Grenuil is an 'absolute nose', he knows thousands of scents and aromas that he collects in his mind and which allow him to create new and unique olfactory creations to his liking. Grenuil's character inspired the creators of this Emilia Bianco IGT, a wine that fascinates for its aromatic complexity. It is proposed by Torre Fornello and promises to conquer those who taste it thanks to its uniqueness and refinement. It is born in Ziano Piacentino, in the heart of the hills of Emilia Romagna. Here the biodiversity of the territory is preserved thanks to the organic approach adopted by Torre Fornello. Grenuil is a blend of Pinot Noir (40%), Sauvignon (30%), Ortrugo (20%) and Malvasia di Candia Aromatica (10%). Fermentation takes place in stainless steel at a controlled temperature to enhance freshness and primary aromas. Ageing continues in steel to ensure a perfect balance between body and acidity. The result is a beautiful goblet characterised by a pale straw yellow colour, enriched by brilliant amber reflections. The bouquet is intense and persistent, with a complex bouquet ranging from herbaceous notes of sage and green pepper to elderflower and exotic fruit such as lychee. In the mouth, it is soft but lively, persistent and pleasantly aromatic. An extremely versatile white, it lends itself well to being served as an aperitif. On the table it goes well with raw land and sea food, fish and white meat dishes.

A very special Metodo Classico sparkling wine. We are talking about Olubra, proposed here by Torre Fornello, the result of a careful selection of grapes and long ageing on the lees. Olubra, millesimato Brut, is the product of a particular blend: 90% Marsanne and 10% aromatic Malvasia di Candia. The Marsanne, originally from the Rhone Valley, gives the wine structure, roundness and notes of white fruit. The small addition of aromatic Malvasia di Candia, on the other hand, brings a touch of freshness and aromaticity, enriching the bouquet with delicate floral notes. A particularly fortunate combination, ideal for those seeking a sparkling wine that is different from the usual. Olubra then matures on the lees for 44-60 months, acquiring remarkable aromatic complexity and a beautiful structure. During this long maturation, the bubbles refine, becoming very fine and persistent, while the wine develops aromas of bread crust and mineral notes. In the glass, Olubra is a brilliant straw yellow, enriched by delicate greenish reflections. The perlage, as mentioned, is fine and persistent and favours the perception of aromas: notes of fresh fruit, such as green apple and citrus, and delicate hints of white flowers. Then marine notes that give the wine an unexpected freshness. In the mouth it is soft but lively, with a pleasant savouriness and sustained acidity. Ideal as an aperitif, it goes well with light appetisers, raw fish, oysters and shellfish. For those seeking an unusual pairing, try it with a fragrant white tripe.

Colli Piacentini DOC Ortrugo Spumante Brut from Torre Fornello was born in the green hills of Ziano Piacentino. This remote corner of Italy, renowned for its ancient winemaking tradition, enjoys a very special microclimate, ideal for growing vines. Here, in fact, the grapes ripen under generous sunshine and enjoy cool breezes coming down from the hills. These conditions are simply ideal for preserving the freshness of the fruit. Ortrugo, for the uninitiated, is an indigenous grape variety of Emilia Romagna. Once used mainly in blends, today it is finally the protagonist of a real rediscovery. In this sparkling wine, Ortrugo is combined with a touch of Sauvignon, just 3%, just enough, however, to add intriguing aromatic nuances and contribute to the overall balance of the wine. Vinification takes place using the Martinotti method, also known as the Charmat method, with a second re-fermentation in an autoclave. This method, particularly suitable for the production of fresh and lively sparkling wines, allows all the varietal characteristics of Ortrugo to be preserved intact. In the glass, it has a beautiful bright straw yellow colour, with delicate greenish reflections that reveal its youthful freshness. On the nose, it is elegant, fine and floral, with distinct notes of pink grapefruit. In the mouth, it is pleasantly dry, with a balanced structure and a light almondy aftertaste. Perfect as an aperitif, this Ortrugo Spumante Brut is ideal with salami and cheeses typical of the Emilian tradition, but also with soups and fish soups.

