Of the seven geographical sub-denominations that represent the highest expression of the 'terroir' of the Valle d'Aosta appellation, Torrette is the best known and most cultivated. It takes its name from the mountain of the same name located in the commune of Saint-Pierre. Cave des Onze Communes produces it from grapes that come from vineyards located in the municipalities of Quart, Saint-Christophe, Aosta, Sarre, Villeneuve, Saint-Pierre, Charvensod Aymavilles, Jovençan and Gressan. Harvesting is staggered over a period of about two weeks, depending on the different altitudes and exposures of the vineyards, located between 600 and 800 metres above sea level. Petit Rouge is 70%, the rest being blended from red grape varieties characteristic of the area. This red wine ferments and rests for about 6 months exclusively in steel tanks and is bottled from the late spring following the harvest. Ruby red in colour tending towards garnet, the nose reveals an intense aroma of red fruits and hay. Slightly spicy, with bottle ageing it takes on typical almond notes. On the table it goes well with cured meats, white and red meats and medium-aged local cheeses such as Toma and Fontina.

Sancerre Rouge, by Domaine David Sautereau. A red produced from pure Pinot Noir grapes. This vine, the symbol of Burgundy, also here on the banks of the Loire, manages to express its elegance and complexity. David Sautereau, vigneron, the tenth generation of the family, uses grapes from vineyards covering seven hectares in the communes of Crézancy, Bué and Sancerre for this wine. This area is characterised by a diversity of soils that can influence the characteristics of the wine. The grapes are harvested by hand and, after picking, the process begins with the fermentation phase in temperature-controlled stainless steel tanks to preserve its fruity and floral notes. Then, at the end of the transformation, the wine remains for 6 months in steel vats for the ageing phase, acquiring complexity and harmony. In the glass, the Sancerre Rouge has an intense ruby red colour. The nose is characterised by hints of blackberry and plum, which blend with floral and spicy notes. In the mouth, it is structured and fresh, with a pleasant persistence of flavour. Served at around 16 °C, and taking care to uncork the bottle a few hours before consumption, this Sancerre Rouge goes very well with delicate meat dishes, such as roasts and grilled meats, as well as semi-hard cheeses.

Seven Oaks is a wonderful vineyard in Paso Robles. We are in the heart of California, in the Central Valley region. This Cabernet, produced by J. Lohr Vineyards & Wines is made from about 80 percent Cabernet Sauvignon grapes, to which small percentages of other grape varieties, such as Petite Syrah, Petit Verdot and Merlot are added. Each grape variety, albeit in small percentages, brings a particular characteristic to the final blend, making the finished wine even richer and more complex. Fermentation in temperature-controlled steel tanks, a 12-month maturation phase in American oak follows after racking. A good red already today, it has a discreet ageing potential. Properly stored in the cellar, in fact, it promises to evolve for at least another 5 or 6 years, acquiring greater pleasantness. Excellent as an all-meal wine, paired with savory first courses or meat main courses.
