Pure Grechetto di Todi. The grapes come only from the best vineyards in the Todi area. A very special grape that requires a certain amount of skill to grow. Local producers, in fact, are well aware that this vine has a particularly delicate skin which, when the grapes reach perfect ripeness, risks breaking very easily. And if you want to produce a quality wine, this is a risk that must absolutely be avoided. This is because when the skin breaks, there is a risk that part of the precious liquid contained in it will come out, which, in contact with air, can give rise to spontaneous fermentation that is not always pleasant. For this reason, each bunch of grapes must be picked with great care and the harvest must be delivered as soon as possible to the winery to be sent for extremely soft pressing. You have to extract only the best of the grain. The one proposed here by Tudernum has a beautiful bright straw yellow colour, with aromas of ripe apple, peach and citrus. In the mouth it is very persistent, well balanced and with a pleasantly almond finish. This wine is the one that best represents the district of Todi, the territory where it was born: strong personality but absolute pleasantness.

We speak of Kretzer referring to rosé born from Lagrein grapes, a technique that was already widespread in the Middle Ages. The name "Kretzer" comes from the word "Kretze," a woven wicker basket in which the must was strained, to separate the juice from the skins. Today, production techniques have refined, of course. But the principle is still the same. It only takes a few hours of contact between must and skins to color the liquid just the right shade of pink. In this case, the Lagrein grapes come from vineyards in Bolzano, at 260 meters above sea level, with roots sinking into deep sandy soils of alluvial origin. In the winery, the technique used is the "salasso" method. About half of the grapes are pressed, while the other half of the must instead rests on the skins for a few hours before fermentation. Once the two parts are combined, the fermentation phase follows, in temperature-controlled stainless steel. Brilliant cherry pink in color, this rosé seduces with its fresh, playful aromas. A fruity bouquet, with cherry, raspberry and currant. In the mouth, however, it has a full structure, pleasant acidity and fine. The Muri-Gries house rosé, despite its pleasant drinkability, has the character and lingering finish of a red wine. Serve slightly chilled in combination with bruschetta, risotto and delicate fish dishes.

The secret of this Cimarè, Rosso Piceno DOC, proposed by Casalfarneto, is all in the long process of vinification that begins with a slow maceration of the skins, to facilitate the extraction of the aromatic substances of the grapes of departure. Then, after racking, the wine is put into small 225-liter oak barrels, the classic barriques, where it rests for at least 6 months. Only at that point is it bottled, but before being released to market, it rests for at least another 6 months in the bottle. Cimarè comes from a typical blend of central Italy, with Montepulciano and Sangiovese grapes in large majority, flanked in this case by a small percentage of Merlot and Cabernet Sauvignon. A red wine of great structure and good harmony. Warm, soft with a light and pleasant tannicity. A modern, elegant and very pleasant wine.

In the Gallurese dialect, Fòla is fable. A more than apt name for what the technicians at the Siddùra winery define as 'the essence of Cannonau'. This red wine of great character is produced from grapes from vineyards that the winery follows directly from the agronomic point of view, monitoring the ripening of the skin and the gradation through sensory and laboratory analyses. A pure Cannonau, this vine has found its ideal habitat in Sardinia, giving life to wines that are rightly defined as the 'prince of the island's reds'. A complex wine, warm and rich in extract. Cannonau di Sardegna DOC Riserva, Fòla comes from vineyards located at about 300 metres above sea level, from vines that are trained partly with the spurred cordon system and partly with the traditional sapling system. The grapes are harvested by hand, carefully selected, then destemmed and macerated for a medium-long period. Subsequent barrel ageing completes the rich organoleptic picture. With its over 15 degrees alcohol, it is undoubtedly a wine of great longevity. Served today, however, in the glass it has a beautiful ruby red colour, with rich and intense aromas. In its bouquet it is easy to distinguish well-ripened red and dark fruit, such as plum and black cherry. Then spicy notes and a finish of unripe cherries. In the mouth, however, one discovers a pleasantly warm and smooth wine. A harmonious red, with good aromatic persistence and a silky tannic texture. An important wine that calls for a very substantial pairing. Excellent with savoury meats, such as wild boar, or with the most classic of grilled bone-in steaks.

Its origin is easy to guess. The white Greek, in fact, although a grape variety that is grown mainly in Calabria, seems to derive from Greece, having arrived in our south over the centuries, finding an ideal climate and soil here. All made even more appealing by the subtle mineral vein. In the mouth it is fruity and floral, with good persistence. Pleasantly savoury, it goes perfectly with fish-based first courses. To be served as an aperitif, this white will certainly accompany the whole meal with gusto.

In this case, Franz Haas surprises us with a little oenological gem. It is, in fact, a pure Petit Manseng. A white grape variety originating in the Jurançon area (Gascony), near the French Pyrenees, it is characterised by particularly small berries and thick skins. In Italy, it is mainly cultivated in Latium, Tuscany and Sicily, where it can also be used to produce passito wines, and in the province of Bolzano, where some producers, such as Franz Haas, vinify it on its own. This is a particularly aromatic wine, characterised by a straw-yellow colour. The nose reveals a very intense and fruity aroma, with mineral notes. In the mouth, however, it is savoury, with good acidity and a discrete structure. Fermentation, in this case, takes place in barriques, where it then matures for about ten months before being bottled. Served cold, it lends itself to various experiments. Good with Asian cuisine, especially Thai soups, it is also perfect with fish soups or classic spaghetti alla bottarga. Also enjoyable as a simple aperitif.

