It is impossible not to love this fresh, aromatic white. This is in fact a fabulous Alto Adige Sauvignon. One of the good wines of the Praepositus line from the Novacella Abbey winery. One of those wines that can put a smile on the face of mountain wine lovers. This Sauvignon is made from superbly well-processed grapes harvested when fully ripe and has a beautiful golden yellow colour with greenish highlights. If the aromaticity is typical of the vine, the minerality that emerges clearly from the first sip is largely due to the territory of origin. Above it all, however, there is a clear note of green pepper, the one that every good sommelier always associates with Sauvignon, nettle and grapefruit. Then elderflower and cassis. In the mouth, it is a powerful wine, rightly aromatic, with a savoury aftertaste. For a local pairing, the choice could fall on an intriguing dish of canederli, perhaps served with a chanterelle sauce. For an unusual combination, however, the advice is to try it with a good buffalo mozzarella. Simply delicious.

Fermented in stainless steel with maceration on the skins for 15 days, after racking and malolactic conversion, this wine matures in French barriques and tonneaux for 24 months. The result is a glass that is tinged with a beautiful ruby red colour with rosy hues. On the nose what is immediately perceived is the typical red fruit. Black cherry and blackcurrant above all. Then undergrowth, cinnamon and cloves. As already mentioned, this is an extremely elegant and seductive wine, well supported by the right acidity that does not undermine its natural velvety soul. A wine that, its producers are certain, is in no hurry to finish in the glass. Properly stored, in the dark and in a cool, damp cellar, it can easily wait up to 20 years, maturing and evolving into a small, living work of art. On the table it enhances both meat and fish dishes. Excellent with lamb and salmon.

Here in the interpretation (as always masterful) of the winery of the Abbey of Novacella. It is described as the most full-bodied of the wines made from the Schiava grape. A wine that is capable of giving great satisfaction both when young and if you have the patience to wait a while before uncorking it. In this case, a small percentage of Lagrein grapes is added to the Schiava, about 90%. Both vines are grown using the traditional pergola system, which guarantees lower yields but decidedly high quality. Brilliant ruby red, it is a symphony of fruit and flowers. From cherries to violets. In the mouth it is harmonious and velvety, with a slight aftertaste of bitter almonds. In summer, it can be served slightly cooler than normal as an unconventional aperitif.