Pratobianco, Emilia Bianco IGT by Torre Fornello, was born in Ziano Piacentino, Emilia Romagna. The name Pratobianco refers to the cadastral parcel where the three grape varieties that give life to this wine are cultivated. Pratobianco, in fact, is a blend of Malvasia di Candia Aromatica and Sauvignon, both 40%, and Chardonnay for the remainder. Each grape variety brings unique characteristics. Malvasia di Candia Aromatica, in particular, is rich in intense aromas and gives the wine a distinct aromaticity. Sauvignon for its part contributes freshness, acidity and herbaceous notes. Chardonnay, finally, lends structure, smoothness and a touch of buttery elegance. The Sauvignon and Malvasia grapes are only processed and matured for a period of no less than 6-9 months. The Chardonnay, on the other hand, is processed in French oak barrels from the Allier forest. Here it undergoes fermentation and ageing. This dual approach, with part of the wine maturing in wood, creates a perfect balance between freshness and structure. In the Pratobianco glass it has a beautiful bright straw yellow colour, enhanced by delicate greenish reflections. The nose reveals an intense and persistent bouquet, with complex aromatic notes reminiscent of herbs, such as sage, oregano and thyme, and hints of green pepper, exotic fruit and elderflower. In the mouth, it is dry, full and elegant, with a nice structure and balanced acidity. The slight woody note, brought by the Chardonnay's ageing in wood, then adds depth and refinement. Ideal with seafood salads, burrata, cured meats and grilled vegetables. Try it with spinach and ricotta tortelli, dressed with melted butter and sage.

It is born among the rolling hills of Emilia Romagna, in the heart of Piacenza, in Ziano Piacentino to be precise. This area, known for its wine-growing tradition, is characterised by an ideal microclimate for the production of aromatic and intense wines. Organic farming in the countryside, the Charmat/Martinotti method is used for the production of this sparkling Malvasia, perfect for the production of lively and fresh wines. The aromatic Malvasia di Candia, the star of this wine, is a variety particularly appreciated for its olfactory intensity and unique aromatic character. Originally from the Mediterranean area, it has found its ideal habitat in Emilia-Romagna. After the harvest, the grapes are subjected to a soft pressing, followed by a quick separation of the skins from the must to obtain a clear and clean liquid. This is followed by fermentation at a low temperature, followed by the second fermentation in an autoclave. Finally, the wine is cold stabilised, guaranteeing optimal preservation. In the glass, this Malvasia Secca is a luminous straw yellow. The nose is aromatic and fruity, with hints of fresh fruit and herbs. In the mouth, it is dry, delicate, lively and fresh, with a pleasant acidity that enhances its drinkability and lightness. A grape of French origin of great prestige, Pinot Noir is known for its difficulty in cultivation. Used in purity, it succeeds here in expressing all its elegance and complexity. For this wine, Torre Fornello chooses only the ripest bunches, harvested by hand, guaranteeing impeccable quality. After the harvest, vinification involves fermentation at a controlled temperature and ageing for 6 months, half in wood and half in steel. This balanced ageing allows Pinot Noir Musica to develop a complex, yet fresh and refined aromatic profile. In the glass Musica is a beautiful intense ruby red colour. The nose is rich and varied, dominated by fruity notes of cherry and red fruits, accompanied by spicy nuances reminiscent of pepper and vanilla. Authenticity and winemaking tradition in Emilia Romagna. This Colli Piacentini DOC Gutturnio Frizzante from Torre Fornello represents all this. A genuine wine that comes from an area rich in history and highly vocated, this Gutturnio originates from vineyards in Ziano Piacentino, a small municipality situated in the hills. An area known for the variety of its soils and favourable climate. The name Gutturnio derives from the ancient Roman vessel, the 'gutturnium', used for drinking wine during banquets. Specifically, this one proposed by Torre Fornello is a blend of 60% Barbera and 40% Bonarda, or rather Croatina, two grape varieties that together give life to a wine characterised by a beautiful pleasantness. The Barbera, in particular, is known for its acidity and freshness, and gives the wine great drinkability. Croatina, for its part, brings softness, body and an aromatic bouquet reminiscent of berries. After the grapes are harvested, Barbera and Bonarda are vinified separately. This starts with maceration and fermentation at a controlled temperature for about 7-10 days. Once fermentation is complete, the two masses are cold-assembled and re-fermentation takes place in an autoclave, according to the Charmat method. To the eye, this sparkling wine from Piacenza has a brilliant ruby red colour. The nose is fresh and vinous, with clear notes of berries, such as blueberries and raspberries. In the mouth it is rich, full and persistent, with a flavour reminiscent of ripe berries. The slight effervescence enhances the freshness, inviting a second sip. Designed to be consumed young, this wine is perfect to accompany traditional Emilian dishes.
