It is made from grapes cultivated on the slopes of Sicily's Etna volcano. We are talking about Tenute dello Jato's Etna Rosso DOC, a structured red wine that well represents the strength and minerality of its land of origin. The Etna volcano, with its imposing presence, not only offers an enchanting natural panorama but, with its unique characteristics, has a decisive influence on the character of this wine. The vineyards here are located 800 metres above sea level and are rooted in mineral-rich soils. The climate here is cool and mountainous, with beneficial temperature fluctuations between day and night that contribute to the wine's elegance and aromatic complexity. Nerello Mascalese (70%) and Nerello Cappuccio (30%), these two indigenous grape varieties are perfectly adapted to the volcanic soil and climate conditions. Nerello Mascalese, in particular, gives the wine structure, body and tannins, while Nerello Cappuccio brings freshness, acidity and fruity notes. Vinification is carried out with respect for the grapes and begins with crushing and destemming. The must obtained remains in contact with the skins to acquire the right colour. Fermentation and soft pressing follow. The wine then undergoes what is known as malolactic fermentation and continues its maturation in steel, in contact with its fine lees until the end of November. It is then transferred to wooden barrels for the final stage of maturation. In the glass, one discovers a wine characterised by a beautiful intense ruby red colour with garnet hues. On the nose, a complex and elegant bouquet with aromas of berries, including blackberry, currant and blueberry, enriched by balsamic, mineral and spicy nuances. In the mouth, it conquers with its structure, harmony and beautiful persistence. The tannins, well present, are integrated and very fine.

Imaginary journey to the heart of Sicily, among the hills of San Cipirello in the province of Palermo. A structured red from pure Perricone grapes, this wine well represents the new Sicilian viticulture, made of quality, modernity and tradition. Starting with the grape variety, Perricone, one of Sicily's oldest and most fascinating varieties, known for its ability to produce intense and complex wines. The grapes used for this Sant'Anselmo come from selected vineyards located in a privileged area, where the combination of soils and good exposure help develop the distinctive organoleptic characteristics of this wine. In the cellar, after destemming, the must, together with skins and grape seeds, is sent to maceration and fermentation at a controlled temperature. This allows the best possible extraction of all aromatic compounds and tannins. Malolactic fermentation follows, which softens the acidity and makes it more rounded. The wine then continues its maturation in steel, in contact with its fine lees, until the end of November. Finally, it is transferred to barriques for a further three months of ageing, which gives the finished wine elegance and aromatic depth. Intense ruby red in colour, it offers a complex and fascinating bouquet on the nose, with hints of ripe red fruits such as cherries and plums, enriched by spicy notes of black pepper, as well as a slight hint of aromatic herbs. In the mouth, it is structured and well-balanced, with good acidity balancing the richness of the tannins, which are persistent and harmonious. As far as food pairings are concerned, this Perricone is perfect with robust and flavoursome traditional Sicilian dishes, such as lamb, grilled sausages and mature caciocavallo cheese.

The absolute protagonist here is Grillo, an indigenous Sicilian grape known for its ability to best express the characteristics of the terroir. Thanks to their thick skin and resistance to heat, these grapes are ideal for producing fresh and aromatic wines. After harvesting, the grapes are gently pressed to obtain the must, which is then statically decanted and sent to primary fermentation in steel. This is followed by a maturation phase, again in steel, in contact with its fine lees until the end of October. Finally, the wine is bottled, ready to be marketed. Brilliant straw yellow in colour, a clear indication of its freshness, the nose reveals notes of almond and a delicate floral scent. Sauvignon Blanc, known for its freshness and herbaceous aromas, brings structure and acidity to the wine. Zibibbo, also known as Moscato di Alessandria, is an aromatic variety that gives the wine notes of exotic fruit and flowers. After harvesting, the grapes are gently pressed and the must decanted statically to separate solid particles. Fermentation takes place at a controlled temperature to preserve the fresh and delicate aromas of the fruit. The wine is then aged in stainless steel on the fine lees until the end of October, helping to develop complexity and depth. Once the ageing process is complete, the wine is bottled.