As August draws to a close, it is time to harvest the grapes in the Zell vineyards to produce this interesting Metodo Classico Brut Rosé. Pinot Noir grapes are carefully selected and harvested by hand in small crates. After a brief maceration on the skins at a low temperature, to extract the characteristic colour, the grapes undergo soft pressing to obtain the free-run must used to make the base wine. Then, in the spring following the harvest, the resulting wines are selected and blended into the base cuvée. Zell Rosé remains on the lees for at least 24 months before being disgorged, revealing a sparkling wine characterised by a soft pink colour, with a dense, fine and persistent perlage. The nose is elegant, fruity, fresh and fragrant, with a slight hint of yeast. In the mouth, however, it combines freshness, elegance and good persistence. Perfect as an aperitif, it can easily accompany an entire meal. Good with fish, it has enough character and structure to stand up to delicate white meat dishes. Try it with a delicate rabbit ragout.

Technically, they are called 'one-night wines', because the maceration of the skins required to colour the must lasts no longer than a few hours. Harvested in the second half of September, after vinification the wine matures on its lees for about 3 months, acquiring a pleasant complexity that in no way detracts from its freshness. From aperitif to table, this rosé impresses with its versatility. Excellent with delicate and refined raw fish dishes, for lovers of simplicity it can also be served with a simple caprese, with tomato and mozzarella.

This is followed by an ageing period of 6 months on fine lees, which gives Anima complexity and harmony. Brilliant straw yellow in colour, with greenish highlights, the nose reveals a delicate and fragrant bouquet. Hints of green apple, exotic fruit, wild flowers and aromatic herbs. In the mouth, however, Anima reveals itself to be above all savoury, fresh and pleasantly lively, with a lively acidity that balances the softness and gives harmony to the sip. The one proposed here by the Durin winery is a real 'gem'. Specifically, it is a DOC Ormeasco di Pornassio wine, produced from the indigenous variety of the same name. Omeasco, in fact, is a very close relative of Dolcetto, from which it differs due to its red stalk, smaller bunch and thicker skin, Ormeasco gives wines characterised by sweeter tannins and a longer duration than those obtained from its Piedmontese cousin. The name of this wine is Sciac-trì, which in Ligurian dialect literally means 'squeeze and pull'. In this case, the vine is vinified partially in white, until a delicate pink colour is achieved, as in this case. The grapes are harvested in the estate's vineyards in Ranzo, Armo and Ligassorio, where the vines are trained partly in spurred cordon and partly in bush-training. In the glass, Sciac-trì has a beautiful coral pink colour. The nose is vinous and delicate, with hints of berries and cherries. Pleasant and characteristic, in the mouth it is pleasantly dry, fresh and harmonious. Soft and light at the same time, Ormeasco Ccia-trì is a fresh, ready-to-drink wine that goes well with typical local dishes, such as trenette al pesto. It is also excellent with ravioli di magro, grilled white meats and fish cooked in salt.

It is made from a blend of Sangiovese, Cabernet Sauvignon and Merlot, vinified in small stainless steel tanks to ensure maximum contact between the skins and the must. After fermentation and racking, the wine undergoes the so-called malolactic fermentation and a period of refinement of about two years in new French oak barriques from two different tonnellerie. After bottling, the wine remains in the cellar for a further 7 months before release. Born as an innovative wine, out of the box and outside the specifications, Ripa delle More is a red wine with a modern taste that does not forget its Tuscan territorial roots. The colour is an impenetrable ruby red. The nose reveals exuberant aromas, mainly balsamic and fruity, reminiscent of mint, blackcurrant and blueberry, but also evolves with hints of dark chocolate, vanilla and juniper. In the mouth it denotes fullness and great class. The tannins are well polished and blend with the fruity taste. The finish is long, with pleasant spicy notes. It goes well with elaborate meat dishes such as stews, braised meats and casseroles.

100% Glera, this interesting Valdobbiadene Prosecco Superiore DOCG is the result of super careful processing of the grapes. After their arrival in the winery, in fact, the process begins with a brief maceration on the skins, in a closed press, and the subsequent soft pressing, with extraction of the first fraction of must flower. Then, after the first fermentation, the base wine spends about two months on its fine lees at a controlled temperature, in steel tanks. Only then is the wine ready to be placed in autoclaves for the delicate frothing process which, in this case, lasts three months. Cuvée 1926 is a celebration of Valdo's history. It was in fact in 1926 that the first bottle of the company was uncorked. The first of a long, long series. Straw yellow with golden highlights, this sparkling wine has a fine and delicate perlage. The nose reveals a characteristic bouquet reminiscent of ripe fruit, in particular apple, pear and even exotic fruit. In the mouth, the measured softness and pleasant roundness, combined with the fresh sapidity, make this sparkling wine extremely pleasant and versatile. Excellent as an aperitif, it is excellent at any time of day. Appetizing with risottos, it is also recommended to round off a lunch or dinner, even better if paired with a slice of fruit cake or a peach salad.

Colli Bolognesi Pignoletto DOCG, sparkling. We are talking about Tenuta Monteveglio, one of the (many) good labels offered by Cleto Chiarli of Modena. In this case, the harvested grapes are divided into two parts. One part, about 20%, is left to macerate on the skins for about 12 hours. The remaining part, more or less 80%, is instead pressed directly, partly with whole bunches. This is followed by fermentation at a controlled temperature and a short period in steel before the second fermentation in an autoclave. The wine, in this case, is bottled without reaching the effervescence typical of a sparkling wine. The colour is light straw yellow, with a slightly aromatic bouquet. In the mouth it is dry and harmonious, perfect to accompany a good aperitif with friends. On the table, on the other hand, it finds its natural marriage of love with simple dishes based on white meats or fish that are not too flavoursome.
