From vineyards classified Premier Cru in Bisseuil, an area famous for its unique terroir that gives wines of great character and complexity. The harvest is, as is customary in Champagne, carried out manually. Only the best bunches, which have reached the ideal moment of ripeness, are harvested. After harvesting, the grapes undergo a soft pressing in the cellar and the first fermentation takes place 70% in temperature-controlled stainless steel tanks and the remaining 30% in used barriques. This choice allows the producer to best balance freshness and aromatic complexity. Ageing then continues for 30 months in the bottle, where the wine rests on its lees, developing complex aromas. Subsequently, the Champagne undergoes dégorgement, a low dosage and a further resting phase in the cellar for no less than 4 months, waiting to achieve perfect harmony between freshness and depth of flavour. To the eye, it has a beautiful bright straw yellow colour. The nose reveals an intense and multifaceted bouquet, with fruity notes reminiscent of crisp apple, lemon and clementine, enriched by hints of dried fruit and orange blossom. In the mouth, the attack is elegant, with a surprising drinkability supported by a vibrant minerality. Committed from a very young age to the development of his "garden vineyard," he took on the production of the family maison when his father Maxime Ponson died. First, he undertook a long process of converting the vineyards to organic farming. After that he devoted himself to personalizing the wines produced, playing on finesse and envelopment. This Champagne, in particular, is made from the region's three grape varieties, with a large majority of Pinot Meunier, which is present in the blend at about 70 percent. Pinot Noir and Chardonnay round out the mix with virtually equal percentages. The vineyards are located in the Premier Cru villages of Chamery, Vrigny and Coulommes-la-Montagne. In the winery, processing begins with a long phase of alcoholic fermentation of the bases, carried out partly in steel and partly in oak barrels. Then the wine follows the normal rules of winemaking according to the Champenoise method. A portion of reserve wine is then added, the result of old historic vintages of the Maison, and then rested on its lees, in the bottle, for at least 48 months. The result is a Champagne characterized by a rich nose of yellow fruits, Golden apple and tropical fruits. The sip is balanced and ripe, subtle, delicate and fresh, thanks to the perceptible acidity that accompanies the finish, making the wine remarkably persistent.

The Montagne de Reims actually consists of a chain of hills, located in the Champagne region. This area is famous for the production of high quality wines, and the village of Bouzy in particular is one of the key places within this area. It is an amazing geological treasure trove of chalk, sand, clays and limestone. Chalk, in particular, plays a key role in the cultivation of grapes and in the village of Bouzy, it is a distinctive feature. Champagne Tornay offers this Rosé Premier Cru, 10% Pinot Noir and 90% Chardonnay. The base wines are vinified in thermoregulated stainless steel vats. Then, after the creation of the cuvée, the wine is bottled and sent to the delicate process of sparkling according to the classic method. This is followed by an ageing period of at least 3 years in contact with the yeasts, at the end of which disgorgement and dosage takes place, i.e. the addition of a small quantity of sugar. Historic vineyards in the area, with vines with an average age of 40 years that take root in very heterogeneous soils: part reddish clay, part gravelly and rich in fine calcareous sands. The company's entire vineyard extends over about forty hectares for a very small production of very high quality. Located in the renowned Saint-Émilion district, Chteau Angélus represents excellence in the panorama of Bordeaux wines. This Premier Grand Cru Classé 'A' comes from grapes grown in vineyards covering 35 hectares, characterised by a clay-limestone soil with a rich presence of gravel. This fortunate combination, typical for the region, combined with a climate influenced by the proximity of the Dordogne, creates an exceptional terroir, perfect for ripening Merlot and Cabernet Franc grapes with unique characteristics. Skilfully blended with a majority of Merlot, the vineyards are planted with vines up to 80 years old. The production philosophy, oriented towards respect for the environment and quality, is based on certified organic principles. Harvesting is manual, with careful selection of the best bunches. Fermentation takes place in steel and cement, preserving the freshness and purity of the fruit. Ageing then takes place in new oak barrels for about 22 months. Pouring Chteau Angélus into the goblet, one discovers a wine characterised by a beautiful intense ruby red colour, with garnet hues. On the nose, ripe black fruits, blackberry, blackcurrant, accompanied by spicy notes, hints of liquorice and sweet tobacco. In the mouth, however, the initial sweetness is well balanced by a refined and elegant tannic texture. The long finish offers a fine aftertaste of ripe fruit and noble spices.

Assembly in this case is important. In this Brut Authentique of Pierre Gobillard is, in fact, 30% Chardonnay grapes, 30% Pinot Noir and 40% Meunier, all from vineyards classified Premier Cru and all from the 2009 vintage. To them, as is common practice in Champagne, a small percentage of reserve wines from previous vintages is added. A complex blend, then, with all the basic grapes of Champagne, each responsible for a part of the final taste. And greater depth and complexity, guaranteed by older wines that have been jealously guarded in the cellar for months just for this purpose. Fermentation in stainless steel, then malolactic conversion, and 24 months on the lees do the rest. Golden yellow colour, the perlage is abundant but not excessive and the bubbles are well integrated into the wine. On the nose, it is round and ripe, with aromas of dried fruit and a touch of honey. In the mouth, however, it is rich in body, with lively and clear-cut hints that recall the same sensations perceived by the nose. A wine that is good right away but that does not disdain to stay a few more years in the cellar waiting for the right occasion. The one where the fish menu enhances a day of celebration.

The Hautes-Côtes de Beaune is a sub-region of Burgundy, located west of the Côte de Beaune. A very interesting region covering the more hilly areas. Vineyards here are strictly Pinot Noir and Chardonnay, and there are specific Premier Crus. The label offered here by Prosper Maufoux, in particular, is a pure Chardonnay, made from selected grapes and soft-processed in the cellar within hours of harvest. Before fermentation, a cold maceration lasting 4 to 5 days is carried out. While alcoholic fermentation takes about 20 days, during which frequent pumping over takes place. From there, the wine is then passed into oak vats to carry out malolactic fermentation. The result is a wine characterized by a beautiful straw-yellow color, with clear aromas of citrus and flowers. In the mouth, however, it is powerful and round, with pleasant hints of vanilla and wood due to the use of aging barrels. An elegant and precious wine, it goes well with both fish and white meat dishes. Great, for example, with a classic roast chicken with potatoes.

When you think of Maison Philipponnat, you inevitably end up imagining a bottle of this Cuvée Royale Réserve Brut, which probably represents the best expression of the Maison. An important and prized Champagne, it is made from grapes of which about two thirds come from vineyards classified Grand Cru and Premier Cru in the villages of Ay and Mareuil-sur-Ay. A particularity concerns the use of reserve wines, those jealously preserved in the cellar to be used in the blending of new sparkling wines. In this case, the assembly of the Cuvée Royale Réserve foresees the use of about 20-30% of wines preserved according to the tradition of the Maison in wooden barrels using the Solera method. This, together with the slow maturation of three years on the lees before dégorgement, ensures that the wine is complex and profound. The dosage, as indicated on the label, is Brut, with about 8 grams of sugar per litre. This makes this Champagne an extremely versatile wine suitable for a thousand occasions. Perfect with classic fish, it has enough substance and character to also stand up to a pairing with meat dishes, such as roast veal or rabbit with herbs. In the glass it is a lovely bright golden yellow colour with amber highlights. The nose reveals clear hints of aromatic herbs, such as lime and thyme, as well as brioche and hazelnut. With the passing of the seconds, then a clear reference to citrus and honey emerges. On the palate, however, one discovers a wine with good body and balanced freshness. The finish is long and mineral. Decidedly pleasant.
