Amidst the hills of Collio Goriziano, surrounded by a breathtaking panorama, comes the Sauvignon Ronco delle Mele, one of the most representative crus of the Venica & Venica winery. Born from the 'Spirito del Luogo' project, this white wine embodies the essence of the territory and the family's production philosophy. The Ronco delle Mele vineyard is located within the DOC Collio area, at an altitude of approximately 150 metres above sea level. Its privileged position, oriented towards the Julian Alps with a view of the Canin glacier, provides a unique microclimate, characterised by wide temperature ranges and a constant breeze coming from the north. The Sauvignon grapes, harvested at different times to respect the different sun exposures and microclimates created by the rows and woods, are vinified with great care. After harvesting, the grapes undergo maceration for about 20 hours at a controlled temperature. Vinification takes place in oxygen-protected containers with innovative systems for recycling the carbon dioxide from fermentation, to limit the intake of antioxidants and preserve aromatic freshness. At the end of processing, approximately 20% of the wine matures for a variable period in large 20/27 hectolitre wooden barrels, while the remainder matures in steel containers. This refinement gives the wine complexity and structure, while maintaining its freshness and vitality. A dazzling greenish yellow, the nose captivates with a complex and intriguing bouquet, with elegant vegetal notes of tomato leaf, green pepper and grapefruit intertwined with mineral hints typical of the terroir. In the mouth, it seduces with its elegance and aromaticity, perfectly balanced by a lively freshness and mineral savouriness. The vegetal notes perceived on the nose are amplified in a persistent and satisfying finish. A wine with a great capacity for ageing, thanks to its structure it can mature for more than 10 years, evolving over time and offering new aromatic nuances. Perfect with shellfish and goat's cheese.

Adelchi is a DOC Collio white wine, 100% Ribolla Gialla, produced by Venica & Venica, a beautiful family-run company located in the heart of the Collio region of Friuli. Dedicated by Giani and Giorgio Venica to their father Adelchi, this wine represents the continuity of tradition and oenological passion that binds different generations. Venica & Venica's vineyards are located in the heart of the denomination, an area characterised by sun-kissed hills and a constant breeze that favours the perfect ripening of the grapes. The soil, rich in minerals, gives the wine its characteristic sapidity and minerality. Vinification follows a careful and meticulous process. The grapes, harvested by hand at the right degree of ripeness, are macerated for about 14 hours at a controlled temperature. At the end of alcoholic fermentation, part of the wine matures in large wooden barrels, giving it complexity and structure, while the remainder matures in stainless steel to preserve the freshness and liveliness of the aromas. In the glass, L'Adelchi has a brilliant greenish yellow colour. The nose reveals a rich and refined bouquet. On the nose, scents of wild flowers intertwine with notes of Golden apple, Kaiser pear and citrus fruits, creating a delicate and inviting harmony. In the mouth, however, it conquers with its lively freshness, mineral savouriness and aromatic persistence. Citrus and white fruit chase each other in a game of balance, giving an elegant and persistent finish. Its freshness makes it ideal with fish and shellfish starters, while its mineral savouriness enhances the flavours of white meats and grilled vegetables. Also excellent with fresh cheeses and light first courses.
