheeses.
